Chocolate Salted Caramel Tart Recipe

  • This chocolate salted caramel tart is absolutely amazing. A buttery almond crust, gooey salted caramel and bittersweet chocolate ganache, all garnished with salted crystals. Chocolaty, rich and buttery, a perfect treat for any occasion.
    Ingredients:
    Makes about 6-8 servings
    Almond Chocolate Sweet Pastry
    1 1/4 cups (160g) flour
    1/4 cup (30g) ground almonds
    1/4 cup (30g) unsweetened cocoa powder
    1/4 cup (50g) sugar
    1/4 tsp salt
    1 stick (110 g) cold unsalted butter, cut into small (1/2-inch) cubes
    1 tsp vanilla extract
    1 egg
    1-2 tbsp ice water
    Caramel
    1 1/2 cups (300 g) sugar
    1/2 cup (100g) water
    1/2 cup (120 g) heavy cream
    5 tbsp (70 g) unsalted butter
    1 tsp salt
    Chocolate Ganache
    1/2 cup (120 g) heavy cream
    4 oz (120g) bittersweet chocolate, chopped
    Garnish
    sea salt crystals
    Directions
    1. Prepare the sweet pastry. In a large bowl mix flour with ground almonds, cocoa powder, sugar and salt.
    2. Incorporate butter to the flour mixture, using a pastry blender, a fork or a pastry processor, until crumbs are formed. Add the egg and vanilla extract and mix them in. Add water and incorporate into the dough. Wrap it with plastic, knead slowly to form a disc and refrigerate for at least 30 minutes or overnight.
    3. On o floured surface or over the plastic wrap roll the dough to a circle with about 1 1/2 inches larger than your tart pan. Lift up the rolled dough and place it on a greased 9 inch tart pan. Remove the edges and refrigerate for 30 minutes before baking.
    4. Prick the dough with a fork, line a parchment paper over the dough. Fill with dry beans, rice or pie weights.
    5. Bake for 15 minutes in preheated 350 F (180C) oven. Remove the weights and the parchment paper. Return to oven for another 10 to 15 minutes. Allow to cool before removing from the tart pan.
    6. Prepare the caramel. Place the sugar and water in a medium heavy bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a caramel color.
    7. Remove the pan from the heat and add the cream. It will bubble a little bit.
    8. Cook for about 1 or 2 minutes stirring constantly with a wooden spoon until smooth. Remove from heat and add butter and salt. Stir well until smooth.
    9. Let the caramel cool slightly and pour over the chocolate crust. Refrigerate for about 4-5 hours.
    10. Prepare the chocolate ganache. Heat the cream in a small saucepan. When the cream just begins to boil at the edges, remove from heat and pour over the chopped chocolate. Let sit one minute, then stir until smooth.
    11. Pour the chocolate ganache over the caramel. Spread it evenly and refrigerate for another 2-3 hours before serving. Sprinkle with sea salt flakes and serve.

      Daniya Kamal It depends on how much salt you put. I added a little more salt than what it says in the recipe, and even that wasn't too salty. Just go try it out😊

      Daniya Kamal Oh, I forgot the scale. I'd say 1 or 2. Since the amount of salt is so little, you don't get a salty taste inside all of your mouth the way you do when chewing salty food for instance. But you just taste a few tiny salt crystals here and there, around "your teeth" for instance, if that makes sense😄

    I made this about a week ago for my girlfriend. I was feeling super lazy and bought an already made Oreo pie crust :) It worked well - I made it crispier by brushing it with egg whites and baking it before putting in the caramel. While the flavor was phenomenal, it was super dense and super rich. A very small thin slice with vanilla ice cream is much better than just eating it plain like a slice of pie. Thank you for this receipe, I enjoyed making it :)

    So, I just realised after years of baking as a european that you can't just convert cups to grams through math and that it depends on the food... logically! Because sugar takes up more volume. Omg this explains so much

    I'm relieved to see someone who actually scoops out/shakes out everything from the containers. I get really bad compulsions when cooking shows don't pour/scoop/shake all the contents out coz I just think it's super wasteful to not use everything you prepared.

    I've just started making tarts and I'm definitely trying this one, looks amazing. And... it doesn't look too difficult to make either, I suppose you just have to allow a lot of time for all the cooling off.

      cheekysmiley Yes, you have to let it cool...but it allows you to do something else meanwhile.. go outside.. solve other issues... and then just finish the tart. It is quite easy, hope you will try it out.

