- To bring you this easy recipe for tamales, I prepared two different fillings, refried beans and papas con rajas. I prepared both fillings using manteca, but to make it vegetarian, substitute the Manteca for vegetable, corn oil, or shortening. During the holidays, this recipe will be useful due to high meat prices. You can also use this exact recipe for beef, chicken, or pork tamales!

Houston here. U show foil in center of pot but you never mentioned add water to the bottom. And should the tamales be on balls of foil also to rise it above the water? Aren’t they suppose to steam? These look amazing. Good video. New sub here
Most people don't need to be told to add water especially because she said to steam them. These look amazing. I'm going to try a batch with this masa.
Add about 2 cups water if your using steam on insta pot.

Those are really nice looking cornhusk, where do you get those from? I am trying to find some good decent ones and I’m getting really junky or small husk or else. They are very expensive. Can you share that with me where you get those from?
Look for them in Latin Grocery stores like for the Food City, Cardenas Market, Ranch Market are just to name a few.

Thank you I want to try this for Christmas Eve but I’m kind of scared.. lol.. Can you freeze tamales and then cook on the day you want or should you freeze them fully cooked? How would you reheat? In the oven?
You can do it either way. I have frozen the uncooked tamales when there were just too many to fit in my cook pot. Also, when there are just too many cooked ones I will also freeze in groups of 6 in aluminum foil and just steam them to warm up. When you want to cook the uncooked ones there is no need to thaw them out but it will take a little longer to cook because they are frozen. It is great to have these extras in the freezer to use at later dates.
I freeze them uncooked and steam them the day of. They taste better than freezing them cooked.

How do you know when the corn husks are soaked enough and ready to use?
They will be pliable and easy to fold.
What would you suggest instead of manteca? I have family that doesn’t eat beef or pork 😫
I use vegetable shortening as an alternative.
My used olive oil.

Is this really wax paper or is it parchment paper? Would the wax come off onto the tamale? Thank you just curious. I’m new at this and I go crazy over tamales I eat them any chance I can. I found one brand that is so close to homemade that I buy them and eat one a day for breakfast lol 😂 however I want to try making them myself to save money and really honestly to have more on hand because the tamales I buy only come with 6 in a pkg. I go through one pkg every 6 days 😂
