They gave me a granola bar and a coke. Pretty fantastic people, the reason why the line was so long and took so long was because he was getting to know each peerson and signing a damn booklength for an autograph for each person. Fuckin respect.
He has downed a whole Trinidad Scorpion for hot pepper gaming and could barely utter a complete scentence... I'm pretty certain he didn't want to go back to that.

We got bags of flour mix for all doughs and added water. We quickly, within a few months, moved to frozen for Stuffed Crust. If we ran out of Stuffed Crust dough and used the regular Hand Tossed it would turn out like the pizzas in the video, with the crust way too big and often with the cheese busting out. Stuffing a New Yorker dough worked well but because it was extra large it was an employee only thing. *The garlic butter on the Stuffed Crust ring was added after the pizza was baked using a spray can of garlic margarine. *At my first store the only frozen dough was Stuffed Crust, bread sticks, and personal Pan. This was a franchisee choice and, in our case, depended on freezer space. I moved to a brand new, just built store where everything but the New Yorker, Thin, and large Pan dough was frozen.

Randy Miller III - Maybe in the 70’s and 80’s. When they sold out to PepsiCo, the quality went to shit. They started using frozen dough, and decided that 2 types of crust wasn’t enough. The fact that these 3 guys weren’t alive when Thin N Crispy RULED, explains why they don’t have a clue. I was involved in dough research in Wichita during the late 80’s, and they truly were listening to the wrong executive idiots. Sad.

Stuffed crust was not made from frozen. It's the thickness of the dough; much thicker than Italian thin crust and similar to pan in consistency but not proofed so it doesn't fluff up in the oven as much. The dough pucks arrive at the store frozen and are defrosted the day before. At least that is how it was done in the U.K. about 15 years ago when I worked there as a teenager.
Rich Benson not much changed, 5 years ago when I was there they're still using frozen dough pucks that proof differently based on which pizza. But they use a medium sized puck for the stuffed crust so the dough gets stretched extra far and thin around the string cheese in the crust.
Can confirm both of your reports. Worked at PH as a "production professional" mid to late 90s. The dough was stretched over the edge of the pan and crimped over the cheese. Also the dough we used was not floured as I remember. It wasn't oiled either, but it was kind of oily and non-stick to the touch. Little Caesar's is now stuffing. I wonder how their product and process differs, if at all.
I worked at pizza hut in canada 2005-2008, my location did not use frozen dough. We made dough fresh in store daily and it was never frozen. Smaller locations had switched to frozen dough but I worked in a bigger location that still had a full service dining room, served beer and wine etc. Other than that it was about the same as you folks are saying. For stuffed crust the dough was not floured, which probably helped it stick. Wasn't really any trick to it other than that. Once in a while a stuffed crust would "blow out" in the oven, with the string cheese leaking out but not very often. Aside, using the same frozen pucks for pan as for hand tossed and just proofing them more sounds like it would make really shitty pan pizza. When we made fresh dough there were 2 different recipes with different yeast blends, one for pan and one for hand tossed + stuffed crust. The pan pizza dough got proofed and really inflated a lot in the proofer, the end result was crust that was a good solid 3/4" thick and extremely light and fluffy. Hand tossed and stuffed ended up under 1/4" thick and a lot chewier, in a good way. I feel like when they started doing frozen dough they pretty much just lowered their standards
I too worked at Pizza Hut in the UK (for about 10 years), this is correct however I think you've missed the point he's making. The dough pucks arriving frozen is exactly what he meant about quality control, they're made in a factory to uniform shape, size and thickness, sent to the restaurants where they're defrosted then prepared and cooked by a bunch of college/university aged kids. "Real" pizza places don't EVER use frozen dough, it is all baked from scratch in house. Even Domino's in the UK don't ever fuck with frozen dough at any point in the supply chain.
omikrin1 worked at both as a teen in the 90s. Same process for both except pizza hut's cheese was round, caesar's cheese was square. Also caesars used fresh dough with cornmeal dust, pizza hut used frozen proof in the pan sprayed with "food release" aerosol oil, but in both cases pizza dough was room temp, stretched, & wrapped / crimped around the cheese to bake. Cheese was the quality of a "moo-town snacker" for anyone who remembers those. The mozzarella they are using here is too fresh / not dry enough, and thats why its busting through.