    Galera do Brasil, traduzi essa receita para minha mãe, aproveitando vou deixar por aqui:
    Faz em torno de 6 a 8 porções
    Massa de chocolate doce com amêndoas
    1 e 1/4 de xícara (160g) de farinha
    1/4 de xícara (30g) de amêndoas moídas
    1/4 de xícara (30g) de chocolate em pó
    1/4 de xícara (50g) de açúcar
    1/4 colher de chá de sal
    1 tablete (110 g) de manteiga sem sal gelada, corte em pequenos quadrados
    1 colher de chá de extrato de baunílea (essência)
    1 ovo
    1-2 colhere(s) de chá de água gelada
    Caramelo
    1 e 1/2 xícara (300g) de açúcar
    1/2 xícara (100g) água
    1/2 xícara (120 g) de nata (vende no pote)
    5 colheres de sopa (70 g) manteira sem sal
    1 colher de chá de sal
    Ganache
    1/2 xícara (120g) de nata
    120g de chocolate amargo, cortado
    Enfeite
    Sal Grosso
    Instruções
    1. Prepare a massa. Em um pote grande, misture a farinha com as amêndoas, chocolate em pó, açúcar e sal.
    2. Adicione manteiga à mistura, usando um garfo, até que os cubos dissolvam.
    Adicione o ovo e a essência de baunílea e misture.
    Adicione água à massa.
    Cubra com papel plástico, e molde lentamente até virar um disco, coloque na geladeira por pelo menos 30 minutos, ou durante a noite toda.
    3. Sobre um plástico, passe um rolo na massa formando um círculo por volta de 3cm maior do que sua assadeira. Levante a massa e coloque na sua assadeira untada (pequena, 22cm). Remova as sobras e coloque na geladeira por mais 30 minutos antes de assar.
    4. Fure a massa com um garfo, coloque papel manteiga sobre a massa. Encha o papel com sementes secas, arroz ou um peso específico para tortas.
    5. Assa por 15 minutos em forno pré aquecido em 180º. Remova os pesos e o papel manteiga. Retorne ao forno por mais 10 a 15 minutos. Deixe esfriar antes de remover da assadeira.
    6. Prepare o caramelo. Coloque o açúcar e a água em uma panela média de fundo grosso em fogo médio, e mexa gentilmente até que o açúcar dissolve e fique cor de caramelo.
    7. Remova a pena do fogo e adicione a nata. Vai ferver um pouco.
    8. Cozinhe por aproximadamente 1 ou 2 minutos, mexendo constantemente com uma colher de madeira até suavizar. Retire do fogo e adicione a manteiga e o sal. Mexa bem.
    9. Deixe o caramelo esfriar um pouco, e jogue sobre a massa de chocolate. Geladeira por 4 a 5 horas.
    10. Prepare o ganache. Aqueça a nata em uma pequena caçarola. Quando a nata começar a ferver nos cantos, retire do fogo e jogue o chocolate picado. Deixe assentar por um minuto, então mexa novamente até que derreta.
    11. Derrame o ganache sobre o caramelo. Espalhe igualmente e geladeira por outas 2 a 3 horas antes de servir. Salpique sal grosso e sirva.

    I didn't read the directions exactly right and only baked my tart for 15 minutes and my caramel was a bit lighter. I used a candy thermometer. I am excited to try It out and will be sharing the results on my blog.

      I forgot the ground almonds, I guess that must be why? Anyhow, I ended up scrapping that and using a different recipe I've used before (so no mistakes) and have just added the caramel and am letting it hang out in the fridge. It's going to be a looooooong 4-5hours.

    I probably shouldn't make this amazing dessert. Not because of the calorie content, or the time and effort is too much for me, no, that isn't why.       simplyshama Thank you , I am glad you like it, I think you can veganize it :) .. maybe you can combine some chocolate vegan cookie with coconut oil for the crust.. some vegan caramel on top made with almond butter and maple syrup, and vegan chocolate on top.... it might work good.

    While waiting for the caramel to harden a bit before the bittersweet chocolate, I ate the left over caramel on the pot and now I can’t wait for mine to be completed tomorrow morning 😊 Our thanksgiving dessert. Thanks for the great recipe again!

    That caramel looks a little thick...like it would be really chewy. Personally, I would probably use more chocolate and cut back on the caramel or try to make the caramel more creamy. Other that, it looks yummy!!

      By adding a good amoutn of cream, butter, or other ingredients like that. My grandmother makes caramel and it's not anywhere near as thick or chewy looking like the caramel in this video.

    Is it possible to substitute for the ground almonds? My partner is allergic to nuts, so in other recipes I've used either semolina or flour, depending on how smooth the end product needs to be.

      almonds arent needed, they just make the crust taste somewhat like a giant macaron. you can even substitute it for peanuts if you want or even oats.

    The caramel was too stiff in the end. Consider taking it out of the fridge and let it warm up to room temperature.

      @@w029jrsm10x look at the end where she had problems cutting the pie. That's one of the tough parts (pun intended) of including caramel in a pie.

      TheBargainHound it is called pure vanilla extract, that has been made with vanilla beans and alcohol.

      TheBargainHound yes.. because I've used some pure vanilla bean paste, that is what I had at the moment. It is not necessary to use a paste.. that's why I mentioned vanilla extract.

      it's a method called "blind-baking": when you fully bake a crust without the filling. She put beans inside to weight the crust down, keeping the crust flat and ensuring that the crust will not puff up. 😊
