    Absolutely delicious, Jill! I made this recipe today and my 91 year old mother loved this. We all did! Unfortunately, my Vitamix started to have issues when I was making the crust. So, I transferred everything into the food processor. And just as you said, it worked fine. My father was an old time cardiologist. He started believing in the ravages of cholesterol in the 1950's way before it was on anyone's radar. Never touched eggs or anything like that. If he was born 30 or 40 years later, he might have been vegan. He would have loved this cake. So, thanks again for all your hard work and putting this information out there! :-)

      Oh, and I made your delicious hummus recipe as well. It was great!! I used the little that was left on top of a big salad as a dressing and it was excellent. Keep up your wonderful work. And Dr. Fuhrman rules! :-) I love his approach on not just weight loss, but that we need to feed our bodies with highly nutritious food. Your husband and two daughters are doing a great job too. I saw your two daughters on some of the videos. They presented very well. :-) I am looking forward to making some more of your recipes and formulating my own which I do from time time. Thank you again!

      Ilene Unterman-Zimmer Eggs are perfectly fine. In fact they are extreamly healthy. Listen to Dr. Leonard Coldwell on it. He healed his mother some 40 years ago when she had only 3 months 2 live.
      You must properly understand about good and bad cholesterol.
      In some cases only eggscan repair certain conditions. Because with people who have educated themselfs into imbecility and know that God knows his design best.

      Adriana Morawietz The egg thing you mention isn’t true at all. Nutritionfacts.org sure shows a lot of studies that say eggs are super bad for you. Don’t get fooled.

    I gotta say it is so annoying to watch videos that have music blasting in the background that is so loud you can't hear the recipe. Your background music is very soft and soothing and there's no problem hearing your recipes. Thank you for being so considerate.

    I just made this for the second time this time ii used silken tofu in place of half of the cashews in the filling it was just as good and delicious as it was the first time thank you so much

      That’s a good idea. I wanted to try this and the basic cheesecake recipe on here, but cashews are so expensive. I was thinking of trying soya yoghurt, as I like the tang, but silken tofu might set better…

      Crust
      1 cup dates
      1/2 cup raisins
      1 1/2 cup raw, unsalted almonds
      Filling
      4 cups raw, unsalted cashews
      2 cups dates
      1 cup cocoa powder
      1 1/2 cups water
      1 cup unsweetened soymilk
      Mix crust ingredients in a food processor until mixture starts sticking together. Press into a cheesecake pan. Mix filling ingredients in a blender and then pour over the crust. Place in freezer for at least a couple hours or until firm.

    I'm 67 years old and you just answered a question for me that I wondered from time to time why I had a problem with cashews. I couldn't digest them!! I didn't eat them often enough to consult with a doctor however I am thrilled to understand this now. Thank you.

    I made this yesterday and it is delicious. I thought the crumb base was too thin at first but quickly realised upon eating that it is plenty ! I replaced half the raisins with prunes as I had run out of raisins and it worked. Thank you for your recipe. You are now a 'go to' source of recipe ideas :)

    Can't wait to try this! I am a dessert fiend and have a massive sweet tooth. I love chocolate mousse made from avocados. With digestive issues developing as I get older am exploring the whole food/plant based/vegan/vegetarian world of food. And incorporating it more as I wittle out dairy and meat products from my diet. Am going to make this for my next family gathering. :) Thanks for all your hard work in making and posting these videos. They really do help one in the kitchen.

    Yes the enzyme inhibitors are in all nuts and so in almonds dear especially on their skin! What I normally do, is to soak the nuts overnight, peel them, re dry or put in the freezer to use them when ever I need them. I guess for this recipe here you will need the first suggestion. Peace

    I have a vitamix but it has a narrow base, I like your blender with the wide base so. It's easier to dig out the blended food and it has a pulse control. Next blender is one like yours.

    I was surprised to see no silken tofu in your recipe. Were I not a lazy old man I would cook this recipe but then I'd have to wash dishes. LOL.

