Love this series.
But never thought I'd see Sushi, Texas Barbecue, Punk Music in the same sentence though.
Reading your comment reminded me of some crazy Japanese beat 'em up arcade game I once played: "Ninja Baseball Batman". Another combination of words that is rather "unusual". Maybe there could be a sequel to it "Sushi, Texas Barbecue" with a punk rock soundtrack. ^_^
Rocking that mullet, tattoos, fish fusion with texas bbq, what else do you need more? This has it all.
Thanks Eater.
Every other Omakase: Irasshaimase
Chef Yoshi Okai: Welcome...
At the same time he's been in the US for over two decades, and his English is still atrocious. How do you even manage that? :D
Self taught unlike most sushi masters, this guy has his own unique style. He really doesn't care, it definitely looks like he is enjoying what he makes and accomplished. The way he smiles tells you how humble he is. Americans are a big bowl of mixed cultures and this guy is every bit of it
It wouldn't be punk if he cared about or followed tradition for the sake of it.
Wish more people have his and your worldview. What makes America awesome is our celebration of different cultures and the mixing that happens, not the division thereof.
*Yoshi Okai listens to punk, is a sushi chef & incorporates BBQ to his food. He's a real one*
My dude said his recipe was better than his gran's. That's bold.
To be fair.. I think learning and building upon grandma's food is beautiful and roots your cooking in tradition. There's nothing like eating dinner and catching a glimpse of nostalgia reminding that only your grandma's cooking could do better.
@@blazinginger571 still a bold statement to make, I'd never say that in any forum that MY grandma could possibly stumble upon
Hands down coolest sushi chef of this series
I think this guy really enjoys every second of his job
This is great!
I got to eat at Otoko last January. The best omakase experience I've ever had, by far. With the best sushi I've ever had. Chef Yoshi was the one who served us all night too.
The highlights to me were;
Kanpachi w/ meyer lemon zest
Shigoku Oyster w/ yuzu ponzu, smoked steelhead roe
Hirame
Hokkaido Uni (GREATEST EVER OMG)
Madai
Chawanmushi w/ maitake, shrimp, ginko nut, mitsuba, jamon Iberico, truffle oil
and for the greatest dessert course ever, Uni no Ikari (wrath of uni) which is Uni Ice Cream.
This meal alone is worth the entire trip to Austin. I plan to return someday.
Hmm might have to make a short road trip to see this guy before the summer ends.
deathtotheknowitall2 be sure to introduce yourself with a Jameson shot offering
Hey I’m from osaka and I would definitely love to try his food. I know the fact that we, Japanese, tend to like keeping traditions as it was and is and yeah it’s important but still I would love to see something new as well. It’s unique. Much respect to him.
P.S. Japanese dudes saying that don’t wanna accept his style, I believe he doesn’t need customers like you either so don’t even worry.
This place is right behind Central Standard on South Congress. I've really wanted to try it out, but tickets are steep. I'm sold now though, definitely seems worth the experience.
I love Otoko. I usually get pizza at Home Slice and stumbled upon here walking around. Totally worth the price to dine at Otoko. It's probably my favorite Japanese restaurant here besides Uchi.
IN MY VIEW
The independent creative brilliance in this Chef is mind-boggling. I love it.
cust: Taisho what is this?
chef: I dont Know
Cust: *bite* AAAAAAAAAAAAAAAAAA
Fascinating video on fusion cooking that has been elevated beyond its basic beginnings in the 1980s. He's elevating his Japanese cuisine with subtle nuances of Tex-Mex.
This guy is literally on the same street I live in and I’ve never been. Wow it’s 175 a person but sure seems worth it
I vote this as the most wholesome series on all of UA-cam.
This guy seems to have an awesome personality. Open-mindedness, creativity, eclecticism, and a great attitude and passion about his work. I think I'll have to take a short trip to Texas.
Amazing work!!
Just what I needed - another bucket-list restaurant.
日本から空輸だとネタの鮮度が悪くなるので刺身より熟成が活かせる鮨がマスト
楽しんで仕事をしてる…これが一番素晴らしい事です
A dose of this kind of videos makes me so happy. Always on the look out for every episode.
You my friend are the definition of success. Embrace your own style, and workhard. Much respect
I live in Dallas but will be stopping by next time I’m in Austin ! I love this guys attitude and the joy and passion he brings to his food ! Can’t wait !!
Sushi chefs who got formal education might just flip the table seeing him, but I like how he break every common sense about sushi making lol.
Creating new cuisine believers one ingredient at a time. I have long been a,sushi fan but his ideas are exciting. I want to try them. 👍
This bloke is cool, not your typical super serious discipline looking japanese chef!..I bet his food taste as good as it looks!
when he said welcome, omg this dude scary.

