- This Hungarian Mushroom Soup recipe is inspired by a dish I enjoyed at Old Wives Tale in Portland, way back in 2008. Print the recipe! cookingsessions.com/hungarian...
I've put my own spin on it, of course, complete with garlic-shallot puree and a gremolata topping. I think this is way better than most cream of mushroom soup recipes, and I hope you'll agree!
Hungarian Mushroom Soup
1 1/2 pounds button mushrooms, sliced
2 tablespoons butter
2 cups diced white onion
1 teaspoon garlic-shallot puree or 1 minced cloves garlic
1 teaspoon kosher salt
2-3 teaspoons dried dill or 3 teaspoons fresh dill
1 tablespoon of Hungarian Paprika
2 teaspoons fresh lemon juice
3 tablespoons all purpose flour.
2 cups chicken broth, mushroom stock or vegetable broth
1 cup heavy cream or milk
1/2 cup sour cream
Fresh cracked pepper to taste
Garnish:
Zest of 1 lemon
Small bunch of Italian parsley.
Heat a large stock pot over medium heat. Add 2 tablespoons butter. Melt down. Stir in 2 cups diced white onion. Cook down for about 5 minutes. After a few minutes, add 1 teaspoon garlic-shallot puree or 1 minced cloves garlic. Stir well.
After 5 minutes, add the sliced mushrooms. Next, add 1 teaspoon kosher salt followed by 2-3 teaspoons dried dill or 3 teaspoons fresh dill. Next, add 1 tablespoon of Hungarian Paprika. Cook down 10-15 minutes. Add 2 teaspoons fresh lemon juice and 3 tablespoons all purpose flour. Cook down and stir for about 5 minutes.
Finally, add 2 cups chicken broth, mushroom stock or vegetable broth.
Stir, reduce heat to medium/low. Cover and cook for about 10 more minutes.
Next, stir in 1 cup heavy cream or milk. Finally, stir in 1/2 cup sour cream and add fresh cracked pepper and more salt if needed.
Serve with garnish of lemon zest and chopped parsley. Enjoy!

That mushroom chopping speed is what made his wife fall in love with him
we all saw the sexual tension
What a nice man.Such a pleasant personality.God bless him.
Don’t look at naked girls , ok
This was absolutely superb! I have never had a mushroom soup this good and my wife agrees. Definitely will be a regular inexpensive delicious meal.
Glad you enjoyed it!
I’m Hungarian, and this looks pretty accurate. Especially important is to NEVER brown the onions. Low and slow until they are glassy and sweet. For the paprika, please please PLEASE use authentic imported Hungarian paprika. I’d stick with sweet (édes) paprika, my favorite is from Kalocsa, but Szegedi will do too. Just not that sawdust you get from the grocery store, it has no flavor. I don’t add garlic to this, especially not that amount - it throws the flavor off. Sour cream - YESSSSSSS!!!! Sour cream and good paprika - two staples in a Hungarian kitchen. Nice job.
Just a note - I’m thinking of starting a Hungarian cooking channel myself. I’m an old fashioned Hungarian cook, almost never measure anything, even baking. I just made a video of how to make gulyás leves (Gulyás Soup) for a Christmas present. Maybe I’ll start with that one, if there’s interest.
Go for it
Szeretet Magyarország!
Go for it good luck 👍🏻
Does it really make a lot of difference in the taste if I used Spanish paprika?? I live in a country that does not import Hungarian stuff. And what's the difference between Hungarian paprika and the others??
princess melody if you absolutely can’t get Hungarian paprika then go with the Spanish one but make sure it’s NOT smoked.
I have a Bulgarian friend and he taught me, instead of drying the dill ( it looses a lot of its flavour ), take the fresh dill, rains it , cut it really small and then mix it with a tablespoon of salt in a plastic bag and after keep it in the frizzer . The aroma becomes even more enhanced!
One of my favorite recipes, I made it so many times with just regular paprika once then some smoked paprika I have to say it's delicious, and I crave it all the time, specially knowing mushroom has a lot of vit D which a lot of people including me are deficient in.
Made this soup for my family, they practically licked the bowls clean! Sooo yummy!
Thanks for the comment! We love this recipe too!
