I have never heard of Muslim biryani before. Indians have different variations of making Biryani. But do appreciate your very detailed video, it was very good
In Durban South Africa there are two very distinctive types of Biriyanis which we call a Pilau and is more of a South Indian one pot rice and meat dish and the other is a masala biriyani which is more a hyderabadi biriyani if I'm not mistaken when the first Muslim traders came to Durban they prepared biriyani very different to the way the South Indian version of a pilau is done. For the "Muslim biriyani" the entire process is in done in layers as Saleem is explaining in his tutorial. Locally that's how we distinguish the different types of biriyani.
Once again I am amazed at how thoroughly you instruct us in each of your videos. I particularly appreciate your tip on how to get the skin off the smaller parts of the chicken using a dish towel. Also your instructions on how to boil rice so that it stays firm is so helpful. I've always boiled rice in a pan with the lid on and had to make an educated guess on when it was done. This often results in either mushy rice or, worse, burned rice. The way you've sown me is much more accurate; it takes the guess work out of the process. Thank you, once again, for yet another wonderfully instructive video. PEACE

It wasn't until I was 22 years old that I started eating rice on a semi-regular basis. I followed the instructions on the back of the package. But now I have a whole new way to cook rice and I can't be happier. I've already made it using his method and I was delighted with the outcome. I see lots more rice dishes in my future. 😄PEACE

I am hesitant to use food coloring too. I thought maybe soaking a few grains of saffron in hot water and adding that liquid to the dish would do. But Tumeric powder would do too, I believe. And Tumeric is much less expensive here in America than saffron. Thank you for the suggestion. PEACE
Yes, I think better to use saffron as it is biryani after all and try to be authentic as possible. Other than that, great recipe. I cut my chicken the same way.
The food colour is bad for health? just saffron colour is yellow enough and rice should be layerd on top of meat not steam separatley, the rice didn’t look throughly cook.
