That is a great no drill set up!!! Unfortunately most of us don't have a CNC machine in our garages, lol. Although I'm sure any metal working shop could make similar plates for a small fee. Only thing I would change is not tapping the aluminum plate to mount the AMA bracket. The galvanic reaction of saltwater between the aluminum and stainless screw would ruin the plate. I'd instead enlarge the tapped hole slightly, invert the stainless screw to come up from the bottom and use a nylock nut on top of the bracket. This way it's through bolted, and no reaction between the two different metals. Other than that, it's a phenomenal idea. I'm surprised it's something Hobie didn't think of.
Hobie, please watch and learn, without costing a Hobie fortune! I find it totally amazing that we spend thousands of dollars on something, then have to use self ingenuity and own money to improve it. Does the R&D department sleep all day?
