Well I had to look up your description here to see what exactly you were cooking in this pork dish? Because Google voice to text can't hear what you're saying not when you use it on your phone or in captions and they had that you were cooking something called 'throttle'! Which of course I'd never heard of and that's probably because no such dish exists! 🙄 Anyway it looks awesome!
I tried to do this once and my family loved it! Simple and easy on your part! Am doing this today a second time as family asked for it! Thanks for the recipe and teaching! Is it alright to add dried chestnuts? I like the flavour of them in my trotters!!!
Hi Roland, many thanks for this recipe. However, the Chinese white wine of 500 ml/2 cups a bit too strong. I tried out this recipe in preparation for CNY, and I will reduce the white wine in my next try. Cheers and keep up the wonderful recipes
About 1 hour 15 mins to 1 hour 30 mins depends on how tender you want the pork to be over Low heat. Bring the sauce to a boil then turn the heat to low to simmer. Happy cooking.
Hi, Roland. When u use black pepper corn n sichuan peppercorn, do u fried them first? So will be more flavorful?I always fellow but recipes, they are easy to understand.Thank.you.
Hi Jun Kiat. They are different. If you don’t have white rice wine, just omit it but if you can get hold of it, it would great as it can help to reduce any foul smell of the pork. Happy cooking!
Hi, I love your videos / recipes. Have tried a few of them and they are all spot on! I am wondering instead of using pork trotter, can I use a big piece of beef? I am planning my Asian Christmas meal and some guests do not eat pork. What do you suggest? Many thanks in advance
Hi Brenda, you wanna try our braised beef recipe? ua-cam.com/video/bjn_AOkcpVk/v-deo.html We used the sauce to make braised beef noodles but you can omit the noodles if you wanna have other sides like whipped potatoes
As others have mentioned, this is the hock, not the trotter. The trotter has a lot more gelatinous connective tissue and skin so the recipes reflect this.
Hi Grace. It’s better to use the same ingredients as ours. Sake is also more expensive I think. At least in Singapore it’s a lot cheaper. Enjoy it as a drink. Happy cooking!
was just curious... is there a difference if we just add the sugar directly to lots of water and boil it as opposed to caramelizing it with a tiny amount of water first?
Hihi. Remember the part whereby we cooked the sauce without the pork and added cornstarch solution? That helps to thicken the sauce. After you’ve blanched the pork. Just remove it and wash. Didn’t think showing that is needed because it’s rather self explanatory. As for playing, you can plate it however you like, you can also use ours as a guide. Basically just drench the sauce over the pork before you serve. Happy cooking!
Hi Lily. I’m sorry we don’t have a written set of instructions currently but for your convenience, we’ve listed the ingredients in the description box of this video. You can prepare your ingredients first using the list then refer back to this video for the steps. Play again before you cook then play , Pause and playback as you cook whenever necessary. Hope this helps.
@@lilyk5330 just cook it the same way, but in a regular pot, bring to a boil and then cover and simmer until it's tender. Probably take anywhere between 1-2 hours, depending how tender you like it. Afterwards, reduce the sauce and you can do the cornstarch liquid like he did.
discuss a little the background of the dish to teach the viewers about how that dish exists in china today. Do this at the start of the video where you say what food you are going to make.

Hi Cally. You can dry fry them first to make them more fragrant but we didn’t do this step for this recipe. Hope this helps. Happy cooking!
Yummy yummy my favorite 😻
Happy cooking!!
Hello Mr Bald, i am a big fan of you.
Can you pls share chinese pork bbq recipe pls
Can't it pork looks yummy.👍👍👍👍😍🤗✌️🌈🎉👌
Thank you so much
Hi Roland, can i use sliced pork trotter? Also, i only have cinnamon powder, how much to use for it?
When I was a child, we used to have hard boiled eggs in our. Is this the same type of dish? If so when would I put in the eggs?
Yes it’s similar. You can cook some hard boil eggs and add the eggs in after the pressure cooking part. Happy cooking.
hi, can i substitute the chinese rice wine with shao xing wine? if so, what is the proper measurement for shao xing wine?
Hi Jun Kiat. They are different. If you don’t have white rice wine, just omit it but if you can get hold of it, it would great as it can help to reduce any foul smell of the pork. Happy cooking!

Yes, pork knuckle, not trotter. But looks delicious.

How long to cook in normal wok?
Can we use a slow cooker Roland?
Can i use cooking sake instead of chinese rice wine?
Hi Grace. It’s better to use the same ingredients as ours. Sake is also more expensive I think. At least in Singapore it’s a lot cheaper. Enjoy it as a drink. Happy cooking!
Chef Roland where did you buy that pressure cooker. What’s its na,e /brand?
May I know the brand you are using for the Chinese white rice wine, thank you.
was just curious... is there a difference if we just add the sugar directly to lots of water and boil it as opposed to caramelizing it with a tiny amount of water first?
Good !
Thank you so much
Do you reduce the sauce with the lid covering the pot?
definitely interesting
Happy cooking
Wow
You missed a chunk of this vlog. From taking pork out of boiling pot, to pork looking edible on a large plate. How did you make the sauce?
Hihi. Remember the part whereby we cooked the sauce without the pork and added cornstarch solution? That helps to thicken the sauce. After you’ve blanched the pork. Just remove it and wash. Braised pork, yum
Thank you so much
This is called pata tim in the philippines
Hmm yum! We miss the food in the Philippines 👍👍👍
Pata de Timo ?? 😜
why does mine taste so sour? there's no vinegar..

@@spicenpans Thanks for the reply. I love your recipes, but, to be honest, the lack of written instructions tends to discourage me from making them.

this is similar to a standard lor recipe, with the exception of the szechuan peppercorns+wine and no blue ginger.

Not a trotter , it’s a hock !!!!!
Agreed. Trotters are the feet.
@@lilyk5330 for sure , nice recipe though

My favorite! Some said, spring onions need to light smash then tie. More Aroma release... 🤔🤔🤔
You’re absolutely right.
我还记得年轻时的我半夜三更啃猪蹄。😄
那些年我们年轻的时候。
Isn’t that a hock.
It's a pig foot
Yes
You can use any part. Even pork belly
*it's pork hock not trotter.*
Sorry but what is a PIG TROTTER?? i googled pig trotted and pigs feet came up. But this doesn’t look like pigs feet. Is it??
Ok o
discuss a little the background of the dish to teach the viewers about how that dish exists in china today. Do this at the start of the video where you say what food you are going to make.
Erm... That's actually not a pork trotter. It's a knuckle or hock...
