Savory Thumbprint Cookies with Tomato Bourbon Jam | The Ultimate Appetizer!

- These Savory cheesy melt in your mouth cookies are going to be the hit at your next get together!
They start with a shortbread cookie made with 2 kinds of cheese, fresh herbs and baked with a Sweet and Tart Tomato Bourbon Jam. It is a flavor combination that you are going to love!
Makes 30
For the Cookies:
1 1/4 C flour
3/4 C Semolina Flour
4 oz Sharp white cheddar (grated)
4 oz Monterey Jack (grated)
1/2 of a Jalapeno pepper...seeded and deveined...Roasted
2 tsp finely minced Rosemary
1 tsp minced thyme
1 C Butter cut into cubes
1 T Sugar
1 Large Egg
For the Tomato Bourbon Jam:
2 1/4 C cherry tomatoes...Halved
1/2 C granulated sugar
1/2 t red pepper flakes
2 cloves minced garlic
2 T finely minced sweet onion
1/2 t cumin
1/4 t salt
3 T Bourbon
