I made your bolognese yesterday. I made it for my diabetic mother and I usually add sugar, a lot of salt, and processed pasta sauce like hunts, but I watched your videos and made bolognese. I put no sugar , I liquified carrots, onions and celery. She loved it and surpriced how. Sweet it was but not overbearing. Every one of your videos I learn to eat healthier and eat my favorite foods.

YUM! This popped up in my feed and l'm so glad for the timely reminder, l haven't made it for years and have no idea why l had forgotten about it so completely. It's summer here in Aotearoa New Zealand and, although it's still too early for tomatoes from my garden, they're nice in the shops at the moment and, l have fresh basil in pots AND bocconcini. Just a tip for others - don't skimp on quantity - it's just me so, l halved the recipe, thinking l'd have enough for lunch tomorrow but, I'm about to go back for a THIRD helping and I'm not even sorry. 😅 Also, it's probably sacrilege but, l think we used to make this with rice instead of pasta sometimes and it was just as nice. Good for anyone who can't or doesn't eat pasta, anyway. ❤

I never knew this pasta had a name, but I've been doing it for years and this is honestly my favorite combination, garlic+cherries+basil+mozarella, yum. To be honest pecorino seems a little excessive, I love it and all, but to me it doesn't mesh in this dish very well. Also in my experience it's better when you tear mozarella with hands, no cutting needed. I don't even understand why, but it makes it a touch tastier

I did something lazy a few weeks ago. Cooked some short pasta, mixed it with a can of tomato cubes (while still hot) and a small can of tuna in olive oil. Covered with a generous amount of chopped grana padano.
Also, in case no one mentioned this yet. Excellent camera skills today. Slo-mo and Vivaldi really work well together. :) (Going for a bit of tomato, mozzarella & basil right now, I cannot watch this without my daily fix!!!!)

Since watching your video, usually I used local pasta to cook, they are yellow not pale, then I try to use good quality pasta, first brand is Liguori, and I taste different, good quality pasta feels more have body, and the taste feel more clean. Maybe I have to try another brand like Delverde or Molisana (that brand that I can find beside De Cecco). Thanks Vincenzo.

I've made many pasta salads before, but not with pecorino. Been using feta. Gonna have to try this next time. Also, I think cacio e pepe might be just as easy or even easier than this.

As kids she used to call the pasta screws. My mother was a great Sicilian cook. Her eggplant patties outstanding. Oh the memories of Mamma.

I never knew this pasta had a name, but I've been doing it for years and this is honestly my favorite combination, garlic+cherries+basil+mozarella, yum. To be honest pecorino seems a little excessive, I love it and all, but to me it doesn't mesh in this dish very well. Also in my experience it's better when you tear mozarella with hands, no cutting needed. I don't even understand why, but it makes it a touch tastier

I did something lazy a few weeks ago. Cooked some short pasta, mixed it with a can of tomato cubes (while still hot) and a small can of tuna in olive oil. Covered with a generous amount of chopped grana padano.

Since watching your video, usually I used local pasta to cook, they are yellow not pale, then I try to use good quality pasta, first brand is Liguori, and I taste different, good quality pasta feels more have body, and the taste feel more clean.
