For those who likes chiffon cake and has no tube pan/angel food pan, this might be the recipe for you. It has a soft and spongy texture like chiffon cake. Wish you success for making this cake.
Orange Sponge Cake
4 Large Egg Whites (120 grams)
1 teaspoon Vinegar
120 grams Fine Sugar
4 Large Egg Yolks (72 grams)
120 grams Plain Flour
1/2 teaspoon Salt
30 grams Oil (30 ml.)
40 grams Fresh Orange Juice (40 ml.)
1 tablespoon Orange Zest
Food Colouring (optional)
Pan Size: 18 cm
Oven Temperature: 150°C for 35 minutes, 170°C for 3 minutes

Michael Lim Hi if suppose I want to make a bigger cake if I double the quantity of each ingredient is it gonna make a difference?
I doubled the recipe and it worked for me but baked for 45min.

I don't actually prefer watching baking/cooking tutorials but when Michael Lim's video appeared on my list I got curious to watch it until then I always check and make his recipes and soooo loving it!!! I love his videos no annoying music and no nonsense and most of all I LOOOOVE his recipes sooo yummy. He's precise and very clean. Your the BEST Michael ❤️ you inspire me a lot. After vanilla, chocolate and coffee sponge cake. I tried orange sponge cake recipe. It requires a little more baking time. Maybe bcoz this one has orange juice instead of milk. Anyway it turned out tasty. Didn’t have orange food color but it smells and tastes like orange. Thank you Michael lim. I am your fan now. My lockdown time passes by trying new cake recipes. Next is banana cake :)
Baking time varies depending on each oven..
I meant in comparison to other cake recipes (vanilla, chocolate, coffee) I tried of Michael lim this orange one took little longer. I used same oven and same settings for all of them.

Love the fact that u keep everything soo clean.not a splash of batter or flour anywhere on the working space.even the bowl u made the batter in. U poured it till the last.unlike other videos.

I tried the cake and frosted it following your cake frosting videos and I hv to say.. I hv to yet eat a cake that was as perfect as this recipe.. the cake was the spongiest and very delicious.. pls keep on making more videos on decorating cakes using ur basic sponges so people lyk me benefit!!

My family love this cake I tried it with all ground almonds instead of plain flour and I also replaced the sugar with stevia. Plus I added the zest of four large oranges so light and fluffy it tasted amazing.

Just finish baking orange sponge cake a successful baking thank you for the recipe ! The first time I bake the raisin bread I fail inside is not soft I think I over knead it . Next time I try again .

Ur method is different from others. Normally I read from blog... It's either whisking whole eggs at once or separate and whisk both mixture before combining like chiffon cake method. Gonna try ur recipe some day.

I highly recommend everybody try this recipe. Made this delicious zesty orange cake twice, and both times it was a great success with both young and old. Thank you Mr Lim, please keep sharing your knowledge. Would it be possible to double the recipe? What pan size should I use? What would the cooking time be?
Use pan size 24 cm, if you want to double the recipe. Baking time slightly longer, you just have to keep an eye on it.