As a Hungarian man who loves cooking I must make a couple of friendly remarks: 1. there are as many choices for fat to use in sauteing as households in Hungary, but I believe most people use some sort of oil or lard instead of butter to saute onions 2. garlic is indeed a must-do in pretty much everything, but we never use shallots 3. kosher salt is kind of a fancy thing in Hungary 4. I know it's such a waste, in home cooking we always use water instead of stocks 5. dill ususally goes in pickled stuff and squash pottage (and a few other recipes), but only true gourmands would pair it with mushrooms while lemon juice/zest is exclusive to desserts here 5. very cute of you to prevent "insult injury" by adding sour cream, we always say sour cream upgrades anything it's added to. :-)
Thanks for your feedback!!
hát minden alkalommal, amikor a zöldbablevest készítem, mindig teszek Kaprot, mint édes anyám. Illetve, amikor a gombakrémemet készítettem, hozzá kellett tenni a zöldbabot, mert a barátom nem evett sima gombalevest. Tejfölt és tejszínt is mindig teszek a leveseimbe. Mindig van húslevesem egy sült csirkéből.
Made this tonight and I must say this is the best mushroom soup so far. Had it with fresh olive ciabatta on the side. You got a new sub!
Glad you enjoyed it! Thank you for commenting.
At 1.00 I love how the butter lands perfectly on a corner like an ice skater, then does a little twirl :)
I noticed that too!
So glad you said something! Thought it was amazing
Thats neat, you recognized it too. Well i commented, before looking/reading your comment. Light and love.
Hipston Gnosis I loved your comment it’s exactly what I felt 👍👍👍😊😊😊
@@sherouet I do that on purpose! JK
Can I make a suggestion? Break the stalk out of the mushroom. Place dome side up and chop. To increase the flavor of the mushrooms, Double the quantity, and place half in a non-stick pan and reduce by 75% volume. Do not add anything, gently cook off the moisture that forms. Add to the soup in the late liquid stage. Nice videos, many thanks, and greetings from Africa.
Yep. That's how I do it too.
You didn't explain what happened to the stalk?
@@pauldaciuk3320 trash...stalks are more fibrous...
How does that increase the flavor of the mushrooms? Curious girl .
I'm in love with mushrooms, so I have to try this recipe
Hope you enjoy!
I love your approach to showing how a dish is made. I've watched many a cooking video where they don't mention how much of something is added to the dish.
You got a subscription from me!
I was first introduced to this soup by my inlaws, then found it @ Old Wives Tales in Portland. Thank you for putting this out there, this soup is to die for.
Thanks for your nice comment! Hope you enjoy the recipe.
I MADE THIS AND IT WAS AWESOME! regular paprika works too, and i added celery. thank you for the awesome recipe!
There is snow on the ground, and it is just the right time for your creamy Hungarian soup!
I've made this many times and will make it again tonight. I always refer back to this recipe to remember my order of operations. Cheers!
Cheers!
I love this video. Your casual, easy going delivery takes the trepidation out of trying something new. You make cooking accessible. Thank for that. I can't wait to try the recipe.
Thanks! That means so much. Unfortunately now cooking videos are all about quick takes, no instructions or real recipes, and no results. It's all about the visuals and $$$ for "influencers" these days.
This soup looks delicious! I can’t wait to make it, thanks for making this video 😊
Love your humour, so fun to watch !
If for nothing else I'm grateful for the little trick about how to cut mushrooms you share at the beginning. So simple and obvious once you showed it. As a lover of mushrooms. Will try this recipe when I get the chance.
Just made this. In love with this recipe. Thanks a lot! 🙏👏❤
That looks delicious! Can’t wait to make it!
The only time that I had mushroom soup was at a Hungarian restaurant! It was absolutely delicious!
Simple and looks delicious. Great for the cold weather.
I had to watch this as I was a fan of Old Wives Tales in Portland way back (1990s) as well. Their soups were the best and I appreciate your sharing this one!
Glad you enjoyed it!
This soup is amazing
Everybody loves the full flavour yum
It’s a wild mushroom season here in southern Poland. … Farmer’s markets are overflowing with incredibly, beautiful crops of mushrooms. … Tomorrow I am going to get some and will make this soup with those mushrooms! I never tried dill and mushrooms together… My thing is thyme with mushrooms ( I have some fresh in the garden) and some Japanese tamari soy sauce, if I have it ( pricey and hard to find it here!). When the wild mushroom season is over, I ‘ll be using regular white mushrooms with a little addition of dried (wild) mushroom powder.
