Sometimes watching these videos on Jamaican cooking makes me realize, very few truly know how to make authentic Jamaican food. Another peev, toss the browning sauce. Burn your sugar and brown the meat.

that filling looked nomnomnom. I knew the filling wasn't suppposed to taste like curry! and yes, some of the commercial frozen patties have the texture of compacted semi moistened bread crumbs with a hint of beef flavor - not even a brown color!

Sup! My immersion blender recently broke and I didn't replace it and I like to mix up techniques...I have a few other patty recipe videos and all of them add a bit of extra value by not repeating techniques or ingredients. Not blending also works too👌🏾

I have a question does it make sense that a Jamaican street food needs so much freezing and refrigeration I'm a little confused by that part because I know this is generally a pretty warm climate and maybe freezers and refrigeration aren't that easy to maintain on the street food level
When Jamaican patties are sold as street food, they're usually baked at a bakery and then transported to the street vendors, where they're kept warm in portable warmers. That's an extremely small part of the market though, most patties sold today are made at a centralized facility, frozen, then transported to individual bakeries where they are baked as needed.
Tastee in Toronto was the best and would sell it frozen raw so you could bake fresh from home. Like with everything these days, the quality is now garbage and the only way is making it yourself. Thanks for the recipe!
Tvp soy protein is a lot of filler for most patties- that’s why they can be so cheap- this patty is a wayyyy better product than you’d find in a patty shop because you’re not doing it to make a profit

My son made me queue for 2 hours outside HMV in London to see the original grumpy cat. It was ugly too….Aside from this I ain’t never had a pattie with bacon in it. I’m in the U.K. but bacon is not for patties here…it’s for sandwiches or fry up breakfasts. I will have to pass on the annoto, as I’m never gonna find it over here in Blighty. From what I'm seeing annato is called rou cou (roo coo) in Trinidad and Tobago. Gives food a great coral ish colour.

Both are great but this one is a lot richer. Its a special occasion kinda thing
I find that substituting the bread and water for geletin gives a good texture as well.

I'm in Texas and couldn't find suet. Look for grass fed, grass finished beef tallow.
