Mama Cho's Stir-Fried Anchovies (Myeolchi Bokkeum):
3-4 hot peppers, chopped small
3 Tbsp olive oil
Salt
Black pepper
2 cups dried anchovies
2 Tbsp plum syrup
2 Tbsp honey
1 tsp sesame oil
1 tsp soy sauce (optional)
Stir-fry peppers in olive oil, with salt and pepper. Add anchovies.
Reduce heat to medium and mix for about 5 minutes until crispy.
Add flavorings (plum syrup, honey, sesame oil, soy sauce)

the plum extract is called maesil and it's good to have around, not just for sauces and marinades but it also makes a great drink if you mix it with water (1:3 ratio). it makes good cocktails too.

In our home, we mix nuts (almond, walnuts) with meyolchi. It gives extra savory taste and crispness!
And because we usually used whole shishito pepper(꽈리고추), it feels somewhat fresh that use sliced pepper for this.

I love anchovies and I love side dishes like this a lot, so this looks really good.
Her suggestion of using soy sauce if you like things saltier is probably what Ill try when I make this. I have some serrano and shishito peppers, ill likely use more of the shishito as I like the flavor of them more.
Our H-mart here alwats has those big bags of anchovies relatively cheap.
I feel like Ive seen that plum vinegar (?) syrup in some form as well.

Very interesting! In my naivety, I had never even considered that this dish even required preparation; thought they just came out of a bag pre-fried and seasoned.
I really love Korean food, but sadly it's nearly impossible for me to find now that I live in WI. I used to live in Seattle a decade ago and I still really miss the ocean, the mountains, and the prevalent Asian influence on cuisine and culture.

Such a great series, i wish we had done something similar for my grandmothers cooking. My Aunts and mom tried to learn from her, but it was so hard to learn from someone that cooked dishes for their entire life and they don't even measure anything and its all made from memory and feel.

Cool...I'm gotta try this sometime. We cook it by just steaming it with soy sauce and some oil. on a plate. It's good and simple especially if you don't like spice.

Hm. I wonder if this would at all be considered an Americanized version of the dish, or if Koreans really do make it with hot pepper? My understanding is that Korean food never really reaches a jalapeno level of hot...
it definitely does get that hot 😭😭 in fact i was devastated last yr bc there was a shortage of cheongyang chili peppers in korea and the stores here stopped carrying them 😭😭

Just looking out for your mom but it looks like she needs a better knife or needs to sharpen it. She absolutely needs to learn better technique for her non cutting hand. One wrong move and she's losing fingers. I'm sure she's been doing it that way for a long time but it still hurts me to see someone cut that way.

this taste absolutely amazing. my mom usually use tofu alongside it. that anchovies are full of umami flavour that burst your mouth away.
This actually seems so good and so versatile as a side dish, since you can just adjust what you mix into it at will.
