    Goldilocks never saw this one coming. Congee is something I was recently introduced to and I just fell in love. It's a Chinese rice porridge (a thick and hearty soup) that typically contains a protein like chicken or pork and is also commonly eaten for breakfast but can be served any time of day. I certainly prefer it for a super delightful lunch or dinner on a chilly day.
    Congee is comforting, yet LIGHT (and gluten-free)! Complex in flavor, yet EASY TO MAKE! When I served it to my folks, it was a huge win with them. I left the leftovers behind and my mom let me know that she was obsessed and polished them off the next day.

    OMG!! Thank you for this recipe!!! I’m Asian, but don’t really have cooking skills. Been craving this for forever and I am just SOOOOOO thankful for this!
    We eat this congee with these toppings (of course optional):
    Sliced boiled eggs
    Fried garlic
    Green onions

    Please thank your dad for saying "chowder". I can't eat potatoes now, and have been missing clam chowder. Now I'm going to make some using congee and the rest of the clam chowder ingredients! I've been trying to figure out a way for a couple years now. Thanks so much!

    I prefer vietnamese chao which is SO MUCH EASIER than this recipe. We use fresh minced ginger, garlic and green onion, sauteed; add 2 chicken breasts; 6 cups chicken broth; and 1 cup rice. Cook in instapot, natural release 20 min. After cooking add 1tbsp fish sauce, green onion, cilantro, and more fresh minced ginger. Add lime juice, salt and pepper to taste and DONE! No sugar, no other seasonings, no waiting for it to thicken (it comes out thick). One step recipe. Much easier than this recipe, FAST, and AMAZING!

      C. R. Sounds great but in no way is that any “easier” than this recipe. As shown in the video, all you do here, is dump water, rice, chicken and seasonings into the pot and pressure cook. Then add a few more seasonings let it bubble and rest and it’s done.

      @@PressureLuck My husband and I cook your recipes all the time and we have your cookbook, so not trying to put your recipe down. The vietnamese recipe I use is fewer ingredients, fewer steps and less time. That's why I said it's easier.

    That looks delicious and comforting! I like that you cooked the chicken with the skin and bones because ppl don’t want skin because of the fat, but that the skin and bones is where the nutrients are for our immunity systems. That’s important as we come into winter, as well as flu season and the lingering Rona virus. I can’t wait to make it! I love your parents kitchen! Where’s Richard? I missed seeing him try the dish. I pray that one day you get a big beautiful gourmet kitchen, because you deserve it. ❤️

    This has been our winter breakfast for the past couple of years. I use bone broth, either pork or chicken, mixed with water and medium ,or short grained rice, a thumb's worth of ginger cut into coins and a tsp of toasted sesame oil. I usually do it in the slow cooker overnight but when that craving hits...I do it in the IP. We usually just use leftover cooked chicken or pork to garnish it. A soy sauce fried egg, some scallions and finely julienned ginger on top and drizzle a bit of sesame oil and a sprinkle of white pepper. Chopped peanuts go good on it too.

    Congee is an amazing dish, but all those seasonings are not necessary. Fresh ginger, onions, and for the amount you made maybe 2 tablespoons of chicken bouillon will be perfect. This is a comfort food for us asians.

      I like using Plum Sauce to add sweetness with a bit of flavor to many dishes. It seems to work just as good IMO and I think it would be great in this dish.

    I hate sweet stuff for breakfast and typically eat stuff like chicken soup in the morning so when I heard about congee I went looking for an instant pot recipe and what do you know, my favorite instant pot guy is already on it. Love it.

    This is the 10th IP chicken congee recipe I've watched this AM. You're the first non-asian cook I've watched. All the other recipes have been rice, ginger, broth or water and chicken. No asian cook has added hoisin or sesame oil, much less garlic powder, maple syrup etc. But it sounds appealing to my western palate. Think I'm going to start with the simplest version and try the other ingredients as I make it throughout the winter. Thanks for the variation.

    Oh my gosh! I just did this dish. I’ve got to tell you, it’s smell amazing in the house :) and it is soooo delicious! So good! Delicate Asian flavour. Certainly confort food.     I made this tonight using 3 teaspoons of better than bouillon chicken in the water and using the non salted seasonings and it came out delicious. I can already tell this is going to be a go to recipe

    Just in time for this cooler weather, and it certainly looks so very good! Very interesting recipe and name. Seems I have heard the name congee before but never knew what it was. Now I do thanks to you. I will definitely be trying this out, just will add a little less salt for us, as you know the seniors have to watch our sodium intake, duh. Your parents are a sweet couple.     I've made this several times and I love it! I have a "delicate" appetite due to medications and health problems and this is one of the few things that doesn't cause me problems! It's also so easy to make that I don't exhaust myself making it! (once again, health problems) I use sodium free chicken broth instead of water and finely chopped onion instead of onion powder.

    I have pre ordered the new cook book! I can't wait to try this one. Never heard of anything like this before. I am not a big fan of ginger though. Is it strong in the dish?     Sounds delicious. Something similar to our asopao de pollo in Puerto Rico. Also great, if you substitute shrimp for chicken. Great with crispy fried green plantains on the side! 😋! Stay well!

    I always put Twistees (cheesy things) into my jook (congee). Fried onions are good too. Great video, I will try the maple syrup next time.

    In order to cut back on the soy sauce while cooking your congee. You can have it as a side garnish, by slicing up some ginger and add soy sauce with some sesame oil on the side. So that whoever thinks that the congee is not salty enough, that side savory garnish is what adds on to the congee flavour.

    Hey Jeffrey, i think there might be a typo on the printed recipe. It says 2 minutes quick release instead of 20. Im going by the video though. Just thought you should know.

    Serve it with deep fried or air fried tofu dipped in a mixture of soy sauce, vinegar with chopped garlic salt and pepper. That’s the Filipino style of eating congee or what we call arroz caldo. @Pressure Luck

    That's great! But we'd been doing the same dish in Puerto Rico for ages, we call it "asopao" with chicken and even shrimp!
    But it's got no maple in it, and no asian ingredients, but tomatoes and sweet peppers and olives. 🤤
    We can testify it can cure many ailments... even your worst hangover from last night's partying!

    so I made this now, and I would say it needs about twice as much rice. and congee should be more watery, closer to a soup. but flavor is pretty good, I'll make it again.

    Wondering if I can use cauliflower in place of rice and sugar free syrup, of course,for a Keto version 🤔
    Cauliflower Congee has a nice ring to it.😍

      Elisa Fuller no, cauliflower rice would not work. It would disintegrate. It needs to be rice because the starch from the rice is what thickens up the soup.
