In Croatia we have allso the Kremšnite,simular to the kremish and i like it.The other cakes we allso have,becouse the same history together with Austria and Hungary . I have not seen the one with cheese and meranga,you gave a 9 for it,and i think id would be my favorite too. Uncle Béla's Dobostorta is not the original Dobos Torta! The original cream has a much softer, fuller taste. For reasons of cost effectiveness, some raw materials were omitted from it. I only rated it 4 points. "Túró"-curd is actually sour ricotta. The cow's milk is spontaneously fermented with lactic acid, then the "curd" is extracted with a mild heat treatment. It is separated from the whey by filtration.
In Hungary none of the traditional cakes can compete with "Az őrség zöld aranya" (literally "The green gold of Őrség") that is made from roasted pumpkin seeds, white chocolate mousse and raspberry jelly. This cake won the "Cake of the country" contest a decade ago and its still widely available in the country during holiday season. If you can try this, you will never choose the mentioned cakes again.
Valóban nagyon finom és népszerű, fagyit is készítenek belőle, nem mellesleg Balatonkenesén van a péksége és cukrászdája a torta megalkotójának, érdemes oda ellátogatni, nagyon hangulatos kis hely.
Őrség zöld aranya az egyik legjobb torta, utána a Gesztenye püré és a Somlói galuska jöhet így egymás után. Kecskemét Jakó Cukrászda- ban izlett még a legjobban. Állandóan friss sūteményeket ettünk ott. A Velencei álom fagyijuk pedig fantasztikus! ❤

Hi! Maybe you should go visit other cities in Hungary!At Budapest unfortunately there is a lot of place for tourists, and tourist will never taste the really good ones. I work in a confectionery at Pilisvörösvár, so I can tell you, that cakes were in a horrible condition, not fresh at all, it's bad to see that they serve these cakes for you. So I say that you should give another try for these cakes in other city! And also you should try this year's winner cake and Őrség Zöld Aranya. Visit 100 éves cukrászda in Gyula if you have time. One of the best cukrászdas in Hungary. It is actually more than a hundred years old, almost two hundred.@@FrederikCorneliustravel
True that! I can see through the video how stale those cakes were... To be honest, I can't really suggest a really GOOD cukrászda in Budapest; all my favourite places are all over the country - outside Budapest. Szamos is a particularly bad choice: not only is it snobby and expensive, but that's the only place where I had the worst cake in my life (although it was in the Esztergom branch...)

I'm Hungarian and I think you nailed it. These caces are always a bit different zserbó (Nr. 5), Eszterházy (Nr.3) and dobostorta (Nr. 2) can be very dry. These are old school cakes and I think tradition does not allow them to realy shine. Krémes (Nr.1) can be made very cheap, which can tast horrible. You probably had a good one. Rákóczi túrós (Nr.4) is a heavy hitter and deserves 9/10 easely! If you liked krémes you probably would also like képviselőfánk. I would also recommend kürtőskalács, which is like the dobostotra but without the unnesesery sponge cakes and filling. Just the carramelized top. Rétes, somlói galuska, gundel palacsinta, fánk are also solid choises.
Gerbeaud is a french word the Patisserie shop got the name after the chef and so did the cake except the cake is spelled phonetically according to Hungarian rules so Gerbeaud - zserbó pronounced the same, spelled completely different. I can also easyly eat about a kilo of it in one sitting, one of my favourites, the apricot jam is devine!
It depends where you had these cakes. Dobos is not dry and Esterhazy is amazing (you mentioned some sour taste, but probably that cake was not fresh). Zserbo is a classic hungarian cake, lots of family make it for Christmas home made... that should be tested, and I bet that no 4.5 points would be given...

You missed several other cakes that are staples in HU. Also you probably missed the every year competition to aug. 20. best cake of the country. It chages in every year, yet still everybody waits to be tasted, even if its just one slice.
In my not inconsiderable cake experience as a Hungarian - sadly also proven by waist size 😅 - the thing about Hungarian cakes and pastry is that you can't always find the best version of it in the capital. Sometimes you actually have to leave Budapest and go out into Hungary :D (For those unable to process sarcasm about the last bit I do not apologize).
Weird, you are not the first tourist who misinterpreted Eszterházy in their video. Eszterházy is a walnut cake, walnut cream and walnut base. The walnut on the top is a dead giveaway. I believe the English Wikipedia entry of this cake contains false information atm.

