Hi! I am comparing my WSET level 1 book to what is said in your video. About 8:45 into the video, the salt and how it affects wine is complete opposite of what my book states. In my book, salty foods make wine seem less drying, bitter, and acidic and more sweet and fruity. Can you please clarify this? Thanks!
Thank you for your comment. Great observation from your side. My apologies for this wrong information. Yes, salt affects wines in a positive way. It increases fruitiness, and makes wines less bitter. Umami and sweetness (challenging flavours in food ) make wines more bitter, acidic, drying and lighter body. Opposite are food flavours salt and acid that make wine less acidic and less bitter, more fruity. Please let me know if you have any other questions. Stay Thirsty and Wise
