Distilled vinegar is, literally, vinegar that's been through a still. Quite legal to do here because it's not distilling alcohol. If you start with a strong wine (more than 12%) and leave your mother in for several months without feeding it, you should get a 10% vinegar. Hugh
Got my apples stewing in their sugar water as I type. Resisting the urge to seive it too early. Sooo tempting but i want to leave it till 6 wks to make sure i get the right ph level.

English Country Life I'm pretty cool with beneficial bugs ... we've just purchased 130acre property a bit south of you (quite a bit actually, southwest Western Australia!) and are boning up on the lost arts in anticipation of a good life! I'm recalling everything my grandmothers taught me, augmenting with new insights provided by legends such as yourself. Thanks for all your hard work documenting your hard work!

When you share this with me the other day I forgot to watch it! It's a great video though. I made big batch of apple vinegar last year from the peels and cores from the dried apples I make. I haven't used it in a while so I'm wondering if there is a mother on it or not now! Need to go check!
I'm re watching this as I'd like to have a stab at turning a small portion of my rose petal wine into vinegar. Flies are something we have in abundance here in the Australian countryside, so I'm reticent to leave an open jar anywhere near an open window ... but we DO have a commercially available bottle of 'cider vinegar with the mother' handy, do you think we could introduce a bit of this into the wine and kick start it?
If its unpasteurised it should work! It may take a couple of months to get going so be patient. It would be my pleasure to send you some of my mother but I fear it would break Australia import laws?

And yes, the ACV is unpasteurised, just gave the bottle a good shake before I captured a few tablespoons to my small amount of wine. (Waste not, want not)
Soooo....I HAVE A MOTHER!!! Well, yes, of course, you may say. Allow me to explain...I really fancied having a bash at making vinegar. Getting hold of mother of vinegar, unless you know someone who makes vinegar, is a pig! Now, I just didn't fancy starting the job with a dead fruit fly. So I managed to find an unpasteurised, organic cider vinegar "with mother". I mixed a good splosh with a bottle of cider, and left well alone for about 2 months. Tonight I remembered it needs to be "fed". And lo & behold! There, gossimar thin, like a delicate slick, on the top of the now rather vinegary smelling cider, was mother! Needless to say, the minute I moved the jar, it sank. I fished it out, and it really IS rubbery, and added more cider to the jar. Now...mother didn't want to float, and I'd no corks handy. But...thread it, or wind it onto a wooden toothpick....Robert is the sibling of one of your parents! Chuffed to little mint balls I am 😊😊😊

A waste of good cider? I prefer Somerset cider to most Devon ones - the only one I really liked was Inches -:not the crap that goes under the same name nowadays! But there was a farm near Sidford which used to do a decent drop as well.

Mmmm... interesting! I always make my apple cider vinegar with a jar full of chopped organic apples, ,sugar and filtered water.
I've tried that way too, but the results weren't consistent for me when I measured the acidity,.

Sugar water? I'm assuming that you are using a different method to mine?
Looks like a similar process to kombucha with a scobi. Will give this a go but need to source some good apple cider first!

Tip:
Sainsburys sells raw unpasteurised apple cider vinegar with mother in it(not as impressive at this one but in form of sediment on the bottom).
There's plenty around but it can be expensive - yet its easy to make!

Some home brew stores sell mother of vinegar, if you don't want to try and grow your own. Try a local interweb search

All natural vinegar comes from alcohol, but the alcohol is consumed by the bacteria