Nem értek egyet. A Zserbó Cukràszda Budapest legkiábbrándítóbb, pénzlenyúlós helye. Amikor utoljára ott jártam 45 percet vártam arra, hogy valaki odajöjjön az asztalunkhoz, csak azért mert meghallották hogy magyarok és nem külföldi turisták vagyunk. Soha többet nem megyek oda!

We Dutchies have something like the Krémes too; the Tompouce. With pink glacing the year round but orange glacing on national holidays. My all time favourites in Hungary are the different kinds of Beigli, Flódni and Császár rétes (all rétes actually, especially when made by my grandmother, she was the best cook ever)

Krémes is a type of custard pie, the pastry is between filo and puff pastry. And the filling is fluffier than custard, less dense but just as intense with regards to flavour.
If I have to choose out of these 5, I would go with the krémes, my grandma made it all the time. 🙂 She also made Reszelt kakaós-túrós süti, with HUGE pans, I usually just grabbed a liter of milk and drank with a ton of that pastry I ate. 😀
Hungarian here. Great video but the most fundamental mistake you made is that you did not have Dobos torta at Gerbaud, which is famous for its Dobos torta.
Hi Frederik! Rigó Jancsi is also a famous Hungarian stuff, you should definitely try it next time and I think you would like that one more than these in the video.
It's always interesting to see what foreigners think and feel about our culture, language, people and food. Nice video. Nevertheless you managed to find all those Hungarian cakes that were popular in the 80's but are considered a bit old-fashioned today (these versions at least ). Beware of tourist traps like Cafe Gerbeau/Zserbó. Expensive and low quality. By the way the correct pronunciation is “jer-bo”, “j” sounding softer, like in “je ne sais quoi”. It's a walnut, apricot layered cake. For the best krémes of the country go to Pauza Café in Pannonhalma. My favorite is the lavender krémes there. The culinary experience and a visit to the Abbey and the arboretum is definitely worth the trip. Dobos torta...the original version is not made with sponge cake layers. Rákóczi túrós- cottage cheese and apricot jam layers...too sweet for me. :)
Since I haven't seen anyone mention, you should definitely try Zagyva cukrászda in Szolnok. The best confectionary ever. I believe they make Ischler/Isler in a special way only in Szolnok, a huge layer of white cream between the cookies with chocolate coating. Highly recommend every cake there, they are soft, creamy and fresh 😋👍
You shoud try the Puncs torta. Yumyum Of course my favourite is the Dobos torta. Every year for my birthday it was the only thing had to be. Lucky you.

In Serbia and Croatia, you will find a lot of these Austrian and Hungaeian cakes too. Like Sacher and Dobos. You will also find Kremes, but it's called Krem šnita/Krem pita (or Kremna rezina in Slovenia, it is popular to eat one when at the Lake Bled). Some other popular cakes in Serbia and Croatia are Španski vjetar, Reforma torta, Vasina torta, Markiza.
He knows where to go. Szamos. It is expensive, but the quality is very good and constant. I also shop there, it has many stores in Hungary. Daubner, Ruszwurm, they are also very good.
Gave a 👍 , and hope that 114 other will follow so you must make another video 😈 Couple of observations. The Dobos cake was too dark. Probably too sweet too. And if it was dry, than it might have been a day old. The Eszterházy cake does not contain almond. It contains walnut. And it should not be sour. If the zserbó (pronanciation like it's a french word 'Gerbeaud') was only 5/10 than it was not done properly. It is the number 1 cake in Hungary. Bonus observation. Next time walk the tunnel with a diver oxygen tank on your back so you can breathe.
I can see why would someone use the word "sour" on Eszterházy tho. It's walnut and has definitely a different taste than almond and depending on the recipe the cake can contain some alcohol too.. Anyway I hope it wasn't bad sour... x) I love Dobos torta but it is quite a simple cake. The color is most likely just because they used a darker cocoa. That won't make the cake worse but different cocoas taste a bit different. I actually prefer the darker ones.

