How to make Red Pork Tamales Authentic and Delicious recipe! 🤤🤤🤤

Nothing is better than homemade tamales right out of the steamer. My mother has been making her pork tamales for as long as I can remember. It became her tradition every holiday season. People started requesting them, and soon after she started selling them every year during the holidays. She makes the best tamales with freshly milled corn masa straight from the Molino (mill). She then would spend countless hours hand-mixing her freshly ground masa and simmering her pork roast with fresh spices ground in her molcajete. The salsa is made from dried chiles, tomatoes, and fresh spices. 🤤🤤🤤
I know not everyone can get fresh ground corn masa so I made this recipe in a more simplified manner so you can give it a try! Let’s make Red Pork Tamales! Everyone deserves to try tamales right out of the steamer!
Shredded pork meat:
6 lbs of pork shoulder roast with the bone
1 medium onion
I head of garlic
4 bay leaves
1 tbsp salt
1 tbsp chicken bouillon powder
Red Chile sauce:
12 guajillo chili pods
5 ancho chili pods
4 tomatoes
4 tomatillos
1/4 piece of onion
6 garlic cloves
2 tsp cumin seeds
1/2 tbsp tomato bouillon
Masa:
6 cups Maseca instant corn masa for tamales
5 cups pork broth
1 1/2 cups of lard or shortening
5 tsp of baking powder
1 cup of red chile sauce
You will also need:
1 lb bag of corn husks
1 tsp salt
1/2 tsp black pepper
A giant steamer and a blender
This recipe makes 30-40 tamales. Depending on how big you like them! I made 30 giant tamales! 🤗

I have been looking for this recipe for so long. I used to pick up bread for a restaurant at an old bakery and the mother of the man who made the bread used to always feed me these tamales! The masa on these looks so perfect!! We once made tamales from leftover turkey. You should try that, maybe you'll like it. We make em spicy so you couldn't really tell it was turkey. It was like spicy chicken.

I just made my masa exactly as you said and it passed the test first time.. I’m so excited and I tasted it and it was so good. I would not have known you can taste it before it’s cooked. thank you so much for sharing your recipe. I’m just now putting them on the leaves. I want to make them for Christmas Eve and I think you can freeze them but can you freeze before and or after cooking?

Your recipe is detailed and easy to follow. Using the Kitchen Aide mixer made making the masa easy. Too bad I do not have one and will have to use a hand mixer or mix the masa by hand. The bench scraper is also a tool which helps spread the masa. This, I do have. Thanks for posting this video. ❤
i saw you put 2 cups masa with the lard then you added 3 cups more. 5 cups. when did you add one more cup of masa?

Depends how spicy but I would do about 10-12 chiles for a medium heat

To quick reheat the next day, make a "steam blanket" from a paper towel. First, unwrap the tamale. Grab a full sheet paper towel, fold it in half and run it under the faucet. Wring out most of the water and use it to cover the tamale like a baby blanket. Now put it in the microwave for 30 seconds to a minute (2 minutes if frozen) and the tamale will steam instead of dry out in the microwave. The "steam blanket" method works for next day burritos too. And don't laugh, I use the steam blanket method for reheating Quarter Pounders the next day (because I like to get the BOGO special) Great for reheating one or two tamales to have with your eggs at breakfast.
Hey, you notice the %$#@ that microwaves fish in the employee lunch room? Teach them the steam blanket method so their fish doesn't stink up the lunch room.

In my experience, the lard was either not good, or was not whipped enough before adding the rest of the ingredients. I do not recommend using the armor brand.
Where is the exact recipe for the masa? Also, if the olla is full of tamales, how do you add more water, and how often do you add it?

You may need to add more or less broth/ masa for tamales
And continue kneading for additional 5-10 minutes
