Makes about 20 cookies. Preheat oven to 300 deg. Bake cookies for 20-25 min. Recipe: 2 C almond flour 1/3 C Swerve sweetener 1/8 t salt 1 t vanilla or almond extract 1/2 C softened butter (mix dry ingredients with butter and vanilla before adding egg) 1 egg
I might be really stupid but doesn't anyone know what the math would be for it I just wanted to make a quater if half that amount. I'm always annoys me cause I want to make no so much cause I'm not that big into sweets even being keto and I'm at a caloric deficit so I only really need two cookies a day. Nobody else in my family wouldn't eat them so I would think it's a waste cause almond flour is relatively expensive compared to regular flower and I can just throw like five of them in a toaster oven
Joe Rotter If I understand correctly, you want to only make one half to one fourth of this recipe. Since it would be hard to separate a single egg that way, try making the whole recipe and then separate into two, three or four balls of dough once everything has been combined. Freeze anything you don’t want to use right away, and thaw what you need when ready to make the again ;-)
So glad I found this video! I've been watching the Lifetime and Hallmark Christmas movies and seeing all the beautiful holiday desserts has been rough! Now I can make Christmas cookies without cheating! Thanks Kat! You're the best! 🎄🍪
These are so good, thanks for sharing! It called for so much flour, so I quartered the recipe, and instead of quartering an egg,I used a TBS of almond butter, a known egg substitute. I'm so happy to say it worked out perfectly!! Delicious!!!
Made these again today but with a twist... I upped the erythritol to 1/2 cup and added 3 tbsp Hersheys cacao powder, and they turned out fantastic. Give it try sometime. Keto on!
I love this recipe! Try it with brown sugar swerve! Makes them even better! Also I rolled them into individual balls and pressed them with a fork! Sometimes I add Lily’s sf chocolate chips! Best recipe ever!
Okay, they are in the oven. Instead of 1 tsp vanilla. I added 1/2 tsp each of vanilla and almond extract. Also, once the dough was made and mixed I wrapped the dough in plastic wrap and put it in the fridge for about an hour to firm up. This will stop the cookies from spreading as the dough will be cold going in and hopefully look more like the picture on the website. I also used medical gloves and rolled each into a ball then pressed with fingers. The gloves really helped everything to not be sticky.
The Disconnected Wife Refrigerating it is a great idea, and if you then keep the plastic wrap loos and roll it into a log, you can slice of cookies, to bake.
I use powered erythritol and no vanilla extract and tell me why the cookies taste just as good to me. it could be because I haven't had sugar in like 2 weeks but my word. they are yummy.
I’m making it for sure. Thanks for sharing the recipe. In Australia pumpkin pie is not a thing. For some reason, Aussies just don’t seem to make pumpkin pie. I know how much you guys in America and those in Canada love their pumpkin pie. I’ve always wanted to make a pumpkin pie. A few weeks ago I UA-camd healthy pumpkin pie recipe. I then came across a healthy recipe using exact same keto crust that you made your cookies with. The filling has maple syrup in it instead of sugar. I’ve now made it twice. It’s so yummy!
I love your recipes I only fix meals and desserts that are keto and I’ve lost 42 lbs started Aug 1st so I’m loving my cookies and lots of your ice creams yummy yummy, thank you 😊
going to make these right now. My hubby has been dying for a cookie...he has been on Keto for a few months now and I am not letting him have many treats, so this is going to be a special one. Tks for the recipe!!
Absolutely making this tommorow. I have all the ingredients. Thanks for the video. I’m also making cauliflower mashed potatoes which truly are way better than normal mashed potatoes. Wooo keto thanksgiving #1 for me. 8 weeks of keto lost 42lbs yeah I know I can’t believe it either still! 0 sugar crashes too! ❤️💯
I just made these for the first time, very good! I couldn't remember the oven instructions so I just used 325 for 18 mins and it was OK. I cooked them on parchment paper. Next time I'll try adding Lilys chocolate chips!
Hello Katherine I have been doing Keto for 3 weeks now and I haven’t tried any sweet treats yet so today I decided to do the shortbread cookie recipe and I have to say it came out amazing!! Thanks for sharing this recipe and I hope you have a good day!

Your recipes and other stuff are really awesome and lovely I am enjoying the videos of yours i am trying here what you are doing there keep going Kate.

These are still great! Best with Lankanto BROWN. I throw in 1/4 tsp pf pumpkin spice and additional dash if cinnamon. Also add ten drops of stevia to sweeten it up even more.
I just made these and oh my golly, they are delicious!! Thank you for sharing this recipe. Idk how you waited 25 minutes for them to cool. 5 was my max! Lol 😊
Also you should try FatForWeightLoss chocolate chip cookie!!! It is. The. Best. Keto. Cookie recipe out there.!!! When I make it I use 1/4 cup of swerve brown sugar and 1/2 cup of regular swerve and use 5 oz of butter instead of the 3.5! It’s SOOO DELICIOUS.!!!!

I salute your work :) made a shortbread last year following the great british baking show and by miracle it worked with just the ketofyed version of the BCC recipe that asked for just 3 ingredients ;)
Katherine Michelle Thanks! I will have to make this! It might be easier and take less time next time if you mix the wet ingredients together first then mix them into the dry ingredients. Maybe it was quick for you, I noticed you cut the video while you stirred the wet ingredients in. Just a little trick that might help.😉 You just made my Friday night fun ... can't think of too many things more fun than baking cookies. Hope you found a fun movie to watch while they were baking.💗
Keto Miss I learned this recipe from my neighbor, way before I started keto. She told me 1 block cream cheese to 1stick butter. Then just add the powdered swerve until desired sweetness. I add a cap full of vanilla sometimes too. I hope you like it 😀
I really need to try these! I don't have a cookie scoop and I definitely need to get one. Oh, I would spray the cookie scoop with a little oil before scooping out and also you could spray back of it before pushing down. You probably have already figured this out by now because this video was 2 years ago 💜
I can't have butter so I substituted it with an equal amount of peanut butter and added 1/3 cup of coconut ! I also put one gluten and dairy free chocolate chip in the center so they look like flowers! They turned out 😋 delicious!
I just made theese cookies. Love them. I actually made them to go along with breakfast. Strawberries and whipped topping, cookies, and bulletproof coffe. Thanks.
First, Kat you look really really nice in that shirt and it's very much in style too. Your make-up and jewelry are beautiful, but something about the color of that shirt against your skin; it's a keeper for sure. I do have all those ingredients. This is a must try recipe; thanks for sharing this one.
Makes about 20 cookies. Preheat oven to 300 deg. Bake cookies for 20-25 min. Recipe:

1/3 C Swerve sweetener
1/8 t salt
1 t vanilla or almond extract
1/2 C softened butter (mix dry ingredients with butter and vanilla before adding egg)
1 egg
Thanks for putting ingredients to text 👍
