Creamy Chicken Penne

- CREAMY CHICKEN PENNE
Servings: 4
INGREDIENTS
4 slices bacon
2 chicken breasts, sliced
Salt & pepper to taste
2 teaspoons Italian seasoning
1 teaspoon paprika
2 cloves garlic, minced
2 cups spinach
4 small tomatoes, diced
1 ½ cups cream
1 cup shredded parmesan
½ teaspoon red pepper flakes
10 ounces penne, cooked al dente
PREPARATION
1. In a deep skillet, fry the bacon until crispy. Remove to a paper towel to drain, and chop.
2. In the same skillet, cook the chicken with salt, pepper, Italian seasoning, and paprika.
3. Add garlic and cook until soft.
4. Add spinach and tomatoes, and cook until spinach is wilted.
5. Add the cream and parmesan, and bring to a boil.
6. Add the penne and bacon, and stir until fully coated in sauce. Serve with fresh parsley, parmesan, and red pepper flakes if desired.
7. Enjoy!

When you boil pasta water, once the pasta is near done, take about a 1/4 cup of the water, which is saturated with starchy goodness. This will provide for some additional body to your sauce. When making a cream sauce, make sure it's "Heavy Cream" none of that Half&Half fakery. High fat content lends excellent flavor, and holds up better when under heat. A broken cream sauce is no laughing matter..
Allow the sauce to reduce by half. Add the cooked pasta to the sauce/veggie mixture..the pasta should be coated with the cream, but not clumpy or appear dry (as in the vid). Finish with some chopped basil/parsley, juice of a lemon. Serve with some french bread or slice of garlic bread.

So I should use cream with more than 30% fat, right? I don't want it to curdle, cause it happened to me once when I used 18% cream and the whole dish was totally fucked :(

I made this and it was really good. I added an extra 1/2 cup of cream, 1 cup mozzarella, green and red peppers, onion, cayenne pepper, and some garlic herb seasoning and it turned out awesome. You can definitely play around with this recipe.

I made this exactly as written with one small change: I substituted two 14oz cans of Italian diced tomatoes (drained) in lieu of the fresh, because I was short on time. It was really good and a huge hit at my house! Definitely something I'll make again.
As a bonus, it'd be easy to customize this recipe if you want it spicier or cheesier, or if you want to add more veggies, or maybe add some sweet (or hot) Italian sausage or something. Lots of possibilities!

Rasmeha Nabil yes! I've tried both and I prefer using milk. It just takes a little bit longer for the milk+Parmesan to thicken up nicely

I am OK with the video, but would DEFINITELY NOT use the grease from the bacon to keep cooking... it might make it smell wonderful but that is some shit getting into you. If you insist on the aroma, which I also love, at least dump the great from the pan, swipe it with a paper towel and leave a bit left on the pan. Still unhealthy but not eating 100% of the fat.