I can confirm 100% that pizza hut does not pre-make stuff crust pizza's and freeze them, they let the dough thaw, then take the dough, add in, basically string cheese using plastic rings around the pizza edge that allows them to perfectly stretch and fold the crust.
Great video giving the throwback Pizza Hut pies some credibility. I worked for the last Pizza Hut franchise to still do things the old way for 3 years and I'm not afraid to let ya'll in on the secrets of the first two pizza's. First, a lovers pizza is 1.5 times more toppings than original with a pepperoni lovers correctly having a lower layer with the regular amount of pepperonis then topped with more low moisture mozz which is then topped again with another layer of half as many pepperonis. Second, the crust. We were the last store in the country to resist the move to frozen dough and still made it from the original premixed recipe. The only fat that was added was vegetable oil, no butter at all. It was then rolled through a sheeter and tossed by hand to fit the trays. A ring was also used over the pan to allow that defined crust to be made. Third, the stuffed crust. This dough is the exact same dough as the hand tossed dough, made fresh every day. The secret is to pull the outer edges thinner than the middle. That prevents the dough from puffing up to a humongous size. You stretch the dough, wrap it around the cheese and then pull and tuck like you would if you were wrapping a deli sandwich. This helps to prevent air from getting in and puffing up the crust too much. You also heavily dock the middle, uncheesed portion of the dough. Also, garlic butter was added after the pizza comes out of the oven and not before. Hope ya'll loved the insight from a guy who live it. Long live the original hut! P.S. Not the 2010's hut, they suck! It's all frozen dough, changed dough, and smaller topping quantities. It's a shell of its former self.

Pizza Hut was still okay until about 10 years ago when they started doing the any pizza, any toppings for $10 promo. They lowered the quality of the crust and skimped on the toppings and have tasted like garbage ever since. Haven't ate there in years but I heard they now have fees for each state that says "fee due to the cost of running business in California" LOL who the fuck would pay a fee to buy from Pizza Hut?
Andrew W.K. was a big deal in the early 2000s for arena rock anthems like "Party Hard" among other tracks. He never stopped making music and released an album earlier this year. With that said, I've always liked the man's positive attitude but I have never gotten deep into his music.
I'm turning 30 this year and was introduced to him by the jackass series on late night MTV and cky videos. He's a vocalist in a rock band and back in the late 90's early 2000's rock, heavy metal alternative, emo and screamo was the music everyone was into . So I guess hes positive vibe and appearances gave him his popularity plus the fact that he indeed loves to party.

Worked at Pizza Hut as a cook. The stuffed crust isn't frozen, but they use a spiked roller after crimping the crust to seal the edges. String mozzarella was correct. The crust is stretched extra thin to prevent bubbling and to make sure the crust isn't thick around the cheese.

