I would really like to see a video with someone making acv in a larger quantity than a small jar - just perhaps a two or three or five gallon container. Never realized this was so simple!
I've seen so many lengthy tutorials for making ACV but I must have to admit your video is very informative with reasonable time length among all tutorials on youtube

Stopping back because yours is the instructions I followed last time I made Apple Cider Vinegar. It turned out excellent. I did find I had to let it sit for an extra month, but that was ok.
Easy peasy ACV, I was surprised too when I first found a recipe for it. The vinegar that I made last year tastes great, so fingers crossed that this year it's just as good :-)

As I live in tropical North Queensland (close to the Great Barrier Reef) in Australia I will modify slightly as our temperature range is from 15 to 35 degrees (C) in the wet season. @@LizZorab bit too hot where i live but we holiday over the border to a place that is famous for growing apples and we always come back with a case. I meant that it would be too hot to have it sitting around while turning into vinegar, heat might effect the process I'm guessing
Followed your directions and it turned out beautifully. I did do one thing differently though. I didn't remove the apple scraps until it was finished and ready to bottle. Mine took almost 4 months and the apple flavour was intense.

Just scale the recipe up to the amount of water you use to cover the apple peelings and cores. I made about 13 litres of it last year and it's been great. Please let me know how you get on!

I think I will try a small batch for sure because I really don't use that much of it but the idea is very intriguing! What do you all use it for if you don't mind my asking? As far as my research has gone, I've always been under the impression that if you left (wine) completely uncovered while fermenting it would turn to vinegar. If you want wine, you need a carboy, or an airlock of some sort to keep the outside air away from the product. I have yet to make either so I am far from an expert!! hehe!!
I do a similar thing, but put chopped clean windfalls in a big thoroughly clean plastic tub in a sunny place. Keep covered and stir daily for a week to ten days. Decant the liquid and strain the pulp through a jelly bag. Pour into fermenting jars with added sugar and make first class cider. I also pressure cook the peel and cores with a little water, strain and bottle the juice to make pectin to set the next season’s soft fruit jams. I use the pressure cooker to vacuum seal the jars.
Another good one. I made apple cider vinegar last year in a gallon jar. It developed the ‘Mother’ in distinct layers instead of one single scobie which was interesting. Vinegar tasted delicious. Last year I stirred mine every day or so. Maybe that’s why the layers. You didn’t mention stirring and I don’t think I will this year. Thanks for this vid.

Liz Zorab - Byther Farm Well, when it comes to making things like this, I always worry about getting the product infected with any foreign strain of bacteria or fungus which might taint the brew. However you don't use anything specific to sterilize the apples, other than washing in clean water, so I'm hopeful it will work. Of course I'll use nice clean containers and jars. My only fear out here in Turkey is that warm dark places can end up being very warm during the summer months, but I'll look for somewhere as cool I can find, and maybe not leave it quite as long as you would for the initial fermentation process to take place. Oh, and by the way, another thing that might interest you is that many Turkish housewives are particularly hygiene conscious, and as a result they always wash all the fresh fruit and vegetables they buy from the markets and then they soak then for a few hours in a mild solution of, guess what? You guessed. Apple vinegar! Lol Otherwise grape vinegar is the cheapest vinegar out here. Then there's pomegranate, and lemon vinegar, and white vinegar to t(but we don't have malt vinegar.)

perfect timing! I just came here from Huwsnursery channel and the video that you did with him recently. I have apples to process and I have ran out of vinegar. You mentioned you made this video so I came to find it. It's an excellent easy to follow and well done video. I need to leave it paused on my computer now while I go cut up the apples. Then I can make sure I got it right.
Oh that's great news! Please let me know how you get on with making ACV. I try to keep my 'how to' videos very clear and simple, so often people can complicate instructions by telling us all the variations etc. When I'm searching for how to do something I want the basic simple instructions, so that's how I like to share the info. Three weeks are up! I just strained out the liquid into another bottle. It looks like yours did after straining and has a sweet vinegar smell. I have more apple to process now so I'll start another batch with the cores.
wow i never new it was that easy, i do always worry though about producing nasty bacteria when making things like this, i want to cure and hang my own salami and that makes me worry as well, i think im going to have to just get over my worries and get making, thanks Liz very nice video ! take care
Hi, I think that the acidity in the vinegar reduces the chances of nasty bacteria surviving. If you follow a good salami recipe exactly then it should be fine. I think the salt and other 'things' that you put in the salami cures it to prevent bacteria from having a suitable place to breed. There are some great charcuterie videos and websites around.
Brilliant vlog I have 6 buckets of acv going though I let them sit longer to get a stronger flavor. You can also use the scraps from making applejuice which I did my chickens just can't eat it all.