I live in Australia and there are no good cakes here. There was once a competition where the "krémes" ones won the main prize, which was called "vanilla slice". The reporter also tasted it and immediately praised it very much, but as soon as he turned away, he spat it out. The photographer took it by accident. The reason for this was that there was a half-centimeter thick, hard sugar coating on top of the cake, which made the whole thing unenjoyable.
Whoa! Perfect pronunciation of Budapest (not "BÚdapeszt" what they usually say), and the names of the cakes. Zserbó is the absolute heavyweight champion merely because of the ingredients: walnuts, chocolate, apricot jam, pastry - you can't argue with this dream team. It's a normal-size cake. You only got that small because they were trying to keep the price low and the ingredients so expensive, small size was the only way. Made it a few times, everybody loved it.

I have a sweet tooth so my city, Budapest is a heaven for me. We have this café house and cake culture since the Austro-Hungarian Monarchy (1867-1918), this is why Budapest is similar to Vienna. Though cakes in Budapest are sweeter in general. I love Szamos krémes a lot, túró and chocolate cakes or Őrség zöld aranya. However I don't eat any jam or marmelade so no zserbó for me. 😅
it is farmer cheese I live in the US and can't buy in the store so I make it from milk and I make Rakoczi turos . We use it in a variation of baking . I go to Canada 2-3 times a year and they have it in every store .
I would really like to see your reaction about our cake of the years (2024, Hungary) . Every year cukrászda based in Hungary compete, made their own new best cakes in the end 1-1will win. We will get two types of cake one is with sugar (normal) cake and the other one is sugar free cake. Suprisingly sugar free cakes also taste delicious.
The oiginal Dobos torta is not supposed to have the dark dry chocolate in it ☝️ It's supposed to be rather moist and very light brown coloured inbetween the layers of the sponge cake 😎 My favourite cake when I was little ❤ But now I cannot wait to try the Rakoczi Turos 😋😇 (Does Turos mean anything in Hungarian??:)

Turo curd is a version of Soviet 'Cyrok" (sry can't find cyrillic alphabet).
turo is equivalent to farmer's cheese in the states, but smoother than turo, less curdy

Rákóczi Túros is also my favorite. Thanks to the "túró, it is incredibly smooth and a flavor bomb.

Grandma’s zserbó was always the best
We Dutchies have something like the Krémes too; the Tompouce. With pink glacing the year round but orange glacing on national holidays. My all time favourites in Hungary are the different kinds of Beigli, Flódni and Császár rétes (all rétes actually, especially when made by my grandmother, she was the best cook ever)

Krémes is a type of custard pie, the pastry is between filo and puff pastry. And the filling is fluffier than custard, less dense but just as intense with regards to flavour.

If I have to choose out of these 5, I would go with the krémes, my grandma made it all the time. 🙂 She also made Reszelt kakaós-túrós süti, with HUGE pans, I usually just grabbed a liter of milk and drank with a ton of that pastry I ate. 😀
Hungarian here. Great video but the most fundamental mistake you made is that you did not have Dobos torta at Gerbaud, which is famous for its Dobos torta.
My favourites are Zserbó and Rigó Jancsi.

Zilah Cukrászda in 18. distcrit is the best. All their cakes are so delicious, so good. I would recommend you the "mézes krémes".

Nevertheless you managed to find all those Hungarian cakes that were popular in the 80's but are considered a bit old-fashioned today (these versions at least ).
Beware of tourist traps like Cafe Gerbeau/Zserbó. Expensive and low quality. By the way the correct pronunciation is “jer-bo”, “j” sounding softer, like in “je ne sais quoi”. It's a walnut, apricot layered cake.
For the best krémes of the country go to Pauza Café in Pannonhalma. My favorite is the lavender krémes there. The culinary experience and a visit to the Abbey and the arboretum is definitely worth the trip.
Dobos torta...the original version is not made with sponge cake layers.