I worked at Pizza Hut in high school and have made my share of stuffed crust pizzas. The secret is to use a perforator around the edges. Not only does this secure your crust, but it also keeps the dough from bubbling up and opening your string cheese purse.
As someone who worked at the Hut in the early 90's, I can not speak of the secrets of the stuffed crust... that came after I worked there. However, I can speak of the buttery golden-brown crust of the Pizza Hut Deep Dish. The ingredients responsible were not part of the crust itself, but rather, added to the empty pan in the form of pure vegetable oil. There were different sized squirt bottles for each size deep dish pan that were dispensed early in the morning. It was an acne inducing nightmare! Once all the pans were oiled up, the appropriate amount of freshly mixed dough was placed in the center of each. A plastic lid was sealed on top, and they were all put in a warmer for a certain amount of time until the dough would expand evenly across the entirety of the pan. After that, they were all refrigerated until needed later that same day. What oil wasn't soaked up in that process would literally deep-fry the bottom and edges of the crust after sauce and ingredients were added and it cooked in the oven. This was a very long time ago, so this is all to the best to my recollection. It might be done differently now. Needless to say, it was not healthy, but no one with any clue ever truly expected it to be. This post was both moderately informative, and exceedingly yawn-worthy... PIZZA SCIENCE all up in your face! Great video, though! Those pizzas all looked amazing!
For what it's worth, I worked at a Little Caeser's Pizza in the mid 90's while in high school. We did a stuffed crust while i was there (as well as the spaghetti bucket and even sandwiches!) and we used pieces of cheese in the crust that looked like little 2x4's. The crust was just rolled up over them and sealed. The crust cheese pieces aren't frozen, they were just refrigerated. That cheese also wasn't 100% mozzarella because it didn't completely melt in the crust, which is what helped keep the shape.
I worked at Pizza throughout the 90s and I was the person that produced all of their dough for the various pizzas and you guys are correct the Mozzarella sticks were frozen before they were then put around the crust and crimped in. Also they used a garlic oil spray from a can they sprayed onto the edge crust after it came out of the oven. The Pizza with the highest sugar content was the Bigfoot Pizza. The healthiest crust was the thin and crispy. The dough styles I produced were Pan Dough, Hand Tossed Dough, Neapolitan Dough, Bigfoot Dough and Thin & Crispy Dough. They also had a specific way that they used to place the toppings onto the pizza.
Andrew was awesome, but I think we need to show some more love to Anthony Falco. He was also a great guest! It's just hard to compete with Andrew's charisma.
In elementary school we had Pizza Hut every Friday for hot lunch. Those were the best days. It set the weekend off in party mode. It's so special to me that I literally haven't had PH since I graduated in 2000. Just waiting for the right moment I guess...
lol I worked for pizza hut in Australia in my late teens and it was so much simpler to make stuff crust. 1 you stretch your dough like normal then for the crust you just slightly stretch it a little more with your thumb and rolling your wrist on the bench while spinning it in the pan/tray 2. we used the cheese sticks that pull apart in like shoe strings and just lay them in a ring around the edge just in a little bit about half an inch or so. 3 fold the dough over the cheese stick and press firmly into the dough on the inside. The way pizza hut had perfect crust edges was with "rings" they were like a plastic ring which had angled sides so we could just throw the toppings on and not need as much precision in placement and would keep the toppings exactly the same distance from the edge every type of base had its own type of ring from deep pan to stuff crust to perfecto and thin.

"Real" pizza places don't EVER use frozen dough, it is all baked from scratch in house. Even Domino's in the UK don't ever fuck with frozen dough at any point in the supply chain.
omikrin1 worked at both as a teen in the 90s. Same process for both except pizza hut's cheese was round, caesar's cheese was square. Also caesars used fresh dough with cornmeal dust, pizza hut used frozen proof in the pan sprayed with "food release" aerosol oil, but in both cases pizza dough was room temp, stretched, & wrapped / crimped around the cheese to bake. Cheese was the quality of a "moo-town snacker" for anyone who remembers those. The mozzarella they are using here is too fresh / not dry enough, and thats why its busting through.

I can confirm 100% that pizza hut does not pre-make stuff crust pizza's and freeze them, they let the dough thaw, then take the dough, add in, basically string cheese using plastic rings around the pizza edge that allows them to perfectly stretch and fold the crust.

Great video giving the throwback Pizza Hut pies some credibility. I worked for the last Pizza Hut franchise to still do things the old way for 3 years and I'm not afraid to let ya'll in on the secrets of the first two pizza's. First, a lovers pizza is 1.5 times more toppings than original with a pepperoni lovers correctly having a lower layer with the regular amount of pepperonis then topped with more low moisture mozz which is then topped again with another layer of half as many pepperonis. Second, the crust. We were the last store in the country to resist the move to frozen dough and still made it from the original premixed recipe. The only fat that was added was vegetable oil, no butter at all. It was then rolled through a sheeter and tossed by hand to fit the trays. A ring was also used over the pan to allow that defined crust to be made. Third, the stuffed crust. This dough is the exact same dough as the hand tossed dough, made fresh every day. The secret is to pull the outer edges thinner than the middle. That prevents the dough from puffing up to a humongous size. You stretch the dough, wrap it around the cheese and then pull and tuck like you would if you were wrapping a deli sandwich. This helps to prevent air from getting in and puffing up the crust too much. You also heavily dock the middle, uncheesed portion of the dough. Also, garlic butter was added after the pizza comes out of the oven and not before. Hope ya'll loved the insight from a guy who live it. Long live the original hut!
P.S. Not the 2010's hut, they suck! It's all frozen dough, changed dough, and smaller topping quantities. It's a shell of its former self.