Your soup looks amazingly delicious. Thank you for the inspiration.💖💥🕊🙏😊
The second most impressive thing in your video is how the butter landed when you dropped it in. The first is the soup itself !! Very tasty !!
Glad you enjoyed it
Absolutely delicious! Thanks for the recipe!
Made this tonight! I blended three quarters of the soup and it was so nice to have a creamy soup with a few bits of chunky mushrooms! So easy and delicious!
Glad you enjoyed it!
Your wonderful brother.. i can smell this through my screen! Gonna pick up the mushrooms, stock, and cream tomorrow to do this! Its gonna be Finom'
Love your sense of humor.. and the recipe 😁😉
Thank you for telling us the recipe as you went along. Looks sooo good and easy! 👍👍😊
My pleasure 😊
This looks like such amazing soup, I'm planning on making it soon! I'm making my own beef stock to start with. Going to get some dried porcinis to add to it. I'm having a super craving for mushrooms!
Italian parsley in a Hungarian dish 😄 Actually flat leaf Italian parsley is much wider used in Hungarian cuisine than curly parsley. So it is quite right😉 And adding sour cream is a major plus 👍
It came out great! Thanks for the inspiration. By the way great mushroom cutting tip!
Looks so delicious. Can't wait to try it.
Great recipe. Your humour is a cherry on the cake, the presentation was very entertaining. Thank u Chef :)
Lots of love from India ..!
Best mushroom soup ive ever had in my life and I had many of them.. highly recommend. Thanks for sharing this recipe 🙂
My pleasure 😊
made this soup today...i loved thank you
Thank you! It is the first time I make mushroom soup and it was easy to prepare and turned up delicious! Mine ended a bit on the reddish side because I used double the paprika and did not have dill but it was really good anyway.
Gonna try it, I love mushrooms. Thanks so much.
This is by far, the BEST soup recipe I've ever made. Absolutely perfect. Thanks so much, Chef. Should get 6 stars.
Glad to hear this Howard. I really appreciate your comment. Cheers!
Great recipie! The additional tips by subscribers 🙌, priceless!
Glad you liked it!
Каждый ролик на вес золота!!!)))
I love mushrooms, but I have been cutting them wrong my whole life. As the saying goes, you can learn something everyday. I will absolutely be making this mushroom soup. It looks so yummy.
I just snap off the stems (they can be wody) and slice the caps. Don't need extra cuts
cute puppy
I did it now and all my family love it . Thank you a lot🤗
Looks awesome! Cant wait to try
This is definitely one of my favorite recipes ever. It's one of my fave keepers. I'm cooking this tonight. This time, I'm using coconut milk instead.
Domzdream how was it with coconut milk?
I really love to cook oyster mushrooms in various ways that makes my products marketable
That looks delicious!!

I made this yesterday and it was so good! The sour cream really pulls the flavors together
Thank you!
nice white girls, ?
Looks amazing, Chef! Definitely going to make this!!! Just me, of course, but I think when I make your soup, I'm going to make up some freshly baked sourdough rye rolls to go with it.
That looks amzing. I like every ingredient in there, so Im tryin it!

Ha ha thank you!
Szuper! Love from Romania! & Hungary! :)
Loved how the butter landed
And danced a bit x)
Made this soup and it was absolutely delicious. As am on diet didn't put any butter and just one cup of milk instead of the double cream but really great result. Very tasty. Thank you
This soup is delicious! It has become my go-to favorite soup recipe, by far, and I make a lot of homemade soups. Thanks for such a great recipe.
You are so welcome!
Love your knife skills!
Thank you! Cheers!
I tried this recipe today and the soup turned out amazing!
The only thing I did differently is that I put mixed herbs instead of dry dill, because I didn't have any.
Will definitely make this soup again!
Thank you for the amazing recipe!
Thank you for commenting! Glad you tried and enjoyed the recipe. Cheers!
This looks heavenly 🤤
Nicely done!
No weird music...no stupid metric measurements...no silly jokes..no high-pitched voice...
Just straightforward cooking...
Just like St Jacques Pepin...
Thank you!
I love mushrooms, I will have to try this recipe.
Yes you do! Hope you enjoy. Thanks for commenting.
looks delicious
It is! Thank you.
