  • Sweet dreams are made of Pierre Lilamand’s candied fruit. He is the fifth-generation member of his family making this delectable treat in the quaint village of Saint-Rémy-de-Provence, France. The confectioner shows us how to preserve cantaloupe, apricots, strawberries, and oranges in sugar syrup. His recipes go way, way back-candied fruit fans Nostradamus and Olivier de Serres swore by them four centuries ago.

    I’m making my own fruitcakes to vend outside for the holidays. I want to convert skeptics into loving fruitcakes! First step: learning to make my very own French candy confits. Best approach I have seen involves taking 20 minutes per day over six days to simmer in corn syrup and sugar and set aside until all moisture from the fruit has been replaced with the syrup. This gives the translucent, glazed appearance and a chewy, smooth texture ( other countries skip the corn syrup and the extended days and end up with a different confection which is crackly, but not great for baking). I’m going to let them set between simmering since my oven and I’m going to do 4 to 6 fruits over the course of six days, doing two lbs at a time of each fruit. Then I will make the fruit cakes, wrapping them well and soaking in a big amount of brandy. I want to wind awards. My “fresh” cakes will sell for $60 each and the conserved ones will be double that for a one to two year conservation and $200 for the five year couvee. Wish me luck!

    I love this channel! I learn something new every single day from the different stories. It's very impressive what Lilamand Confectioners do with fresh fruit. It''s like a dry Compote (fruits cooked in sugar and water). I see the difference is just letting the excess syrup on fruits to drip. Thank you for this story.

    In my country (pakistan), its a traditional sweet with the name of "murabba". We prepare candied carrots, apples, and raw mangoes. Its really yummy dish.

      s10m0t10n you can actually buy them at Fortnum and Mason if you’re ever in London, they’re on the ground floor of the department store! A throwback to their eighteenth-century origins. They’re delicious, but very, very sweet!

I live halfway up the country, so it's unlikely that I'll visit London in the foreseeable future (fell out of love with the place years ago) and, as a diabetic, they probably wouldn't do me a lot of good.     Amazing. Every piece is pristine; shape perfectly preserved and translucent from complete diffusion of sugar syrup. Anyone who has tried to candy anything before knows how tedious the process is, and how hard it is to prevent the sugar from crystallizing.
    To bad this video is not a true how-to.

    Actually the candied fruits like these are called 'Murabba' in India. It is made from fruits some vegetables like - indian gooseberry too . Rose is also candied to make 'Gulkand ' , which is a mouth freshner.

    I live in France and ate these before, the texture is like biting into a fruit paste, a bit dense. Taste is very very sweet and the fruit taste is not very present. Which is why I imagine it is not a popular thing anymore to eat these. Of course there is some merit to its existence but there are so many other nice things to eat.

    Didnt know the french did this. I knew about tanghulu and candied almond, even candied spices. I know that candied fruit is also common in asian countries. Of cours candy apple is well known. But this is very interesting, I wonder if it tastes different.
