Stepping behind the counter of our favorite pizza shop for a little hand toss 101 to see how the pro's do it. Why does my dough rip when I start spinning it in the air? It also gets really thin in the middle, but thick on the edges. Is it not elastic enough?

You have to develop the gluten when making it - kneading... resting... oil helps... also a low moisture dough... salt... The pizza dough shown here will not taste like much... and be chewy as fuck. Easy to play around with but not good eating pizza. 1:31 is how you make a rubber ball (unleavened) dough pizza (shitting all night pizza.) It's lazy.

Don’t spin to hard. The dough if want needs to be gentle. If cooled it needs a little harder. Don’t use knuckles to much when landing. Causes it to be weak. Catch with wrists

you may be stretching it wrong. When you're kneading it on the table try to keep the middle of the dough the thickest and only pull from the edges. If you pull from the middle when you toss it its going to either be extremely thin or just rip.
