    Hi Byron,
    Love your channel and, this recipe looks grand! I can't wait to try it.
    You mentioned that you used tempered chocolate to make your hazelnut brittle so, here's my request. Do you think you might consider a video on how to temper chocolate? Not a large amount of chocolate as a lot of us are not in the profession and wouldn't need a bucket load of tempered chocolate. A small amount of chocolate like you used in this video to garnish your dessert would suit most of your fans just fine.
    Thanks so much.

    how does it become a lava cake and not just raw on the inside? What would be the difference?

    • @ByronTalbott
      @ByronTalbott  8 років тому +2

      Kimberly Brouwers that's the tricky part!! Did you see the steam when I cracked it open? It's right on the cusp of turning to cake, so it's pretty darn hot...kind of like a warm custard.. The traditional way is to put a piece of frozen ganache in the middle of the batter before baking for the soft center.. maybe I'll go about it that way next time to cover all my bases. Good question!

    • @kimbrolyy
      @kimbrolyy 8 років тому

      oh that's so interesting! I've made a moelleux and a lava cake before, but never knew how it worked. Thanks!

    • @ByronTalbott

      Tami Weinstein sure will! Just bake it for less time.. you might have to test it out once or twice.
