Enemies that CAN'T be turned into items instead give you a Yoshi Candy, which heals for 100 HP--but a better use is to sell them for 70 coins, making this an effective way to farm coins as long as you don't mind doing the racing minigame!

True! In my yoshi cookie guide video I mention the money farming potential, especially since you'll end up with a bunch of yoshi candy if you try to farm fire bombs from the lava bubbles. Farm bombs, and sell the yoshi candies 10 at a time for 700 coins. It's also amazing to do early so you can buy a ton of bombs at Seaside town :)

Some enemies are a nightmare to eat. I *suspect* that dropping their hp helps, but I didn't test enough to say it confidently.
