Healthy Fluffy Oat Pancakes | The Best Breakfast Ever!
Today, I’m sharing a healthy and delicious recipe for Strawberry Oatmeal Pancakes!Soft, fluffy, and packed with the goodness of oats, these pancakes are a wholesome treat. My quick and easy strawberry sauce adds a burst of flavor, and makes them even more delicious . If you also like having pancakes for breakfast, this recipe is a must-try!
Ingredients
🔹 For the Strawberry Sauce:
400g strawberries, chopped
A splash of water
🔹 For the Pancakes:
2 eggs
1 tbsp honey
1 tsp vanilla extract
1 cup oat flour (blend oats into a fine powder)
1 tsp baking powder
¼ tsp baking soda
⅓ cup plain yogurt
½ of the prepared strawberry sauce
🔹 For Serving (Optional):
High-protein vanilla yogurt
Nut butter or fresh fruit
Maple syrup or honey
Instructions
1️⃣ Make the Strawberry Sauce:
In a pan, add strawberries and a splash of water.
Cook over low-medium heat for 8-10 minutes, stirring occasionally, until thickened.
Turn off the heat and let it cool completely.
2️⃣ Prepare the Pancake Batter:
In a medium-sized bowl, whisk together eggs, honey, and vanilla extract.
Blend oats into a fine powder to make oat flour.
Add 1 cup of oat flour to the egg mixture, along with baking powder, baking soda, and yogurt. Mix until smooth.
Fold in half of the prepared strawberry sauce.
3️⃣ Cook the Pancakes:
Heat a pan over low heat.
Pour 3-4 tbsp of batter per pancake. Cook for 2 minutes until slightly puffed up.
Flip and cook the other side until golden brown. Repeat with the remaining batter.
4️⃣ Serve & Enjoy:
Top with high-protein vanilla yogurt, nut butter, or fresh fruit.
Drizzle the remaining strawberry sauce and add maple syrup or honey if desired.
✨ Enjoy these soft, fluffy, and wholesome pancakes!
