- Thai pumpkin chicken curry or Gaeng Ped Gai Faktong is an easy and simple Thai red curry that takes just 30mins to prepare. Here the chicken is stir-fried along with red curry paste and then later cooked in coconut curry along with diced pumpkin. Lastly garnished with some Thai Basil leaves and Red Spur chilies. The curry is light and very aromatic. It tastes perfect when served with steaming hot jasmine rice.

Which curry paste did you use? Is there one that is not too spicy?
We usually use Maesri curry paste. If you want it it to be less spicy then I would recommend to make it from scratch.

What kind of pumpkin do you use?
You can use any kind of pumpkin or squash. We have used Kabocha squash or Japanese Pumpkin for this recipe.
can I use pumpkin puree?
No, if you use pumpkin puree the curry would get thick and you wouldn’t get the Thai curry flavors. We suggest you to use the pumpkin cubes for this recipe.
