  • How to butterfly a chicken breast, and how to create a pocket in a chicken breast. Stuffed chicken breasts can be pan-fried or baked in a 375F oven. The chicken is cooked when a digital thermometer reads 170F in the meat (not the stuffing). Always let the chicken rest for at least 5 minutes before serving to allow the juices to settle back into the meat.

    When I make stuffed chicken breasts I tie them up with this awesome pork string, it's called bacon.

    When you use that string, is it okay to fry the chicken with the string on?
    Like.. not fry in batter, or flour.. just pan fry?

      As long as the string is cotton (eg butcher string) it will be fine for pan frying

    How long would a breast just over 1 lb take to cook that stuffed and baked at 375?

      The best way to ensure your chicken is properly cooked is to use a meat thermometer inserted into the thickest part of the breast meat. For chicken breast the temperature should read 165F (74C). Start by roasting the chicken for 30 minutes and then checking the internal temperature. Time can vary depending on your oven and the thickness of your chicken breast. Thank you for your question.

    No, it crisps up so it holds together. If wrapped in bacon the fat should melt the ends together.You either want to sear the chicken or fry it in breadcrumbs to create a continuous crispy surface.

      Thanks. The stuffing is a store bought mix (eg Stovetop Stuffing, Pepperidge Farms, or Brownberry). Depending on the size of the stuffing mix, a small package will make enough to stuff 6-8 chicken breasts. If there's leftover stuffing you can warm it up and serve it as a garnish, or even a side dish. I like to use the store bought mixes as a starting point then customize them with additional ingredients like minced veggies, nuts, seeds or dried fruit.

      Hey man I know some of these guys are jerks and what not but the Cooking Temp aka CCP (critical control point) of chicken is 165 degrease F. And 74 degrees Celsius.
