We would process about 30-40 each year. This is perfect for my Korean Chicken recipe.

Just did this to a family pack of leg quarters. The toughest part is cutting the drum socket out to get that small bone as I removed the thigh bone first - mistake. Also used needle nose pliers to pull the tendons from the end of the drum. Will truss and indirect grill/smoke them tonight. Thanks!
Finally a video where the chicken thigh has that back bone. I can only get thighs with the back bone so I can't reliably use other videos as reference cause those have only the thigh bone in the chicken.

Nice cutting and idea for stuffing. What I want to do is cut the meat and unfolding it not to make it look all crumbled. That back bone is a pain, which is why sharp knifes are needed.

I'm thrilled with this video of yours as I have always had ideas of stuffing legs and wings but I found wing stuffing videos but this one of yours for legs is perfect the way you take out that leg bone!!actually I didn't mess it up as I TRIED to stuff it without tying in into a package and the next time I'll get it!!

Really nice video. It makes me think of stuffed, Thai style "Angel Wings" that I used to see in many of the better Thai restaurants. They were absolutely fantastic but for some reason I don't see them anymore, and I live in a city with tons of Thai restaurants. On a another note, I also used to be able to bone out a whole chicken. Haven't had to do it for so long I've forgotten the proper technique. Can you possibly do a video?
Don't forget to use the bones and scraps for stock. Break the thigh and drumstick bone before putting them in the stock pot to release the lovely marrow.
