- Sausage Seasoning...
1 cup salt
2/3 cup sage
1/2 cup parsley
1/4 cup garlic powder
1/4 cup black pepper
1/4 cup thyme
1/4 cup red pepper flakes
1/4 cup oregano
Use 1 Tablespoon per pound of meat.
RANCH SEASONING -
6 Tablespoons garlic powder
3/4 cup dried parsley
6 Tablespoons dried minced onion
3 Tablespoons salt
1 1/2 teaspoons black pepper
Mix seasoning together and add one tablespoon to 3/4 cup mayonnaise and 1/2 cup Greek yogurt.

I’m a pepper farmer! There is a paprika pepper we grow! Capsicum is another name for pepper. Did you know that peppers are medicinal? Great for diabetics, high bp, and even wounds!

All peppers contain capsicum! I can’t give medical advice, but there are many websites with information on this!
I have taken cayenne capsules during pregnancy to lower my BP. Worked great!

Pork hock is usually in collards or beans to add flavor kind of like adding a ham bone to those items.❤❤❤❤

We had such little bits of money when we married at age 18 and 20 and because we were so stubborn we ate lots of pots of beans with ham hock as the protein and the seasoning. Anyway I took that Yankee I married to do our shopping and told him to look for the ham hock
He said how big is this bird I'm looking for? I said what bird. He said it's a Ham Hawk right...I couldn't stop laughing. He said he was trying to imagine the hawk swooping down and stealing little pigs...Momma always said he was not too smart and honestly I thought she would never start breathing normal again.
Hi! I’m a kanien’keha:ka woman from a small town called Kahnawake in Canada. We are indigenous and What we use our hocks for is Corn soup! Or what some people call “3 sisters soup”. Boil your hocks in a large pot of water for a few hours, take them out and get the meat off. Chop a large head of cabbage, a few turnips, carrots, hominy of your choice and kidney beans. Add your meat back and lots of pepper! We made fry bread to go with it! Give it a try! You will be adding it to your weekly menu!

We call them ham hocks, and we cook them in the crockpot with white beans. Served with cornbread. 😊
That's the only way my family had ever used ham hocks, as well 👍
That's what my mom said she used to do.
My grandma always made this but instead of cornbread we had them with fried diced potatos

OFF OFF TOPIC: A suggestion that I saw on another large family on UA-cam. When you build your new house install a water fountain near the back door in the kitchen area. It has a water bottle filler and looks so handy for everyone to have ice cold water when running in and out playing.

Ham Hocks are usually cooked with dry beans or fresh Greens to flavor them very Southern.
I love to use ham hocks in navy bean soup. Cooked in the slow cooker, the meat just falls off the bone. Don’t forget the onions!!!
Pork hocks used to be so cheap. Cook with dry beans and onions and a pan of corn bread. So good, grew up on them. We were very poor.

Just a suggestion Sara, I use pork hocks in pinto beans. Just add them in with beans, water and salt and pepper. Cook low for 2 to 3 hours. Great with cornbread and wilted lettuce. YUM!!!

Hi Sarah. I'm from Australia. We always use ham hocks for soup. Boil them for a couple of hours, with some onion, carrot and celery, til they are falling of the bone, then remove and shred the meat. It should be lovely and soft and slightly gelatinous. Strain the liquid and add back into the pot along with the meat and whatever veg you want (dried peas, beans or lentils are great too) cook til vegetables veg is tender and enjoy 😊

My mom would make pinto beans with ham hocks, adds great flavor and salt. She always added bay leaves and garlic powder for seasoning, served over white rice for complete protein.
BTW, I use V8 juice as the base for my hamburger soup. Not so much tang as plain tomato sauce. Even add some billion to flavor.

Duh, it took this comment to realize I heard of a hock! All my life actually🤣 I thought Sarah was saying hawk. I've never known it to be used as a entree, however, some people don't make another meat to go with the meal, but my family always had a separate meat because the ham hock served as a seaoning only for the beans or greens.
I grew up on a homestead where the saying “use it up, wear it out, make it do, or do without” was a way of life!
Add the hocks to some dry beans, I use them when I make red beans with sausage. A Louisiana must!
Ham hock is right above the hoof, make hammock and lime bean soup, add a spoonful of vinegar to each bowl at serving, yum

In the South, we use ham hock to season with, there is also some who eat the meat and are willing to deal with the fat.

We use ham hocks alot. They are amazing for adding flavor to so many things. We cook sauerkraut with them, make split pea soup with them, 15 bean soup, Braised collards or spinach/kale, They are especially tasty if they are smoked first before adding to other things. Use them to add flavor to baked beans, green beans, ham and potato soup, red beans and rice.
With the many things we have used them for, I have never used them as a "meat" for a meal.
I use smoked hocks when I make beans I put them in lima beans with onions

A ham hock, or pork knuckle, is the joint that attaches a pig's foot to its leg. we uses them with boiled navy beans with ground pepper and onion.

I was pretty sure I knew but wanted to double check but the Hock is the part right right above the ankle of the pig. We do them in the crock pot with broth and beans
Actually, I had hamburger soup just before watching this video. Our recipe ended up similar but called for macaroni noodles instead of potatoes. So good!

We usually use pork hauks in beans for flavor. It makes the best beans of any kind. I soak the beans over night then slow cook beans with the ham hauk. Or split pea soup.

I make hamburger soup with barley, canned tomatoes, beef broth, onions, carrots…..so easy & yummy 😋 ( sometimes I bulk it up with macaroni noodles too )

Paprika is just sweet red peppers that are dried and turned to powder. It can be a blend of different varieties or specific kinds....my husband and I had this conversation recently because we have really been enjoying paprika lol

Here down in the south we use pork hocks for seasoning beans and greens and green lima beans so good for seasoning

My childhood was on a farm in ND. Mom had a huge garden. We grew potatoes, carrots, parsnips, bean, peas, lettuce, etc. you need to have a farmer plow up a garden plot. It will save you big bucks and provide lots of food for all year, with canning, freezing and cold storage. We also had a big raspberry, strawberry patch. Lots of fruit trees etc.
I have issues with pork causing heartburn, so started doing beef breakfast sausage a couple years ago. Having a sausage seasoning blend you like is absolutely amazing.

Sarah, I use the pork hocks in my split pea soup.I like the flavor it gives the soup but Take it out, like Mom said, bony and grizzly and meat so so. I put croutons on top.

Hey Sarah! Always love your videos. I grew up in the South and we always used ham hocks for flavoring…for example my grandmother would cook a huge pot of green beans with a ham hock for a long time and they were DELICIOUS!! I also love using it for soups and stews for flavoring. Yum!!!

My grandma always made pork hock soup all the time when I was a child. It was amazing.

If y'all have never tried it, see if you can get your hands on some Conecuh sausage. I know it's sold in Florida, so you may have tried it there. There's seriously no better sausage-- it's made in Conecuh County, Alabama.

As a side note, ham hocks are like the ankles of the pig…I had never had them til I married my husband and we have a small farm. He likes raising pigs. His family always has pork and sauerkraut for New Years and his mom cooks the saurkraut with ham hocks…soooo good. Every last morsel of saurkraut is gone when it is cooked this way.

Here in NZ we use smoked ham or pork hocks (which is the lower leg) in soup usually. I personally make a 'Bacon bone' soup with that as the base flavour, or a pea and ham soup. Both are delicious. ❤