Why can the hens not get kitchen scraps. We feed ours everything left over or expired etc to our hens. Nice video. I heard some where not to put the seeds in but not sure why something about cyanide or something

Dear Liz, it’s so amusing ...not! that I found this video after having binge watched two long evenings worth of UA-cam videos on making apple cider vinegar! I could have saved myself SO much time and bother! Never mind, it’s been very entertaining. But before I actually found you I spent this morning up to my elbows in water making my very first batch. I had some dregs from a bottle of Briggs Raw ACV which I have been drinking for over a year ( not the same bottle!😅) so I added that to the mix hoping it might set things off better. I’ve really been missing bottling and jamming since being diagnosed with type 2 diabetes, but am chuffed to bits since discovering how fermented veggies are so good for your gut. I’m eating Keto to get my blood glucose down..hence the ACV though I know it’s good for many other reasons. I’m going to try sauerkraut next, though I am only just beginning to learn to like the taste! 😉 Love your straightforward common sense approach so have subscribed and look forward to catching up on all your posts. How lovely you are on the Welsh border, as an exiled Liverpudlian I love Wales, but am now in Norfolk.. probably the most diametrically opposite place in England from Wales! I use ACV every day for my dogs.. it got rid of bladder stones in one of my rescue dogs and now they all have it daily in their food as a preventative. I love organic apple cider vinegar! I’m addicted to raspberry vinaigrette using the organic ACV. I’ve never made it before but I will now! 3 gallons will probably last us a year but maybe I should make more just to be on the safe side. All those live cultures are so good for our bodies. Is it ok if some of the seeds are showing in the core when doing this.?. I used a apple corer and sometimes it’s just not as precise as cutting so my cores have a bit of seeds showing… will the seeds rot and ruin it or will it be ok.?.
Ok thank you 😊 sorry I do have another question for you… I had a large jar and a smaller jar, the larger jar had cores and some peels and the smaller jar had just peels, after checking them today the smaller jar had mold formed on the top of the apple peels that were at the top but the larger jar had none, also the smaller jar is like pink in colour and the larger jar is like a yellow cloudy colour. Wondering what went wrong with the smaller jar and I’m assuming since mold formed the smaller jar is no good….. so ya just wondering so I don’t make the same mistake again in the future…

every year I go to an old abandoned estate with a walled garden.We fill bag fulls of apples. The trees are very old and there are so many different rare varieties. Some apples taste of lemons, others strawberries and some are slightly spicy. I wonder if the apple cider vinegar would have a different taste for each variety, I'll Report back. Some Of those apples are proper keepers and I have them into the following year.
I've no idea. I don't drink. I suppose maybe heating it might lose some flavour. It would resemble a mulled wine as they have a cinnamon, nutmeg flavour
Can you just add water to the apple scraps? We're trying to move our family away from white sugar, and sugars in general. we sweeten everything here with maple syrup we make or honey from other local farms we know and can trust.
Hi Liz, I tried this with the peelings and cores from canning apples. It didn't work. I was so disappointed. I'll have to pay attention to see what you do and maybe figure out what I did wrong. No apples for us this year besides just a few windfalls. Tim pruned out trees up this Spring and they look much better, but didn't make much in the way of fruit. HOpefully it will be better next year.
Hi Renee, hopefully you'll have a bumper crop of fruit next year. I've just done a summer prune of the apples and pears with the hope of promoting lots more fruit next year. Are you on FB?
I use it for salad dressings and in cooking, as a hair rinse (instead of conditioner). If not in UK, it can be used in poultry water. It's also used as a tonic. A quick search online should give you plenty more ideas for uses of ACV. 😀
@@LizZorab I use it with baking soda for a cleaner and add a bit to my laundry rinse water. Rose petal or mint vinegars are great for a hair rinse, but you do have to add a bit of sugar every couple of days since they don't have sugars of their own.
You must have rather more cooperative wild yeasts over there in Monmouthshire Liz because my attempts at making ACV in the Derbyshire Peak District NEVER work :( . I do however buy it from our local farm suppliers because my hens seem to enjoy it greatly in their drinking water. And it definitely DOES keep algae and whatnot from mucking up their water containers too!
Where are the apples coming from for your failing ACV? I wonder whether that makes a difference. I use apples from our food forest and from next door's garden. Perhaps we live in a yeasty area!

