    I made your bolognese yesterday. I made it for my diabetic mother and I usually add sugar, a lot of salt, and processed pasta sauce like hunts, but I watched your videos and made bolognese. I put no sugar , I liquified carrots, onions and celery. She loved it and surpriced how. Sweet it was but not overbearing. Every one of your videos I learn to eat healthier and eat my favorite foods.

    This looks like the perfect dish to prep for lunches during the week as it's starting to get hotter where I am. Can't wait to give it a try! So far, you're spaghetti alio e olio, bolognese, and lemon mint linguine recipes have all worked their way into my regular rotation! I'm still having issues with clumping in the cacio e pepe, but enough practice will solve that! Thanks for all the wonderful suggestions!

    YUM! This popped up in my feed and l'm so glad for the timely reminder, l haven't made it for years and have no idea why l had forgotten about it so completely. It's summer here in Aotearoa New Zealand and, although it's still too early for tomatoes from my garden, they're nice in the shops at the moment and, l have fresh basil in pots AND bocconcini. Just a tip for others - don't skimp on quantity - it's just me so, l halved the recipe, thinking l'd have enough for lunch tomorrow but, I'm about to go back for a THIRD helping and I'm not even sorry. 😅 Also, it's probably sacrilege but, l think we used to make this with rice instead of pasta sometimes and it was just as nice. Good for anyone who can't or doesn't eat pasta, anyway. ❤

      @@vincenzosplate my mother used to make something like that she would add olives and chopped red onion with fresh parsley. Of course this was a cold salad. Same pasta you used. As kids she used to call the pasta screws. My mother was a great Sicilian cook. Her eggplant patties outstanding. Oh the memories of Mamma.

    I never knew this pasta had a name, but I've been doing it for years and this is honestly my favorite combination, garlic+cherries+basil+mozarella, yum. To be honest pecorino seems a little excessive, I love it and all, but to me it doesn't mesh in this dish very well. Also in my experience it's better when you tear mozarella with hands, no cutting needed. I don't even understand why, but it makes it a touch tastier

    I did something lazy a few weeks ago. Cooked some short pasta, mixed it with a can of tomato cubes (while still hot) and a small can of tuna in olive oil. Covered with a generous amount of chopped grana padano.

    What a great recipe for summer, I will definitely make this during the hot season. For a little bit of pep I might just add a light sprinkle of

    Since watching your video, usually I used local pasta to cook, they are yellow not pale, then I try to use good quality pasta, first brand is Liguori, and I taste different, good quality pasta feels more have body, and the taste feel more clean. Maybe I have to try another brand like Delverde or Molisana (that brand that I can find beside De Cecco). Thanks Vincenzo.

    My 14year old son made this yesterday.
    Very simple.
    He told me to ask you...
    Where are you meant to use the garlic in the method?
    He thought it was optional so we left it out.

    I've made many pasta salads before, but not with pecorino. Been using feta. Gonna have to try this next time.
    Also, I think cacio e pepe might be just as easy or even easier than this.

    Do you think peas would go well in this dish?
    You have 2 garlic cloves in the recipe description but in both the video and recipe description, you do not add them? Should they be crushed and added to the pasta salad? It looks so delicious. Thank you.

    A very nice summer dish. But the timing is strange - in Europe the temperatures fall under 0 °C and even spoiled people prefer any porridge now, main thing that it's hot! 😀
