Good video on pork-centric ramen guys. Can you do Jampong next ? (Korean spicy seafood ramen). TIP FOR UPGRADING YOUR SPICY RAMEN: Also, I'd like to suggest covering way for people to jazz up their ramen ... for example (for Jampong), I like to sweat a little sweet onion, followed by a sliced clove of garlic, in a little oil before adding the broth and noodles, then when it comes to a boil I'll add a few peeled chopped raw shrimp, a little shredded broccoli rabe**, let it simmer 3-4 mins until almost done, then shir in a raw egg and cook one minute more. If I overshoot the amount of heat/spice I want, I'll sometimes (this is highly non-traditional, but it works well) add a splash of evaporated milk, half & half, or even powdered cremora, to take the edge off it. If I already know the brand I'm making is not spicy enough, it's easy to add a spoon of gochujang during the initial saute. -------------------- ** This is my signature trick for spicy ramen - thinly shredded fresh Broccoli Rabe works AMAZINGLY well ... it cooks in the same time it takes to cook the noodles (3-5 mins), and the slightly tannic bitterness is a perfect balance for the spicy broth (it pairs with the MSG too). Plus, fresh greens taste sooooo much better than say crumbled nori, and they're more satisfying. If I don't have rabe handy, I'll chip 2" chunk of a block of frozen whole leaf spinach, and toss that in at the start ... not as perfect as the rabe, but still a big upgrade over just the dried herb packet.
Gotta work on that slurp game, Sean. Open your mouth more and use the intake to inhale the noodle up w/ air to enhance the flavor! Excellent video! Needta try doing something like this from Japan.
I remember eating ramen in a Japanese restaurant in Hachinohe, Japan and it included so many veggies I never seen before in the US. It was excellent! Going to my H-Mart now in Carrollton (Dallas), Texas to buy these!
How soft are the ichiran noodles? I only like the tougher noodles. I like my instant ramen al dente. Probably bad for my stomach though. Paldo and Nongshim Shin Rayyun are my favorites. Other instant noodles are too soft and gooey.
I actually agree with what the Fung brothers said. I do think Ramen is, at this point, an American staple and perhaps even a global staple food. It's something that most people have had and everyone knows...whether it's the cheap ramen or the better ones. Ramen is a big thing in America. I know I love ramen and I do pick up several when I go to the asian super markets in order to try other brands and types.
