    My mom used to make Chook every New Year's eve over the stove. She would put raw peanuts, intestines, chicken and for toppings on the side we would have chopped green onions, minced chung choy (salted turnip), and shredded lettuce. I just got an IP for Christmas and going crazy making all kinds of things in it. I want to make Chook this year in my IP, but with so many of my kids not eating meat, I may try and use dried scallops instead. Thank you so much for making this video. I will definitely follow you because I want to make all our "local" recipes in the IP from now on. Kung Hee Fat Choy!

    Omg you are too cute!! I love your video! In my Insta pot congee I put garlic, ginger, and onion and I usually use one and ahalf cups of rice and 9 cups of water with chicken cause we eat so much of it LOL it’s my daughter’s favorite!

    Making jook in the IP has changed my life! I always add one or two thick slices of ginger into it before turning it on and fish it out later. Another great addition is a couple of dried scallops. i like mine chinese style, really soupy. My grandmother always made 1 cup of long grain rice to 10-12 cups of broth on the stovetop so I use almost the same proportions for the instant pot.

      Where do you buy dried scallops from? And do you fish it out before serving like the ginger, or leave it in?

      ​ @MyFaves808 You should be able to find it at any chinese market. They come in a box or a bag and the bigger they are, the more expensive. For jook you can get the really small ones. If you are cooking your jook on the stove, you will need to soak the scallops in water for several hours first, preerably overnight, until they can be shredded a bit with your fingers. Add the soaking water and the soaked scallops with the rice at the beginning. If using a pressure cooker you don't need to presoak the scallops. Just throw them in at the beginning with the rice and water. After the jook is cooked, I find the scallops and shred them if they haven't fallen apart by themselves (pressure cooking will break them down for you usually) and add them back to the pot. You eat them, you don't discard them! They shred into thin threads that are a bit chewy.
