Y'know, Kenji's pretty sensible when it comes to food, I wasn't expecting him to compete with Alvin or George's burger fetish, but then the words "beef cheese" came out of his mouth.
He may be a champion of home cooking on his youtube channel but his time at Serious Eats and his Food Lab book goes so in depth that most youtube personalities pretty much cooks his recipes for a living and brands their face on the video. TBF, many of them do give him credit.

I've always thought about that combination of a fat juicy patty and a smash patty whenever I see them debate which is better. I'm glad someone finally did it.
I feel like Alvin's burger could have the same result without the hassle of folding the meat by just making 3 thinner patties with cheese stacked. Kenji always insane to watch, Motz as well being nicely informational
I love Alvin, George, and all the other guests and I know smashburger is literally in the title is this episode, but I was excited to see Kenji include a thicker patty in his sandwich since I feel like this show is really smashburger heavy.
That burger Alvin made is basically the result of hanging with Motz all this time, which I love. I kinda wish he did the fried onion burger tech as well into his meat pancake to make the flapper even better.
The other two are so much easier to make, tho. Even including the tank of beef tallow. The second you include demiglace, you've upped the prep time to at least 12 hours.
Again Kenji shows how much thought you can put into something "simple" like a burger and come up with something so much better. I mean what he did was stunning, dont you think?

This is so killer, Motz is a fountain of information, Alvin is creative as hell in general, but Kenji, WTF, I've never seen anyone make their own talo/chedar cheese sheets before. Fucking hats off. I enjoy watching Alvin, I would like to see him go down a healthier path so I can continue to watch him for a long time. All these burgers don’t seem sustainable for anyone.

@@dpellek74 I like Alvin, just because he isn't a certified expert doesn't mean the episodes aren't fun to watch. Maybe he has a diploma off camera that none of us can see. I don't own a restaurant so I can't speak to his ability but he's a better burger maker than I am that is for sure.