Made it ice and it was superb! Will be making it a lot more. Thank you!
Absolutely fabulous!!!!
Why thank you!
Watching this sure makes me hungary.
HoodSensei
No pun intended, ha?! :D
Good one!!!
is it really technically a pun though?
Absolutely😋 I'm hungarian😉😎
I love mushrooms and Hungarian food. Idk if anyone has tried pickle soup but that is also delicious.
I make pickle soup😊
My whole family loves it.
I love pickle soup, too. Sometimes I start with a pork or beef stew base (with Hungarian paprika, of course...) and I finish it as a pickle soup with some soured cream. It's so refreshing.
For combining sour and creamy, two of my favorites are tők főzelék and korhely leves.
Made this tonight and it's delicious! 👍🙌
Thanks for the mushroom chopping technique. It's so simple and easy. It came out great. Thanks for the recipe.
My pleasure 😊
Some wild rice cooked and added to this would be wonderful!
Friendly face, smile, great content and nice presentation. Say no more, subbed!
Good job. That appears to be a wonderful mushroom soup and not terribly Difficult to manage. Synced.
OMG! I'm from Portland, Oregon, and I Love, Love, Loved this soup!!! I cannot wait to make this soup!
Hope you enjoy! Thanks for commenting.
i really really really liked this image
If you added wild mushrooms, and even mushroom stock, you would get an even greater depth of flavour. A smokey Hungarian paprika also would give another dimension to the soup.
Great tips! Thank you for sharing!
Vienne Haake, Exactly. That was my thinking.
David Mitchell I find myself using smoked paprika in more and more things. What kinds of recipes do you use it in?
I like the way you demonstrate! Thanks!
Glad you like the video. Thanks for commenting!
Just made this soup. WOW! so simple yet so delicious. Thank you for the recipe
Glad you made it and enjoyed it. Thank you for commenting!
Yum! I use coconut oil to saute the onions and plain almond milk to make it "creamy" - yum!
Great knife skills!
Thank you Mildred. I asked about subbing almond milk for the dairy.
This video made me laugh, the random edit of the dog staring at the camera then looking away and when you were concerned that you were low on pepper.
I will attempt this recipe, looks lovely
Looks delicious !!! I love mushrooms !!! I just subscribed to your channel. I like your recipes.
Love this recipe! Thanks for sharing, Jason!
Glad you love the recipe. Thank you for commenting!
I doubled the recipe so that I could share and freeze some. I used mushroom broth and a few shiitake mushrooms rehydrated which give and Umami depth of flavor. I also used homemade plant milk which I can make as thick as cream and it was truly delicious! It could also be frozen because there was no milk or cream to break. So all around good stuff! I'm thinking of making this for Thanksgiving this year.
Elizabeth Shaw hey beautiful could u make a video on the description that you just made please :) and do share it with me.
Elizabeth Shaw Thanks, I was wonder how well it freezes.
why freeze? i would eat it all or take shower.
Elizabeth Shaw That's brilliant!
Nice! Which plant milk did you use?
Hi,
I am actually Hungarian, and I can tell you, there is no mushroom soup in Hungary like this one! But I happily could give you a real recipe for a real Hungarian mushroom soup!
Please do! Thank you.
I agree with you Peti, this soup is too thick to be Hungarian. We like the soup more liquid.
Pontosan !! I have an advice for you shed go to Hungary spend some time there and learn from the locals!!! After that put videos on on Hungarian recrpies. Koszi
Ez inkább gomba mártás lenne nem...?...mi nem így csináljuk..
It's his version of it!
I used oyster mushroom and it turned out so good! Thank you for this!
This is one of my favorite videos!
Thanks!
Update: This recipe x 5, yielded me 34 cups. So, your recipe above likely yields 8-9 6oz servings not 4-5. Thankfully, I don't live alone & it's SUPER YUMMY & All will enjoy it very much!
Your soup is AWESOME!!! All my friends, co-workers and family LOVE IT!!!

+Tamara Bushchenko Ha ha! Guessing you really did not try making the soup.
+Chef Tips, maybe my previous comment was too emotional, but i really like this recipe and make this soup every sunday. As a ukrainian, I find hungarian food very close to ukrainian. So, there's no reasons to lie:)
+Tamara Bushchenko Very good! I was joking with you. Glad you enjoy it and thanks for commenting! Cheers!
