Easy Low Carb Shortbread Cookies

- We keep a batch of this cookie dough in the freezer nearly all the time! It's great as raw dough, baked up, or added to low carb ice cream to make a low carb Cookie Dough Ice Cream treat.
LC Cookies provide a perfect treat to make a ketogenic diet sustainable. I've baked a lot of low carb cookies over the past year and these are our favorites! The dough is great raw and would be perfect in a LC vanilla custard ice cream to make LC Chocolate Chip Cookie Dough Ice Cream. The recipe: / 107875353551137641
Thank you for this recipe and all you do - videos, etc. I have always had problems with coconut flour - just can't swallow it because it is so dry no matter what the recipe. However, since I found Oat Fiber (that's "fiber" not "flour" for your readers) I have replaced coconut flour with oat fiber in all recipes calling for it. So, I experimented with this recipe using oat fiber. It came out very good. The second time I made it, I doubled the recipe and used 1 3/4 c almond flour and 1/2 c oat fiber and it came out with a nice "cookie" texture that I really like. I used 10 T butter and added finely chopped pecans to it and they are sort of like Pecan Sandies - though they are soft, not crispy. Wonderful flavor! So, now this is my BEST LC cookie recipe. (I will need to try choco chips) Thanks again!

+dreaan That's exactly how I felt! I had to have something that I could enjoy and not feel deprived, but stay healthy. It's always a balancing act. When I feel bad from eating high carb foods, it is a deterrent for me. I spent too many years feeling too terrible! lol! Glad you are back on track and joining me on the journey!

I just made these tonight after putting my kids to bed. I wanted to sneak some of these and not share but unfortunately the delicious smell called to them and they all came stumbling down the stairs asking if I was roasting marshmallows! Haha!! I ended up sharing with them and they all approved. Such a delicious cookie and so easy to make. Thank you so much for all of your videos and recipes. I have just started following you and I can't wait to try more of your recipes! I have been following a low carb lifestyle for almost 2 years but I needed some variety so I am so glad I found you!!

Yum.. gotta try these.. they look great. As an FYI.. Cream of Tartar has 2 elements it incorporates into a recipe.. one is that it incorporates an almost bitter quality.. My all time favorite sugar cookies have cream of tartar in them. The second element is that it is also used as an acid ingredient in baking powder.. its what reacts with baking soda in a recipe when you use them together.. Lovely stuff.. I buy a fresh container like yours every year.. its cheap and its good to keep it fresh and active.

She is using the iPad which is why it's not as perfect as other vids.
baking soda + tartare = baking powder. Baking soda alone doesn't help rise very much but if you add an acid (lemon juice, vinegar, tartare ... ) then it reacts with the baking soda making it bubble, that adds air bubbles inside your dough and makes it rise .
Xantam gum is a binding agent to replace gluten, it can lead to digestive problems for many people and can be replaced by a mix of flax seeds + chia seeds + psyllium husks grinded together.
10g of that mix added for every 70g of flour, those 10g should be comprised of : 6g of flax 3g of chia and 1.5g of psyllium
(1g psyllium is ok just keep in mind the 1.5 when you have to add more than the 10 g of mix if for example you need to add 50 then do 5 x 1.5 to get your psyllium quantity).
It's also a healthier alternative.
Cream of tartar as opposed to Tartare Sauce ( used with fish)...just checking?

I don't think shortbread is supposed to have eggs. They make them soft. For crisp shortbread, cut the eggs and double the butter. Then after baking and cooling, put them in aa dehydrator for several hours to crisp up. Crunchy and delicious.
I jumped so hard when the dog barked, the rolling chair took off across the wood floor. Between being startled and the sudden force of movement, I thought I'd been shot!

Hi Kristie, How many drops of liquid sucralose do you use in this recipe after halving the erythritol? (I hate the cooling/aftertaste of erythritol) Also what version of ez sweet is that? cause the concentrated says 1 drop=1tsp sugar, and the bigger bottle says 2 drops=1tsp sugar. Ty! Also nice find on the milk chocolate, I'm not too fond of dark.

Get in My Kitchen! oh no!! It's expensive, but worth it for texture. Having said that, it's an optional ingredient in most items.
I made these cookies last night and they were delicious however; I did not have the extra sweetener that you mention and just stuck to the 1 cup Erythritol. I'm definitely going to make them again and again but with extra sweetener.

Your UA-cam baking sessions are not recorded at a high enough volume. I have excellent hearing but struggle to hear/understand you; especially with the dog barking and the clock's beautiful chime going off. Then after the cookie dough had been refrigerated, you were much louder.
Please remove those audio distractions when doing a video -- the dog barking was loud and completely masked what you were saying and then the clock chiming ... I gave up. That is just sloppy work.
