  • Japanese Michelin-starred chef Kimura-san shares his perspective of Singapore. We had a chat over an omakase meal at his new restaurant, Shin Yasuke. Kimura-san lives in Singapore for 11 years - what does he like and not like about living in Singapore? What is it like running several Japanese restaurants in Singapore?
    The sushi at Shin Yasuke was personally amazing. The core ingredients (most fish, wasabi, seaweed) used are the same as at Michelin One-starred Sushi Kimura. It's a great deal considering the quality. Highly recommended.

    I was at Sushi Kimura 3 months ago, the whole experience blew my mind! He was so engaging, so warm/friendly and I managed to request for him to repeat his "Uni Lecture" for me on camera, posted it on IG and I loved it!
    He has no sense of ego or arrogance at all which with him achievements, I would not be surprised to sense a little of that.
    Hands down the best Sushi experience in my entire life!
    Heading over to Osaka and Hiroshima next month to have my mind blown again! haha

    WOW! The food in this restaurant looks so fresh and "clean". Chef Kimura-san is also the perfect host. Singaporeans love talking and sharing indeed, sometimes way too much, but why not? We're all brothers and sisters at the end of the day.

      actually in non-english-using countries, speaking english shows that you are more cultured, weslthier, etc. same applies to all asian countries, if you think about it. shows higher class status. less barbaric, less poor, more well-travelled, wider perspectives, etc.
      it is a sociological thing.

    Every time I watch Ghib's video, two things will happen to me. Number #1, I find myself swallowing my saliva when I see him chomping down the food. Number #2, as usual, Ghib's video always has a comic hilarious genre. I started laughing at the beginning when he was supposed to eat the sushi but instead he wanted to eat more gari/ ginger. Interestingly his guest sushi chef is a non typical, not so traditional Japanese who also has a sense of humor when he said he loves talking to customers (supposedly forbidden). Yes, I noticed it too.... two japanese speaking in English😳🤔. Aiyoh both are cute and funny leh😂. BTW the sushi chef's English is not bad for a native japanese you know. And thank you for educating me on how to eat/ hold the sushi... I didn't know that (LoL). Lastly, thank you for a chill, entertaining video this week 🙏❤️.

    I don't eat sushi, but I love food and I enjoy cooking. And Chef Kimura-san's sushi is really.......like pieces of culinary art.

    In 2007, my family (6 of us) were at a sushi bar in Tsukiji market. The chef in charge of our corner was pretty chatty. Of course, he could only chat with my cousin (who's been studying in JP for 5 years and is naturalised.) The chef couldn't help overhearing us chatting in Mandarin & English and my cousin is tri-lingual. It was a fantastic experience as he explained all the sushi preparation that he served, including why each sauce or wasabi is added!
    For example, he removed all the bones in the unagi, shellfish is alive when served, soy is not given and wasabi must be requested (and is discouraged.) We could choose to eat with our fingers or request for chopsticks. Otherwise, we eat all the sushi as he makes them. That meal was $50+ per pax and that's when I learn how good maguro can be and no it's not otoro. Regular maguro can be good but, I never liked regular maguro in SG.
    Last year we went to Tsukiji outer market (which we missed in 2007) but of course, that restaurant has moved to Toyosu. We didn't have enough time in Tokyo so we skipped going to that restaurant.
    Chef Kimura-san is correct. Most chefs are not very chatty even with Japanese customers. At first I thought it's because the chefs are busy but as chef Kimura-san explains it, it's because Japanese are pretty reserved when they're eating out. And of course, most tourists can't hold a convo in Japanese so we really missed out of some of the nuances.
    And it's not like the chef are not trying. We went to a few places and the chef tried to explained in broken English and it REALLY made the meal better! It's like instead of just listening to your fav song, you also watch the MTV! 😁
    We'll visit Shin Yasuke during my birthday. The asking price means we can only go during special occasion.

    Ghib Ojisan, you could do a fixed white balance across all your cameras and also set your camera the lens to manual focus for stationary subjects. That way, your camera will not try to constantly adjust itself. Cheers.

    11 years is an eternity,for a minute i though it was ghib ojisan......goddam its not often if not next to impossible u find a singaporu otaku that young and spent that many years in singapore.....most people 99.99999% leave after 3 to 5 days

    Japanese firm usually has the bao gao liao culture. Meaning you not only do your own job, but also have to do other things outside of your job scope. There are good and bad to this working style. Good one is you got to learn things outside of your job scope. Bad is you may tend to overwork hence more tiring.

    The Japanese Kanji word for tooth is 歯, 米在字中,where is our Chinese 汉字 is 齿,人在当中. As if one is chewing rice and the other is biting human flesh. 😁

      I think it's not considered super expensive because Michelin starred sushi is quite likely to cost at least about the same and more even in Japan
