- To me, the ultimate comfort food is Meatloaf. And my favorite way to prepare it is out on the Weber Kettle where it can soak in some wonderful smoke.
Meatloaf Ingredients
5 lb Ground Beef
3 TBSP BBQ Sauce
3 ½ tsp Kosher Salt
4 tsp Granulated Garlic
4 tsp Smoked Paprika
2 tsp Coarsely Ground Black Pepper
1 small Onion Grated
1 medium Carrot Grated
2 Eggs Beaten

When I was dating my wife, her dad put in hard-boiled eggs to stretch the meat. I loved it-so much so that 30 years later, I asked my wife to continue to do it each time she made meatloaf.
This is the way I’ve been doing meatloaf for a few years, I even have a similar pan . I like mixing in a pound of Italian sausage 👍my wife won’t cook a meatloaf in the oven anymore 😂
I like adding bell pepper and mushrooms to my meatloaf...

Growing up we always had meatloaf made with yellow mustard and larger chunks of onion. Something about that combination really hits my nostalgia spots in the best way.

I like your two rules. I have one that's probably a subset of your first one, but I really like the challenge of learning new techniques. Lately I've been having fun with live-fire cooking of things like ribs on my Kamado Joe that are typically cooked low and slow.
I like to put some onion soup mix myself.
I did this last Monday night on my kettle, using pecan wood. Sliced it thick and made open faced sandwiches for lunch the next day. Absolutely wonderful.
My Mom would always put shredded carrots and diced celery in her meatloaf, it became almost like a family joke, as others made fun of her for doing it, but we always thought it was great, never so anyone do it, I'm glad to see use carrots

I make my meat loaf with green pepper onions and jalapeno and mix 50/50 pork sausage to ground bee I caramelize my onions first, its come out amazing. thanks for sharing
never go wrong with a smoked meatloaf. nice job RY your right about mixing it. i never once ate a tough meatloaf. or meatball by over mixing. when i had my food truck i made 50lbs of meatballs in a meat mixer. no one ever said they was tough..

I did a turkey meatloaf not long ago. I added cheese to my mixture. Came out right good. I like the addition of Adobo Sauce n peppers you did. Will have to remember that on the next one i do.
I’m doing a meatloaf tonight! I mix ground pork and ground beef and bacon. It started as kosmos q recipe, but I’ve modified it some over time. Love smoked meatloaf!

@@sbromley6739 I just put ground pork in instead of sausage. I use less onions. I have used a sour dough bread crumb before, which seemed good. I use different seasonings, and a couple times I used just salt pepper and garlic powder instead of bbq seasoning which I thought was good too. I think I’ve added brown sugar, or used extra brown sugar. I cant remember everything. I havent done it the same way twice I dont think. It’s kind of turned into a use up the meat in my freezer recipe. But more or less it’s based on the kosmos recipe.
I imagine the sandwiches leftovers were out of this world.

I put ground pork - about 30% pork - in and a sprinkle of mustard powder to mine (along with all the ingredients you have mentioned)
Try making a ketchup, yellow mustard and brown sugar glaze for the top. I can't wait to try this on the weber kettle

I use cornbread stuffing mix instead of breadcrumbs. Delicious. And beefy onion soup mix
Try adding a cup of raisins to your meat loaf. My grandparents used to make meat balls with raisins for a spaghetti dinner.
I always add a table spoon of tumeric and two teaspoons of cumin...I use freshly ground habenaro or scorpiob peppers..but I use hot peppers in Everything. A shot of worchestershire sauce never hurts either.
I use half ground beef and half spicy pork sausage. Seasoning varies with mood.
I enjoy adding a few caraway seeds to my meatloaf otherwise very similar to this recipe!

I always avoid Sweet baby Rays. The first ingredient is high fructose corn syrup, then sugar then corn syrup. There are a couple of Colorado made sauce that is good for bottled bbq sauce.
Awesome video Ry. I made meatloaf with 90 percent lean beef. I added diced apples to add moisture as they broke down in the tin. Instead of onions I added shallots and spring onions. Do you have any new Teriyaki bbq recipes? Thanks.

interesting! we usually only make a 1.5lb meat loaf in our oven.. i'm guessing that might cook too fast and not let the outside set?, so maybe next time we have company over we'll try it with 4lbs or so.
My wife makes individual meat loafs so everyone gets lots of crusts.

I don't have 3 hours to make meatloaf. Takes an hour in the over at 375. Do you think it would be done in an hour on the Weber at 350 - 400?
Temp is temp, so if yours is done in that time usually it should work. Only thing to consider is the amount of meat.
Onion soup mix
I cheat and use my kitchenAid mixer for meatloaf. Set it on low and let it go for a min or so.
My wife uses oatmeal instead of bread crumbs and put chees in tthe middle
perfect view on 'Cooking Rules ' ...Iv personally found that 99% of those so called Rules to be Bogus... Meant to sell cook books no doubt.

@@CookingWithRy First it is one of the unhealthiest sauces ever made, second it really does not even taste good. I won't waste my time and money on making BBQ than pour low-quality sauce on it. So there is that, but to each their own I guess.