    Truly exceptional recipe! I had to cut in into 8 pieces and freeze it, all to keep myself from eating it in one or two sessions. Take one piece out in the morning to thaw all day in the fridge.
    Now that I know how good this is, I'll have to try your other variations - like the lemon. I also picked up some cacao powder recently at Costco and may try it next time in place of the cocoa.

    Ive been thinking of getting a blend tec and glad to hear Jill says she’s likes it. I’ve had vitamix and thought it was terribly noisily and hard to get food out from around the blades

    Love my Blentec! I actually gifted mine to my mom recently and I have been without one as I get really to travel a bit.. however, I may purchase the model that you are using here. It looks Great! and yes.. Quiet is a benefit as well whether or not in an apartment complex.

    Made it, better than I thought! My blender didn't blend the cashews to a cream, but was still good.
    Although I would make 2 changes: Double the base and halve the filling!

    This is a nice basic faux cheesecake. I love the chocolate version.
    The next time I make this, I'll use your lemon curd recipe as the topping, and fold some of it into the filling. And I may use coconut sugar in place of the dates.

    Looks amazing, but isn't that about $30 in nuts alone? As for the "Cheese" cake part, wouldn't "chocolate" cake cover it or does it actually taste like cheese cake?

      Actually it's not as expensive as you think. That's probably a 1 pound package of cashews that had been soaked. They almost double in volume. Around here, that would run about $7-$9.
      Cream cheese, is around $2.50 - $3 a package, and you generally need 3 of them for a cake this size. So still around $9 for the "cheese" filling. 😉

    SO YUMMY, I made, it was delish... quick question, should I leave in the fridge or freezer? I left for work and put it in the freezer for over 8 hours and it was frozen of course, I wonder if I could leave the dessert in the fridge instead of freezer?

    This looks so amazing! I will have to make it for sure. I’ve seen quite a bit of your videos I plan on making most of your recipes. I’ve switched to a WFPB diet a few months ago and have already had great results. Can I make a friendly suggestion as someone who has done quite a bit of acting/theatre/directing. I’d either do something in the “dead space” while you are blending, like have text on the screen, show pictures of your ingredients or pics and text of other recipes you have on your channel or turn your sound up and talk over the blender about the dish you’re making (like how long does it last in the fridge, best way to store it, etc.,) you might need a mic for that to not pick up the blender or if someone is actually filming you and it’s not on a tripod, then I’d edit that part out and just come back when it’s blended. You don’t want to loose your audience from dead space because your content is really good otherwise. Anyway, just a tip. I’m still a subscriber regardless. 😜Thanks! You just glow btw. It’s inspiring. 💟☮️

      Thank you for your suggestions. That show is a bit old now and I have learned a lot about production since then. I am really learning as I go and do the whole show, production and editing by myself. My husband used to help with the filming but he works full time so now I am a one woman show with a little help from one of my daughters to get the camera focused. You will see in some of my newer shows that I have improved on some of the things you mentioned 🤗
      Hopefully the show will just get better and better 👍

    Hi jill do i need to put the cashews, and the walnuts in a mason jar and fill them with water and cover them with a lid and then put them in the refrigerator until i use them will they stay fresh?

    I'm thinking about replacing half of the cashews with silken tofu. Tofu as only a fraction of the calories that cashew nuts have.

    Is there something else I can use instead of soya milk and raisins. I have autoimmune sicknesses (Hashimotos and Lichen) and should not have any soya products at all. I’m also diabetic and should not have to much fruits (and so know for a fact I should not use raisins at all for more than one reason!) Dates is ok in small amounts (even though I shouldn’t consume so much of that either!) But is there somehow I could make this eatable also for me? It looks very tempting and delicious 😍👍

    Hey Jill, I printed the recipe and there is maybe a mistake for the 4 Cups Cashews conversion it is said 946g in Metric!
    How many Grams is 4 Cups Cashews please? I would way around 520g...?
    Then, for the filling and water, is it possible to only use Non Dairy Milk? Why water besides Milk is there a reason?
