I have a small electric pressure washer and it's definitely air pockets in the line or low water pressure from the source that can't keep up. If your water pressure is good, use the regular nozzle to make sure the hose is full of water before hooking up the pressure washer.
DUTY CYCLE, gotta read those manuals so you don't break your air compressor again (or other equipment)!

We have well water so that may sortof be part of it with the fluctuation from the pressure tank.

Did you thin the paint first?
Looks like the air pressure was too high because the paint won't spray at a lower pressure being too thick, and then all that increased air pressure blasting out with the paints what's making it vaporise everywhere and the compressor to work overtime
When you're using any pressure washer, you should evacuate the lines of air completely, by having the attachment hose and tool stretched out at an ascending angle, so the air can flow up (no twists in the line) while you depress the trigger with the machine off.
If you're going to use an air compressor that small, you can get a portable air tank and plumb in your air lines to increase the capacity of the tank in general. Look for high-flow fittings.
Consider letting the machine rest after it becomes fully pressurized, the first time. It did a lot of work to get to that point, and using attachments that flow way more than your compressor can maintain will stress it out.
Oil-free air compressors are not great IMO and last 1/3 the life of a conventional compressor.
In this situation, I'm unsure whether oil blow-by from a conventional compressor would affect this project. There are filters you can buy to trap most oil before it's sprayed onto your projects.
P.S. - If your pressure washer keeps spinning, even when not spraying, (most gas models) don't let it sit idle, that will burn out the pump.
Those small oilless compressors can’t keep up that why they break cheap crap buy a oil filled air compressor and paint guns use very lots of pressure buy high flow fittings and better compressor
Yeah the next one I buy will definitely be one that requires oil