Since I haven't seen anyone mention, you should definitely try Zagyva cukrászda in Szolnok. The best confectionary ever. I believe they make Ischler/Isler in a special way only in Szolnok, a huge layer of white cream between the cookies with chocolate coating. Highly recommend every cake there, they are soft, creamy and fresh 😋👍

As a hungarian, I only eat Krémes. The rest is too sweat for me. There are much better cakes/sweats in hungary, but these are the most known ones.

btw the name after Rákozcy Ferenc hungarian noble. his family originated from rakotzbrücke germany. and there is another famous thing with his name is a military march the "rákoczi induló"

In Serbia and Croatia, you will find a lot of these Austrian and Hungaeian cakes too. Like Sacher and Dobos. You will also find Kremes, but it's called Krem šnita/Krem pita (or Kremna rezina in Slovenia, it is popular to eat one when at the Lake Bled). Some other popular cakes in Serbia and Croatia are Španski vjetar, Reforma torta, Vasina torta, Markiza.
Dobos is best is Szamos!
Try it there, it shouldn't be dry! The Dobos (Drummer) part is the best, it looks like a drum.
He knows where to go. Szamos. It is expensive, but the quality is very good and constant. I also shop there, it has many stores in Hungary. Daubner, Ruszwurm, they are also very good.

Couple of observations.
The Dobos cake was too dark. Probably too sweet too. And if it was dry, than it might have been a day old.
The Eszterházy cake does not contain almond. It contains walnut. And it should not be sour.
If the zserbó (pronanciation like it's a french word 'Gerbeaud') was only 5/10 than it was not done properly. It is the number 1 cake in Hungary.
Bonus observation. Next time walk the tunnel with a diver oxygen tank on your back so you can breathe.

I can see why would someone use the word "sour" on Eszterházy tho. It's walnut and has definitely a different taste than almond and depending on the recipe the cake can contain some alcohol too.. Anyway I hope it wasn't bad sour... x)
I love Dobos torta but it is quite a simple cake. The color is most likely just because they used a darker cocoa. That won't make the cake worse but different cocoas taste a bit different. I actually prefer the darker ones.
just because zserbó is the nr 1 cake in Hungary (which I doubt) doesn't mean that everyone likes it

Earlier it was #2 behind Somlói galuska just ahead of Rétes. These 3 are the undisputed top 3.
So what you doubt is not really relevant.

I live in Australia and there are no good cakes here. There was once a competition where the "krémes" ones won the main prize, which was called "vanilla slice". The reporter also tasted it and immediately praised it very much, but as soon as he turned away, he spat it out. The photographer took it by accident. The reason for this was that there was a half-centimeter thick, hard sugar coating on top of the cake, which made the whole thing unenjoyable.
Whoa! Perfect pronunciation of Budapest (not "BÚdapeszt" what they usually say), and the names of the cakes. Zserbó is the absolute heavyweight champion merely because of the ingredients: walnuts, chocolate, apricot jam, pastry - you can't argue with this dream team. It's a normal-size cake. You only got that small because they were trying to keep the price low and the ingredients so expensive, small size was the only way. Made it a few times, everybody loved it.

I have a sweet tooth so my city, Budapest is a heaven for me. We have this café house and cake culture since the Austro-Hungarian Monarchy (1867-1918), this is why Budapest is similar to Vienna. Though cakes in Budapest are sweeter in general.
I love Szamos krémes a lot, túró and chocolate cakes or Őrség zöld aranya. However I don't eat any jam or marmelade so no zserbó for me. 😅
Zserbo was named after Émile Gerbeaud a swiss born hungarian choclete maker. So Gerbeaud is a french family name pronaunced Zsebó.

Yes, we found out. Most Hungarians tell us that it's cottage cheese, but it's curd
it is farmer cheese I live in the US and can't buy in the store so I make it from milk and I make Rakoczi turos . We use it in a variation of baking . I go to Canada 2-3 times a year and they have it in every store .

I would really like to see your reaction about our cake of the years (2024, Hungary) . Every year cukrászda based in Hungary compete, made their own new best cakes in the end 1-1will win. We will get two types of cake one is with sugar (normal) cake and the other one is sugar free cake.

The oiginal Dobos torta is not supposed to have the dark dry chocolate in it ☝️ It's supposed to be rather moist and very light brown coloured inbetween the layers of the sponge cake 😎 My favourite cake when I was little ❤ But now I cannot wait to try the Rakoczi Turos 😋😇 (Does Turos mean anything in Hungarian??:)