Pizza Hut was still okay until about 10 years ago when they started doing the any pizza, any toppings for $10 promo. They lowered the quality of the crust and skimped on the toppings and have tasted like garbage ever since. Haven't ate there in years but I heard they now have fees for each state that says "fee due to the cost of running business in California" LOL who the fuck would pay a fee to buy from Pizza Hut?

Andrew W.K. was a big deal in the early 2000s for arena rock anthems like "Party Hard" among other tracks. He never stopped making music and released an album earlier this year. With that said, I've always liked the man's positive attitude but I have never gotten deep into his music.

I'm turning 30 this year and was introduced to him by the jackass series on late night MTV and cky videos. He's a vocalist in a rock band and back in the late 90's early 2000's rock, heavy metal alternative, emo and screamo was the music everyone was into . So I guess hes positive vibe and appearances gave him his popularity plus the fact that he indeed loves to party.

Worked at Pizza Hut as a cook. The stuffed crust isn't frozen, but they use a spiked roller after crimping the crust to seal the edges. String mozzarella was correct. The crust is stretched extra thin to prevent bubbling and to make sure the crust isn't thick around the cheese.

I worked at Pizza Hut in high school and have made my share of stuffed crust pizzas. The secret is to use a perforator around the edges. Not only does this secure your crust, but it also keeps the dough from bubbling up and opening your string cheese purse.

As someone who worked at the Hut in the early 90's, I can not speak of the secrets of the stuffed crust... that came after I worked there.
However, I can speak of the buttery golden-brown crust of the Pizza Hut Deep Dish. The ingredients responsible were not part of the crust itself, but rather, added to the empty pan in the form of pure vegetable oil. There were different sized squirt bottles for each size deep dish pan that were dispensed early in the morning. It was an acne inducing nightmare!
Once all the pans were oiled up, the appropriate amount of freshly mixed dough was placed in the center of each. A plastic lid was sealed on top, and they were all put in a warmer for a certain amount of time until the dough would expand evenly across the entirety of the pan.
After that, they were all refrigerated until needed later that same day. What oil wasn't soaked up in that process would literally deep-fry the bottom and edges of the crust after sauce and ingredients were added and it cooked in the oven.
This was a very long time ago, so this is all to the best to my recollection. It might be done differently now.
Needless to say, it was not healthy, but no one with any clue ever truly expected it to be.

For what it's worth, I worked at a Little Caeser's Pizza in the mid 90's while in high school. We did a stuffed crust while i was there (as well as the spaghetti bucket and even sandwiches!) and we used pieces of cheese in the crust that looked like little 2x4's. The crust was just rolled up over them and sealed. The crust cheese pieces aren't frozen, they were just refrigerated. That cheese also wasn't 100% mozzarella because it didn't completely melt in the crust, which is what helped keep the shape.

I worked at Pizza throughout the 90s and I was the person that produced all of their dough for the various pizzas and you guys are correct the Mozzarella sticks were frozen before they were then put around the crust and crimped in. Also they used a garlic oil spray from a can they sprayed onto the edge crust after it came out of the oven. The Pizza with the highest sugar content was the Bigfoot Pizza. The healthiest crust was the thin and crispy. The dough styles I produced were Pan Dough, Hand Tossed Dough, Neapolitan Dough, Bigfoot Dough and Thin & Crispy Dough. They also had a specific way that they used to place the toppings onto the pizza.

In elementary school we had Pizza Hut every Friday for hot lunch. Those were the best days. It set the weekend off in party mode. It's so special to me that I literally haven't had PH since I graduated in 2000. Just waiting for the right moment I guess...
lol I worked for pizza hut in Australia in my late teens and it was so much simpler to make stuff crust. 1 you stretch your dough like normal then for the crust you just slightly stretch it a little more with your thumb and rolling your wrist on the bench while spinning it in the pan/tray 2. we used the cheese sticks that pull apart in like shoe strings and just lay them in a ring around the edge just in a little bit about half an inch or so. 3 fold the dough over the cheese stick and press firmly into the dough on the inside. The way pizza hut had perfect crust edges was with "rings" they were like a plastic ring which had angled sides so we could just throw the toppings on and not need as much precision in placement and would keep the toppings exactly the same distance from the edge every type of base had its own type of ring from deep pan to stuff crust to perfecto and thin.
