Chicken Varutha Curry or கோழி வறுத்தக்கறி, is a very tasty, flavorful, curry made with chicken and roasted ground paste of selection of herbs, spices coconut and cooked in Sesame oil. You may alternatively try this recipe, replacing chicken with mutton too. Its a very delicious accompaniment for Indian breads like Naan, Roti, Chappathi, Phulka, Poori etc., It also goes well with any rice preparations.
Here is the recipe for for your convenience :-
Ingredients and its quantity:-
Chicken - 250 gm
For Grinding Masala :
Sesame / Gingelly Oil - as needed.
Bengal Gram - 1 tea spoon
Black Gram - 1 tea spoon
Kapok Bud - 1 No
Star Anise - 1 No
Black Stone Flower - 1 No
Green Cardamom - 2 No
Bay Leaf - 1 No
Mace - 1 No
Cloves - 2 No
Cinnamon - 1/2 inch stick
Fennel Seed - 1 tsp
Black Pepper Corn - 1/2 tea spoon
Poppy Seed - 1 tea spoon
Curry Leaf - 1 sprig
Red Round Dry Chilli - 3 -4 Nos
Turmeric Powder - 1 tea spoon
Chopped Coconut - 100 gm
For Tempering
Sesame / Gingelly Oil - as needed.
Kapok Bud - 1 No
Star Anise - 1 No
Black Stone Flower - 1 No
Green Cardamom - 1 No
Bay Leaf - 1 No
Mace - 1 No
Cloves - 2 No
Cinnamon - 1/2 inch stick
Curry Leaf - 1 sprig
Ginger Garlic Paste - 1 tea spoon
Red Round Dry Chilli - 3 -4 Nos
Lemon Juice - as needed
Black Pepper Powder - 1 tea spoon
Rock Salt - to taste
Chopped Coriander leaves for Garnish

The uniqueness of this recipe is to make it without onion and tomato. However, You may add the same once the coconut are nicely roasted and saute for a while. Grind everything together into a paste.

U r adding whole spices twice while making this dish. (In the 1st step of preparing masala & in the 2nd step while tempering u hv added those whole spices yet again ) May i know why? And is it really necessary to add the whole spices while tempering when they've already been sauted when masala preparation? Or can we skip adding them?
I should have mentioned a note/clip in the video but sorry i didn't. Please look at the description. I have updated the same with ingredients required for Grinding Masala and Tempering separately. This dish is meant to be made with intense flavor hence i divided the whole spices into 2 parts and used in both masala as well as tempering to get the best of the flavorings from the spices. The volatile substance of the spices and its characteristics differ in each method of extractions such as #1. Roasting in oil, #2.Dry Roasting and grinding (powder) #3.Roasting in oil and grinding into paste. So, i used a combination of all three in my own style which can also be called as "Secret Recipe"🙂. However, its absolutely your choice. You may skip adding spices in the tempering, if you wish to. Please do remember the appearance of the gravy may look flat if you skip whole spices in the tempering. I am glad you asked me about it. Thank you very much and request your continued support.🙏🙏🙏
