Hello lovelies! I'm writing because I've noticed lots of comments here in the past month. Here are some tips to ensure that your doubles-making process goes well. 1) Use All-Purpose flour for the bara. Country Pride works well. 2) If you like yellow bara, omit the baking soda and use yeast alone with turmeric. DON'T use baking powder (it makes the dough heavier-unless you like it that way). 3) If it's very hot, then the dough will rise quickly. You can also knead it overnight and leave it in the fridge and fry the next day. Ensure that it comes back to room temperature. 4) NO canned channa! You won't get the doubles taste that you want. 5) If you don't have a pressure cooker or InstantPot, boil on the stove for about 2 hours until soft. For me, a pressure cooker gives the best texture! I put my soaked channa in the InstantPot for 15-20 minutes and the end result is creamy and nice. Happy cooking! I love seeing all your photos on social media! I am an African American married to a Trinidadian almost 20 years. I’ve been to T and T many times over the years and had doubles all around the airport, Debe, Williamsville, Marabella, Princestown and Chaguanas to name a few. Unable to go to T and T due to Covid 19 we started making our own six months ago yet today we made this Recipe after trying your other two recipes...Ultimate I and Ultimate II. This one was the best...the key was 100% baking soda and I used oil that had been used once so they were golden brown rather than yellow. If I closed my eyes when eating them you would have thought I was standing in the HiLo parking lot in Marabella!

I told my son earlier that I've been watching several people making doubles and they're all similar with the exception of you making the coconut 🥥 chutney with is different. It's a lot of work from what I've seen, but, I'm going to try to make it one day when I don't have any doctors appointments.

I used to live in the area. I moved far away but I used to buy doubles from Singh's Roti Shop on Liberty near the Van Wyck. It was a small shop at the time. I know they moved and expanded to a bigger place. An old friend who was from Trinidad turned me on to doubles and said Singh's was the best in the area. I miss them so much so I need to make my own now. Thanks for sharing.

Hello I have used your doubles and it has always being a success!!! Yesterday I made them again but the doubles came out red 😀 I could not understand why, but just wanted to share that the dough was yellow, but changed to red. The baking soda reacted with the tumeric 😀😀😀 but it was delicious!!! Thank you for your hard work!!

So I've watched a few of these videos and some people use baking powder instead of baking soda and some use neither. Some omit the tumeric while others adds it. For the channa, I saw some use curry while other omit the curry and use both Geera and amchar massala and I saw you omitted the curry and amchar massala. I'll try this recipe next time. I like the colour and consistency of your channa and also the bara.

I came across your UA-cam through tiktok! And I am here to stay! I can't wait to try this recipe during the week! I use the hibiscus doubles and roti flour when making my doubles and the dough comes out So soft!! My favorite doubles man was Glen and he was located on a little slot of land on the next street of the aranguez Savannah under the infamous big tree in the area. He passed however and since then it's been hard to find a new favorite. But I've had great doubles none the less!

Yesterday I made them again but the doubles came out red 😀
I could not understand why, but just wanted to share that the dough was yellow, but changed to red. The baking soda reacted with the tumeric 😀😀😀 but it was delicious!!!

My love for doubles is strong on my dad side my uncle is from Trinidad I use to eat doubles all the time as a little gyal glad to have this blood running through my veins my favorite doubles spot is a roti shop in Orlando they make roti and doubles also in the Virgin Islands where I was born we had lots of doubles vendors as well

And thankyou keep them delicious recipes coming for many, many more years to come! My young grandaughter and I would watch your recipes together late at night when we got hungry for Trini foods and drool over it. Your videos as well as a few others, got her interested in making videos, and now she just started a channel on YT about having outdoor fun etc at the parks especially The Disney Parks. So I've watched a few of these videos and some people use baking powder instead of baking soda and some use neither. Some omit the tumeric while others adds it. For the channa, I saw some use curry while other omit the curry and use both Geera and amchar massala and I saw you omitted the curry and amchar massala. I'll try this recipe next time. I like the colour and consistency of your channa and also the bara.

I came across your UA-cam through tiktok! And I am here to stay! I can't wait to try this recipe during the week! I use the hibiscus doubles and roti flour when making my doubles and the dough comes out So soft!!
My favorite doubles man was Glen and he was located on a little slot of land on the next street of the aranguez Savannah under the infamous big tree in the area. He passed however and since then it's been hard to find a new favorite. But I've had great doubles none the less!

Now about the doubles, I'm good making the channa and the other condiments, however the bara has me very intimidated! It just looks like a big problem to me, so me gonna make my Jamaican fried dumplings to eat my channa yaa!! 🤣🤣🤣
