How to Make Pesto!

  • Pesto is such a great condiment and actually really easy to make! You can use it on fish, chicken, steak, pasta the list goes on! I used regular basil and some Thai basil that I grew in my AeroGarden, The Thai basil is a smaller leaf and has a rougher flat texture as opposed to the regular basil that has a smoother and larger leaf. The Thai also has a sweeter smell than the regular basil that has a more herbal scent but taste wise in the final product the herbal taste was more pronounced. I'll have to try a Thai Basil only pesto next time.
    Here's what you need for this recipe:
    2 cups basil (I used regular basil and Thai Basil)
    1/4 cup of toasted pine nuts
    2tbsp of fresh dill
    1/2 cup olive oil
    1 medium to large garlic clove
    1/4 cup freshly grated Pecorino Romano
    Pinch of salt and pepper
    Pulse all ingredients in a blender until everything is finely chopped and combined then puree for a couple of seconds until smooth, if you wish to have a very smooth pesto add a little more olive oil or water.
    This can be stored in well sealed container for up to two weeks in the fridge.