Fusion at it's finest. The ice fish and crickets that live world's apart from each other, together in one plate. I could only imagine what it tastes like. True mark of a genius
Punk rock barbeque sushi.
And it feels soooo good.
really fabulous, thank you for existing and so be able to appreciate the love and devotion of being a sushi master
Good video and got my hyped to try this guy's food. However I think it was a missed opportunity to play punk music instead of the normal sound track.
I love his positivity... Seems like a fun and cool guy to hang out with 😎
I think of my dad while watching this documentary video. Thanks so much.
This guy is AWESOME!!! I admire him!!! What an inspiration!!!

Gun Club, Birthday Party, The Cramps, Bauhaus............ this is one of my new favorite people ever.
“I’m doing my grandmas recipe but mine is better” damn he’s got some balls to be disrespecting grandma like that

brahhhhhh HAHAHAH I am crying, i actually said like an anime character lol
I need to see a video of this guy in a room with Natsuki, drinking, talking about music and eating sushi.
7:34 i thought he blew an "O" with the smoker but it turned out to be his button on his shirt
Thanks for EATER not only food and eat but inspiring 🙏 💐, keep on going 👊
This is the best series on UA-cam.
Hes smile is everything
Everything about him has such a rock n roll vibe. 🤘🏻
i have punk soul too... but i leave my chef side into music... inspired chef... you are not alone...
Thought thumbnail showed a Yakuza sushi master 😅
for some reason this guy reminds me of that character from food wars .. was it DON RS... something like that.. but this guy's character.. omakase, punk, barbeque...my life is complete...
VERY cool. I like his embracing of his differences.
And that icefish, nopal, and grillo dish looks fab.
That Topo Chico pin basically told me he also enjoys authentic Mexican cuisine
This guy Rocks! (like literally) 😂
Never thought I would ever see the connection between chapulin and sushi.
Wen u love wat u do the people will love you for it...and my friend now that people see how amazing you are....theyll be coming in droves.....dont like sushi but i like his style ..and approach to making his version of sushi...great vid

This sushi chef looks like a real life Lupin III.

Awesome! Eater should put the restaurant name in the descriptions to make it easier to find this place... looks amazing!
This is amazing! I love The blue hearts ! 💙💙💙💙
'Master Sushi Chefs' and Eater, name a more iconic duo.

That yanagiba looks amazing!!
Absolutely fantastic I love this guy. Punk Tock Sushi Love it
日本料理には秘密はないと信じていましたが、それぞれが独自のレシピを作成しています ( Eu acreditava que não havia segredo para a culinária japonesa, mas cada um criava sua própria receita )
Punk Rock Sushi...I love it! I'm a Sushi Chef as well.....
That sea bream looks delish!
Great creation. I know most people think only true traditions Japanese style will be call perfect. But in America it's about creations. You do what you got to do for your consumers. I think you did a great job. That is survival skills! like it or not. Kentucky fried chicken taste different in every country but they all recognize what is Kentucky fried chicken restaurant about. We can't stop the world from spinning, but only to catch up with the world on what they demand. Good luck and hope one day I can taste your beautiful creations of the food you feel for the people around you. Tx..
Very cool guy, skillful chef indeed.
When it comes to cooking, he's a different person. Very focus & serious. Shugoi!
I like this guy. Hes speaks like a real 'murican! I was happy when he said he is doing things his own way. I was hoping to see some beef ribs, maybe smoked and wet tuna ribs? Or tacos?
料理人があの髪型はあかんやろ…
This is the first time i saw a sushi chef with tattoo.
I want this guy to be my mentor
This guy is awesome
so much effort for each bite
this dude is so punk rock i love it
LOVE THE BLUE HEARTS!
Darn, I used to go to Austin regularly. Now I don’t and am so sorry I didn’t know about this place.
So lupin became Master Sushi Chef right now.
He is the spirit of Austin 😂
Beautiful presentation
I’ve only had cheap sushi in my life hopefully one day I could try those posh sushis 😂😂😁😁
Customer: What is this?
Sushi chef: 🤷 I dunno 🤷
Customer: 'eats' Ahh! 🤮
Sushi chef: 😁😄😆 Bahhahaha!
I *love* this man. Super funny and just cool and laid back.
I love his hair
Also worth noting: I cooked alongside Yoshi for several years, and he is the nicest guy. Defies every stereotype about yelling, hyper-masculine male chefs. He's humble, self-effacing, gracious and very funny. Was a great mentor and is such a good example of being really good at something but not letting it affect how you treat others.
That's awesome to read about! Thanks for sharing.
Mark Stenberg that’s so cool!!!
He seems like such a genuinely nice dude. Glad to hear it's reality too
That should go for every guy in every positin bit sadly it doesn't.. Thanks for sharing
So in short, he's super humble and modest, really enjoys what he's doing? Sounds like a great human being.
