    Ingredients:
    - 3 chicken breasts or thighs, sliced into thin strips
    - 2 red bell peppers, sliced
    - 2 yellow bell peppers, sliced
    - 1 large onion, sliced
    - 2 tablespoons olive oil
    - 3-4 tablespoons homemade fajita seasoning mix or 1 packet (1 ounce) fajita seasoning mix (homemade mix, see below)
    - 1 lime, cut into wedges
    - Fresh cilantro, chopped (optional)
    - Tortillas, for serving
    Cheese of choice (optional)
    Homemade Fajita Seasoning Mix Recipe (300g)
    Ingredients:
    - 80g chili powder - gochugaru korean red chilli powder - amzn.to/3LbKYnI
    - 50g paprika
    - 40g garlic powder
    - 20g onion powder
    - 20g ground cumin
    - 10g salt
    - 5g black pepper
    - 5g cayenne pepper (optional, for heat)
    - 40g corn flour (cornstarch)
    - 30g granulated sugar
    Sour Cream Dip Recipe
    Ingredients:
    - 1 cup sour cream
    - 1 tablespoon lime juice (freshly squeezed)
    - 1 teaspoon lime zest
    - 1 small clove garlic, minced
    - 2 tablespoons fresh cilantro, finely chopped
    - 1/2 teaspoon ground cumin
    - 1/2 teaspoon smoked paprika (optional)
    - Salt and black pepper, to taste
    Preheat your oven to 180°C (365°F)
    Airfryer 180°C (365°F) amzn.to/45zYrz4
    for about 25-35 minutes

    I’m not a Fajitas fan but after watching Rik”s presentation I figured it was worth trying. Let me say that his version knocked it out of the park and I’m now a fan. My wife ate two, I ate three and my son scarfed down five. Best Fajitas ever. Give it a go and you will rewarded with Fajitas like none other.

    And another winner! That is a skookum spice mix you made, tons of flavour but not needing a fire extinguisher.
    I know this is non-standard but I tear up my tortillas into small pieces and build each mouthful individually. Each bite can be slightly different and it slows my gluttony down so I enjoy all the flavours. Add some good Mexican beer and I am a happy camper.

    Rik, Thank you for this delicious recipe! I think I mentioned before that my step father had a Texmex restaurant in Stüttgart (which was widely acclaimed and was frequented by numerous celebs) and this was one of the most popular dishes on the menu. I have always wanted a good fajitas recipe (S-F was very secretive about his recipes when he was a chef - he’s very elderly and retired now) and FINALLY I have one that may just be a mirror of his! 😀😀

    That’s superb! I’m a great fan of a traybake - any meal in one go - no messing but loads of flavour and loads of veggies.
    Have you ever done stilton and pear tart? The stilton factory at Melton Mowbray looks to be closed down as stilton has become less popular. Stilton on digestive biscuits - a classic. Sausages tonight, with jersey royals, buttery cabbage, home grown broad beans and onion sauce - I’d better get cooking.     Another use for corn starch, I didn't know that humble powder would help dry spices stick to the meat and vegetables. Smoked paprika is hard to find in my rural location and expensive so it is a treasure. I will search for it in a nearby town with a more diverse population. However I may have to ask friends in a small city an hours drive away to purchase some for me. Finding a couple tiny tins of Smoked Paprika will be my next shopping challenge,

      I don't know if this helps either of you but if there is a restaurant store in the larger city, or from Amazon, look into the big foodservice containers. Badia is a US brand. It's not top-shelf like the tins but I use it all the time in dishes where there's a lot going on and the paprika flavor is in a supporting role. I use the 'good stuff' when it will really shine. The foodservice stuff isn't bad by any means but the little tins are definitely better.

I am a fan of the larger size containers of spices because I live in a rural area and the cost of fuel to go shopping means every trip must be focus on value and future convenience. Plus a large container can be shared with friends who cook. thanks again!

      @@joaniemarjoriemarriott342 So very happy to help. If you're in the US I go to Gordon Food Service. A lot of foodservice stores are open to the public, no fee to shop. Larger grocery stores have them sometimes or warehouse clubs if you are a member or have a friend who is.

      @@dianeladico1769 yes we can find Gordon Food Service in large centers in Canada. I do look for several of their general food packaging and storage products at a large discount grocery warehouse in the city of Vernon, in British Columbia province. I never looked for their spice and herb tubs. An adventure awaits me.

    You had me at peppers, onions, and cheese. lol This looks so delicious if I didn't have tortillas I would over stuff a sub roll with this mix, like we have our Italian sausage and pepper sandwiches. Or serve it over a pile of butter/garlic pasta (or a bowl of Spanish rice). Yum!
    Do you think the cook time/temp would be the same if you parboiled Italian sausages first (to get rid of all the grease and stuff), then tossed them on top (or beside) the veggies to bake together? Shirley in NH

      Oh my-fajita pasta-thank you! And of course rice and beans. That will be sooo good for us vegheads. Here's my tip as a thank you. When I do it on the stovetop I add a good splash of whiskey when it's almost done then cook it off. Adds a sweetness and good flavor.

    That's a great recipe Rik! I have a question for you. I had someone tell me that green peppers turn into yellow peppers. Is this true? I have a hard time with green peppers but I'm fine with yellow and red. I'm just wondering if they are all the same pepper? Thank you

    Lately I've had this thing for Dijon mustard, how do you reckon that'd go with the sour cream mix, please Rik? I don't want to ruin the mix if you dont think it'd work, I've never done it with Dijon before.

    Hi Chef, I save so many of your videos that I created a playlist here titled Chef Rik. My concern is that when cooking one of your recipes I sometimes go back and fast forward or rewind to get to a particular spot I need to reference. Usually I run all the way through but it dawned on me...I hope it doesn't screw up your YT stats when I jump around.
