Cornbread Recipe - Delicious Dairy Free & Gluten Free Skillet Cornbread Recipe

- Based on the traditionally less sweet southern recipe, this delicious classic brings the best of all worlds together by creating a moist and satisfying savoury bread that also happens to be dairy free & gluten free!
INGREDIENTS
- 2 cups Unsweetened Coconut Milk
- 2 tbsp Fresh Lemon Juice
- 2 1/2 cups Stone Ground Cornmeal
- 1/4 cup Sugar
- 1/2 tbsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp Kosher Salt
- 1/2 cup Dairy Free Margarine
- 2 Eggs
- Cooked Kernels from 1 Fresh Cob of Corn, roughly chopped
INSTRUCTIONS
STEP 1: Preheat oven to 400°F
STEP 2: Place your 10" cast iron skillet in the oven right away while it is pre-heating so that it's nice and hot later on.
STEP 3: In a medium mixing bowl combine the coconut milk and fresh lemon juice, whisk to combine and set aside for around 10 minutes to let it curdle.
STEP 4: In a separate large mixing bowl, whisk together the cornmeal, sugar, baking powder, baking soda & salt.
STEP 5: Microwave the margarine to melt it and whisk it into the buttermilk mixture.
STEP 6: Add the eggs to your buttermilk mixture and whisk until thoroughly combined.
STEP 7: Pour the buttermilk mixture into the large dry ingredient mixing bowl and whisk everything together until thoroughly combined.
STEP 8: Add roughly chopped corn kernels to the mixture and stir briefly to combine.
STEP 9: Carefully remove cast iron skillet from the oven and place on stove top.
STEP 10: Add 2 tbsp of margarine to the hot skillet, stirring until completely melted.
STEP 11: Add cornbread batter to the hot skillet.
STEP 12: Bake in center rack at 400°F for 25 minutes.
STEP 13: After 25 minutes, make sure a toothpick inserted into the center of your cornbread comes out dry.
STEP 14: Let cool on the stove top for 20 minutes.
STEP 15: Cut into equal slices and serve.

I substituted the eggs with a different binder. I eat a gluten-free, dairy-free vegan diet. You can sub 1/4 c mashed potatoes for each egg or 2Tbs instant mashed potato flakes per egg. I used the flakes today in place of the eggs and it came out terrific!

Impulsive Culinarian I don’t mind at all. Since I watched your video and made the cornbread I found a butter sub as well...instead of butter, use an equal part of applesauce. I haven’t tried it yet but plan to tomorrow. My 24 year old son is allergic to everything...gluten and well as dairy. I like to try new recipes and if it’s tasty I pack it up and send it to his house. I made pinto beans and your cornbread (with the potato sub) and it was a huge hit! We both loved it. Thanks for this recipe. Cornbread is one of my all time favorites! My late mother made it often when I was growing up. It’s really nice how great memories seem to always surround great food. ❤️

Looks delicious the only thing I would change is margarine, not very healthy, I'd use ghee or coconut palm shortening instead

I've lived in the south for over 80 years in several states. All the cornbread I've eaten or read the recipe for used half wheat flour and half cornmeal. I'm sure at one time this was not true because most people grew corn and not wheat. Since I use my grandmother's recipe, I can tell you that this mixture has been used in my family for well over 150 years

Soda has a tendency to help baked goods spread outwards but to be honest you could get away with omitting it entirely and it will still turn out not bad ... would love to hear how it turns out for you!

What if you don’t have a cast iron skillet? Can you use a Pyrex casserole dish provided you coat that dish with the butter?

I would strongly suggest getting yourself a cast iron skillet, or any heavy cast pot for that matter ... while technically it can work with a pyrex, I really find there is no substitute for the way metal reacts with this kind of recipe (sorry)

Hi Jamie, in fact eggs are not a dairy product, although there are some great egg replacement ideas you can use ... might be a great subject for an upcoming video!
"Dairy" means it came from a cow (minus meat).... not a chicken .. anything coming from one of those would be a "poultry product."

It's cornBREAD. I feel as if you put sugar in "cornbread", it's cornCAKE at that point. Just an opinion tho. Now in some parts of the south, there are these delightful corn-muffins. These things are freaking delicious. They are pretty much cornbread but, sweet, muffin shaped and sometimes stuffed with more corn or other various aromatics. The ones I make, that I like the most is my chive and onion, corn-muffin.
Respect that 100%, and please send some of those chive & onion muffins STAT! They sounds truly scrumptious ... pics/vid?
