When I first started making them, I would throw almost whole batches away just because I couldn't get it right. They really do improve with time, but I hope yours come out good!
@sarah, you are so right! I remember trashing mine years ago for the same reason. Chicken tamales were so hard to master! I’ll upload my chicken tamales video at some point!
Really hoping these turn out. I made my meat and red sauce today. I was surprise at how mild the dried chilies were. I expected a lot of heat, but I ended up having to add a few Chipotle peppers for there to be any spice at all. Over all it has a very nice flavor though.
@@tarazimmerman4806 yes, these are flavorful, but not super spicy. I also add chipotle or paprika if I want them hotter. Good call! This is why we do the taste test! I’m confident yours will be great because you made them to your liking!

Great easy to follow video. The only thing I do in addition is I cook the blended red chile in a few tablespoons of oil in a pot or pan and let cool until used. This is my mom's way. Thanks again ...and you have a nice calming voice.

Nice easier recipe. I’m Puerto Rican but still love tamales. Our version is pasteles but honestly, I’ve never been a fan of using plantains as the masa.
👋 I love PR. We went for our honeymoon 13 years ago. Ate at Metropol but mostly ate at the food court at viejo San Juan. I love pastel de carne and of course alcapurrias. So good! Can’t wait to go back
I love how you explain the process to us beginners. Where did you purchase the tool your using to spread the masa? Also., if you make lots of tamales filling the pot to the top, does it still take about 2 1/2 to 3 hours to cook?

You don’t want to stack any tamales. They will get smashed and will not cook. There needs to be enough room so that steam can flow freely. Unfortunately that means you may need a bigger pot or a second pot.
If you have to cook a couple of batches it’s good to know that tamales stay really warm in a good insulated ice chest.

Is it better or does it matter to put the masa in the refrigerator and for how long do you put that in?
Fresh masa is best. If you can make it right before you need it, do that.
If you need to make a bunch and you’re not using it until the next day, it should be refrigerated.
It should be completely covered or wrapped in plastic wrap so it won’t dry out. I put my masa in a large bag made for food. Link in description.
Just remember that it will have to come back to room temperature to become workable. If it gets to dry or hardened overnight, you will need to add some liquid and that’s gonna be a tough chore.
I wouldn’t recommend more than one day in the fridge. It will spoil.
You can freeze it and it will last, but not sure how long.
At what speed to you whisp the lard and for how long ?
You whisk it until it’s creamy
My tamales come out good but you just helped me anyway because I have never made the filling a day before. I always make the fillings right before filling them, but next time I will make them a day ahead so they absorb more flavor!! Plus it will help with cleanup. When I make tamales my kitchen is a DISASTER!

For my English speakers: she asked if the masa and the uncooked tamales can be frozen. The answer is yes. I usually freeze the Masa 6-8 weeks max. The uncooked tamales can be frozen up to three months.

@@denna0028 no hay ningún proceso adicional para la masa. Solamente si se tiene que esperar un buen tiempo para que llegue a temperatura ambiente. Se puede tardar bastante tiempo. Aseguren que es la masa éste fácil de manejar.
Los tamales congelados se pueden poner en la olla congelados. No se tiene que esperar.

Question for you, can you show a picture of how you stack tamales in Pot?
Not sure I have one, but they are stacked with the open end up. They are not laying down, but rather standing straight up. You also need to cover the top of the tamales with aluminum foil. This reduces the chance of liquid entering the husk. If water gets in, it will shrink your tamales into a ball and ruin them.
Another question, the recipe is just for the 2.5 dozen. So I would double all of the ingredients for your recipe@@gringogarcia2296
Yes, the recipe is basically around 2.5 dozen. You can double the masa recipe or make it twice depending on your mixer size. Mine is a small 5 quart mixer and that’s why I make one batch at a time. As far as meat, about 3.5 lbs will render about 5 dz.
@@gringogarcia2296 I am having a hell of a time with the masa, I followed everything to a T, but my masa is extremely sticky and will not slide of my hands. I have been told that a way to check is to take a little ball of masa to see if it floats in a glass of water, well I tried that and right to the bottom it went. That was after literally kneading it for almost 2 hours. Am I doing something wrong. Any suggestions, they color is wonderful.
You’re gonna have to add a little more dry ingredients and if you’re doing the float test, you’re gonna need more fat content. I don’t know if I believe the float test 100%.
In my opinion, all you need is a little more dry masa. It’s OK that it’s sticky.
Can I use beef
You can try shredded beef. It won’t taste the same, but might be good. 🤷🏽♂️ beef is not traditionally used, but I do make a
Tex Mex beef tamale using ground beef. It’s seasoned much differently.

Not at all. If you want to add spice, you can mix in some chili de arbol or chipotle

I attempted last night failed! Not your recipe....I just could make my masa float....I see you didn't check it to float...
Just the taste...what if u don't have a kitchen aid mixer....how long for u to mix?
Oh no! So I don't do the float test, not because I don't trust it, but because my masa always releases with this recipe. You can use a hand whisk or a hand mixer.I whip the Lard up until it's super creamy and light. I think that's the key. You are integrating air into the masa. Why do you say yours failed?
When the masa doesn't float, it means there is either not enough lard or it's not whipped enough.
PRO TIP: If you have an instapot, you could test the masa. make 1 Tamale and steam it for about 20 minutes. It will be soggy at that point. Place it in the freezer and let it set. Once it's set, place it back into the instapot for 12 minutes. Let it rest at room temp and taste it.