Hi Eveline, it is not recommended that we use homemade ACV for preserving and although I know lots of folks do, I prefer to follow those guidelines because I don't know how to test the acidity of the ACV. Sorry I can't be of more help.

perfect timing! I just came here from Huwsnursery channel and the video that you did with him recently. I have apples to process and I have ran out of vinegar. You mentioned you made this video so I came to find it.
It's an excellent easy to follow and well done video. I need to leave it paused on my computer now while I go cut up the apples. Then I can make sure I got it right.
Oh that's great news! Please let me know how you get on with making ACV. I try to keep my 'how to' videos very clear and simple, so often people can complicate instructions by telling us all the variations etc. When I'm searching for how to do something I want the basic simple instructions, so that's how I like to share the info. Glad that you liked the video :-)
Three weeks are up! I just strained out the liquid into another bottle. It looks like yours did after straining and has a sweet vinegar smell.
I have more apple to process now so I'll start another batch with the cores.

wow i never new it was that easy, i do always worry though about producing nasty bacteria when making things like this, i want to cure and hang my own salami and that makes me worry as well, i think im going to have to just get over my worries and get making, thanks Liz very nice video ! take care
Hi, I think that the acidity in the vinegar reduces the chances of nasty bacteria surviving. If you follow a good salami recipe exactly then it should be fine. I think the salt and other 'things' that you put in the salami cures it to prevent bacteria from having a suitable place to breed. There are some great charcuterie videos and websites around.

Brilliant vlog I have 6 buckets of acv going though I let them sit longer to get a stronger flavor. You can also use the scraps from making applejuice which I did my chickens just can't eat it all.
Do you let it sit with the apples bit in it for longer to get extra flavor?
Yes I do , it looks like applejuice from the color then and has a higher acid too

I give the chickens ACV in their water about once a month, so we've got through quite a lot this year and I'm really pleased that I had made so much.

Just started a 5 litre tub today. I was gifted 24lbs of Bradley apples and the cores and peels are being used. It's my first time so 🤞
If you have something you can weigh down the apple with (a plate for example) that would help keep them below the water. :-)

Why can the hens not get kitchen scraps. We feed ours everything left over or expired etc to our hens. Nice video. I heard some where not to put the seeds in but not sure why something about cyanide or something
In the UK it is against the law to give kitchen scraps to livestock, including animals kept as pets. www.gov.uk/government/news/apha-warns-not-to-feed-kitchen-scraps-to-farm-animals-because-of-disease-risk

I'm very interested in making Apple cider vinegar however is it alright for diabetics and is there anything we can do to make it alright for diabetics
Dear Liz, it’s so amusing ...not! that I found this video after having binge watched two long evenings worth of UA-cam videos on making apple cider vinegar! I could have saved myself SO much time and bother! Never mind, it’s been very entertaining. But before I actually found you I spent this morning up to my elbows in water making my very first batch. I had some dregs from a bottle of Briggs Raw ACV which I have been drinking for over a year ( not the same bottle!😅) so I added that to the mix hoping it might set things off better. I’ve really been missing bottling and jamming since being diagnosed with type 2 diabetes, but am chuffed to bits since discovering how fermented veggies are so good for your gut. I’m eating Keto to get my blood glucose down..hence the ACV though I know it’s good for many other reasons. I’m going to try sauerkraut next, though I am only just beginning to learn to like the taste! 😉 Love your straightforward common sense approach so have subscribed and look forward to catching up on all your posts. How lovely you are on the Welsh border, as an exiled Liverpudlian I love Wales, but am now in Norfolk.. probably the most diametrically opposite place in England from Wales! Thanks again for a great podcast.

Do the apples have to be ripe? I have 21 apple trees in Oregon in the USA and my apples are coming in now. It’s not a big deal to wait but I want to get some vinegars going with them

I use ACV every day for my dogs.. it got rid of bladder stones in one of my rescue dogs and now they all have it daily in their food as a preventative. Excited to make my own instead of paying a small fortune for shop one.

