I have been using ghee, following the instructions/receipe but the chapati turns harder though delicious, even after leaving the dough covered for over 12 hours in room temperature. I haven't figured out what mistakes I make but sometimes I think maybe I should use more ghee/cooking oil when preparing it. Your reply will be much appreciated and so helpful. Nashukuru sana. For this particular recipe you need ghee but you can sub with vegetable oil. No need to keep chapati dough for that long, the excess gluten development might cause the hardening. I would suggest rest for between 10 to 30 minutes for the dough to relax and make it easier to roll.

Some people mix oil and margarine together. But the ghee brings out a beautiful rich flavor that you won't get with oil. Also oil alone may be too runny, too fluid.
Not so sure what you mean here as all-purpose is wheat flour. If you meant Whole wheat flour , yes, you can. You can also use bread flour which has higher gluten levels . These apply in US, and check how different flours are labeled in other countries and regions.
PLEASE NOTE: Chapatis are originally from India. Tortillas are from Mexico. BIG difference!! One is made with WHOLE WHEAT flour - (specifically ground to be soft & look pearly white, but have all the fiber within - this flour is called Atta - pronounced Aattaa) Totrillas are made with white flour (called maidhaa in India, and used for baking NOT chapatis!!) White flour is used to make pizza dough, pie crust & yes Tortillas. They pack on the pounds, and have no fiber or health benefits really. They fill you up, but if you eat white flour often you'll also get fat & clog your arteries. ON THE CONTRARY, if you eat chapatis made with Aata (or whole wheat) you will add fiber, which eats into the fat & has nutritious benefits - Also gives you strength!!

Grew up in Southern India eating chapathi every day. I really did want to try this recipe from you for a long time. Thank you!!! Keep them coming. More vegetarian or vegan recipes please.
