Mango Cake - Eggless, No Maida, No Refined Sugar | Healthy Mango Cake Recipe (With Oats)

- This Healthy Mango Shrikhand Cake is loaded with mango flavor. It’s moist and yummy, and to make it even more appetizing I’ve coated it up some creamy Mango Shrikhand Frosting 😋! And that’s not all, it’s made with oat flour and like most of my desserts, it’s refined sugar free.
CAKE INGREDIENTS
*1 cup Oat flour ( grind rolled or quick Oats to make flour)/ ओट्स
*1 tbsp Corn flour / कॉर्न फ़्लावर
*1 tsp Baking powder/ बेकिंग पाउडर
*1/4 tsp Baking soda/ बेकिंग सोडा
*1/2 cup Mango purée (blend some roughly chopped mango)/ मैंगो प्युरे
*1/2 tsp Vanilla extract or essence/ वनिला असेंसे
*3 tbsp Oil/ ओईल
*1/4 cup Jaggery Powder or coconut sugar/ गुड़ पाउडर
*2 tbsp Milk/ मिल्क
SHRIKHAND INGREDIENTS
*1/4 cup Mango purée (blend some roughly chopped mango)/ मैंगो प्युरे
*2 tbsp Honey/ शहद
*1/2 tsp Vanilla extract/ वनिला असेंसे
*some finely chopped Pistachios / पिस्ता and mint leaves/ पुदीना for garnishing
INSTRUCTIONS
1- for the Shrikhand, take a large bowl and place a cheesecloth over it. Pour in 400 gm curd/ yogurt, bring the edges together and tie the cloth. Then using some kind of support, hang the cloth along with the bowl, in your fridge overnight and make sure there is enough gap between the cloth and the bowl, so that the dripping water / whey can collect in the bowl. Next day, when all the water / whey has drained off, you will get thick and creamy hung curd.
2- Blend a large mango to make purée. Transfer the hung curd in a medium sized bowl, and add honey, vanilla extract and 1/4 cup mango purée. Give a good mix until smooth and creamy. And the Mango Shrikhand Frosting is ready, keep it in the fridge to chill.
3- Now grind some oats to make oat flour. And in a large bowl, add 1/2 cup mango purée, oil and jaggery powder. Beat it well until well combined. Add in vanilla extract, oat flour, corn flour, baking powder and soda and milk. Mix it gently until well combined ( but make sure not to over mix ). At this stage preheat the oven at 180°C/ 350°F for 10 minutes.
4- Transfer the batter in a parchment paper lined cake tin. And bake at 180°C/ 350°F for 40-45 minutes. Allow to cool and apply the Shrikhand frosting. Top it up with pistachios and mint leaves. Slice it up and enjoy!!