I love organic apple cider vinegar! I’m addicted to raspberry vinaigrette using the organic ACV. I’ve never made it before but I will now! 3 gallons will probably last us a year but maybe I should make more just to be on the safe side. All those live cultures are so good for our bodies. Can you make vinegar out of pears? Thanks for all your tips and advice!

I think you should dispose of it. Perhaps the cover wasn't held on tightly enough so that flies could get into the container.
Can a stainless steel container be used for the fermentation?
I don't see why not, but it's worth checking on the internet.
Is it ok if some of the seeds are showing in the core when doing this.?. I used a apple corer and sometimes it’s just not as precise as cutting so my cores have a bit of seeds showing… will the seeds rot and ruin it or will it be ok.?.

Ok thank you 😊 sorry I do have another question for you… I had a large jar and a smaller jar, the larger jar had cores and some peels and the smaller jar had just peels, after checking them today the smaller jar had mold formed on the top of the apple peels that were at the top but the larger jar had none, also the smaller jar is like pink in colour and the larger jar is like a yellow cloudy colour. Wondering what went wrong with the smaller jar and I’m assuming since mold formed the smaller jar is no good….. so ya just wondering so I don’t make the same mistake again in the future…

every year I go to an old abandoned estate with a walled garden.We fill bag fulls of apples. The trees are very old and there are so many different rare varieties. Some apples taste of lemons, others strawberries and some are slightly spicy. I wonder if the apple cider vinegar would have a different taste for each variety, I'll Report back. Some Of those apples are proper keepers and I have them into the following year.

I've no idea. I don't drink. I suppose maybe heating it might lose some flavour. It would resemble a mulled wine as they have a cinnamon, nutmeg flavour

Can you just add water to the apple scraps? We're trying to move our family away from white sugar, and sugars in general. we sweeten everything here with maple syrup we make or honey from other local farms we know and can trust.

Hi Liz, I tried this with the peelings and cores from canning apples. It didn't work. I was so disappointed. I'll have to pay attention to see what you do and maybe figure out what I did wrong. No apples for us this year besides just a few windfalls. Tim pruned out trees up this Spring and they look much better, but didn't make much in the way of fruit. HOpefully it will be better next year.
Hi Renee, hopefully you'll have a bumper crop of fruit next year. I've just done a summer prune of the apples and pears with the hope of promoting lots more fruit next year. Are you on FB?
What are your favourite preserving recipes that use ACV please Liz?
Hi Alice, I don't use ACV for preserving as I can't be sure that the acidity levels are high enough to make the food safe.
WHAT USE DO YOU HAVE FOR THE VINEGAR .... SORRY I JUST NEVER USED IT BEFORE
I use it for salad dressings and in cooking, as a hair rinse (instead of conditioner). If not in UK, it can be used in poultry water. It's also used as a tonic. A quick search online should give you plenty more ideas for uses of ACV. 😀
@@LizZorab I use it with baking soda for a cleaner and add a bit to my laundry rinse water. Rose petal or mint vinegars are great for a hair rinse, but you do have to add a bit of sugar every couple of days since they don't have sugars of their own.
You must have rather more cooperative wild yeasts over there in Monmouthshire Liz because my attempts at making ACV in the Derbyshire Peak District NEVER work :( . I do however buy it from our local farm suppliers because my hens seem to enjoy it greatly in their drinking water. And it definitely DOES keep algae and whatnot from mucking up their water containers too!
Where are the apples coming from for your failing ACV? I wonder whether that makes a difference. I use apples from our food forest and from next door's garden. Perhaps we live in a yeasty area!

I don't know how much it would affect the fermentation, but it sounds like it just isn't ready yet.
Hi Liz, i have load of windfall apples from a neighbour and wild trees. I use a lot of apple cider vinegar for my pickling as tesco acvhas a acidity of 5%. How can you check what the acidity is of your home made one? Eveline
Hi Eveline, it is not recommended that we use homemade ACV for preserving and although I know lots of folks do, I prefer to follow those guidelines because I don't know how to test the acidity of the ACV. Sorry I can't be of more help.
Liz Zorab - Byther Farm Hi Liz, I had a look online, but you are right it needs special equipment to determine the %, so it is safer to buy Tesco’s ACV. Eveline
