8:10 actually ‘Pain perdu’ is traditionally made out of rock hard baguette bread that we didn’t eat from the previous day(s) which hardened and isn’t so pleasant to eat (unless you want to break a tooth) so we dump it in an egg and milk mixture to soften it and we cook it on a frypan. That way, the bread is not lost 😊
Marie Antoine-Careme was a French chef who is credited with the five mother sauces which include Hollandaise and Béchamel and later Auguste Escoffier modernized the list of sauces. It's been a while since culinary school but the 5 mother sauces is one of the first things you learn about. I knew they were French but couldn't remember who was credited with them.
Would be cool to see this become an international brunch series (trying different breakfasts from around the world), at places in London. I would highly recommend having some Lahori Nihari and some Halva Poori (make sure to try the chickpeas) at spice village (southall). It will be quite the contrast to how light this brunch was. If you're looking for similar light stuff then Scandi Kitchen in London does amazing Scandinavian brunches.
