Because everyone know it's just a joke and it means to be fun. It's lovely to see this because nowadays everyone just literally gets offended of everything.
Some people may think this is obvious, but I've seen a lot of bad comedians just insult audience members' physical traits or something dumb like that, which doesn't work because A) it's not a complex joke B) the targeted audience member lowkey gets their feelings hurt and C) the rest of the audience can't see them, so they're left out of the joke. If a comedian is too harsh with no finesse, they can definitely just come off like an asshole. And sometimes, comedians get wayy too pissed at hecklers, and they're not even making jokes anymore, they're just arguing with some drunk nobody while everyone else watches awkwardly.
You guys don't like that but to be honest, that's how our stand-ups are in the corner of our pond. Mostly, they don't bring much content in. May be one or two then suddenly, it's FFA (Free-for-all) where the comedian uses people in the stage to just create punchlines and adlib content out and frankly, that shows how much raw talent one person has that he doesn't need much prepared content in order to make an audience laugh.
