    I wish I would have had those options when I was younger. I've had many weber grills in my life and well worth the money. I have a weber gas grill that is incredible. And a pit boss vertical smoker that is awesome for smoking. Can't lift charcoal anymore. Great video.

    It’s great to see so many mods in one video!!! Most people show the unboxing of the mod. Then the mod on the kettle. Then ask what do viewers want to see cooked. Then tell everybody how great that last mod was while talking about a new mod that they think would be a game changer!!!! LOL

      @@MrFlavorsmith The pizza cooking method looks a little clumsy to me reaching through the door. Can you simply place a grate on the top of the rotisserie attachment and place the stone on top so you have easier access? This would also provide more heat to the top of the pizza and be able to remove it easier. Is this possible?

      For sure, it’s a little clumsy through the door. But I played around with it a lot this weekend and when you use the griddle on the top, just below the lid it gives the top of the pizza a nice even cook and only takes about 3 mins for a very decent size full pizza. I’m hoping to do a video on it this weekend as long as it’s not 105 like it was this past weekend! So stay tuned…. I have a great pizza full of flavor! 😎🍕👍

    I have been using the Weber kettles for over 30 years and I love them. They have one big fault and that is the fire grate where you put your coals. I live in Greece and very few places sell briquets. I use lump charcoal. It burns better and hotter. The problem is half of your fire winds up falling through the grate. The spacing is too large, and it also tends to warp and burn out quickly. They need something like a stainless steel grate with tighter spacing. Myself, I have covered the fire grate with thin fire bricks leaving enough spacing between them for air. Once this gets going it is near perfect. The bricks really hold the heat and if you need to add more charcoal, it lights immediately.

      That is very interesting about the selection of charcoal you have in Greece. I did recently see a solution to your problem and I will get it and include it in an upcoming video… it’s a stainless steel coal grate made just for lump coal and has a small square pattern that is much tighter to prevent small coal from falling through.       I have taken two fire grates turned 90 degrees to each other, then used hog rings to lash them together. Makes for a much tighter surface.

    For the Santa Maria attachment for my 22-inch kettle, I sometimes use the lid from my 18-inch Weber as a smoke dome. It fits perfectly. (I have the original SM attachment from Gabby's Grill, but it should fits the Only Fire or Titan version. Some smaller SM grill attachments are too narrow for the lid). I also use a Dongftal cast iron charcoal grate that I obtained from Amazon to better protect the bottom from the heat generated by using wood logs as fuel for traditional tri-tip cooking.
    I also have that same table to convert a kettle into a performer so that the grill can better handle the added weight. That table is fantastic. It's as durable as the table on my Weber Performer, and I've had it now for almost 18 months.
    That Santa Maria attachment, heavy grate for wood logs, and support table turn the Weber into a perfect grill for making traditional wood-fired paella, as the all-important temp control is simple.

      ​​​​@@MrFlavorsmith The inverted Vortex with the SM is a brilliant idea. Never thought of that, thanks!
      I purchased a Stanbroil stainless griddle but it has a hole in the middle. I think I like the griddle you have as it allows for better airflow. Because I didn't like the airflow, I figured maybe find a griddle that fits my SM attachment. That would allow plenty of airflow and makes it a breeze to add more fuel But the griddle needs to have raised sides. I found the perfect one. Oklahoma Joe's 7577447P04 17 inch griddle is a perfect griddle for the SM attachment.
      BTW have you looked at Only Fire's Charcoal Firebox set with ceramic deflector that lines your grill with ceramic bricks basically turning it into a faux ceramic cooker. I'm looking at it. It along with my temp regulators could be a game changer. I mean, I already have a tricked out WSM so it's not that I need another accessory.... But I can't help myself! 😂😂😂

      @Nclght agreed, a griddle really does need to have raised sides to work good for almost everything but hey this does work for a lot of things besides rice and noodle stuff. I think having a BIG griddle is awesome especially for a family!
      Yes, have that only fire stone system on my radar to get and test out! 😉
      This stuff is addictive but as long as we are making good food it’s ok! 😎🥩👍

I love the art and the dance of Charcoal, it reminds me of the outdoors and growing up and relaxes me and I love Flavor Stacking wood smoke flavors with other spices and sauces! 😎🥩👍

    Great video. I have a Weber 22 master touch, I think you called it. I still haven't quite mastered the fine tuning of the temperature yet, but I think most of my issues have been due to me being a bit impatient when it comes to cooking, and sometimes, regardless of keeping the vents all the way open, my temperature drops prematurely. Oh well. I usually just stick to the basics which is chicken and ribs (NOTHING like chicken on the charcoal grill) but also the normal burgers and sausages and dogs too. I am going to get one of the rotisserie attachments this week, and have been looking at a couple aftermarket companies that make them a bit cheaper than Weber does, and I have seen a few reviews and they look like they are well worth the money. Again, great video and I'm using mine today on this gorgeous Saturday.

      So happy you liked the video! If you are having temperature drops and both vents are fully open, more then likely you need more charcoal to start with. Use a Full Size Chimney to start your coal and make sure you fill it up to the top and then some. A full Chimney full should get you through and cook for steaks, burgers and quartered chickens. The only time I start running low on heat using a full chimney is when I use my Santa Maria Grill Conversion and I place all the coals flat across the bottom… blanketing the bottom fully. This spaces them out and they lose their heat the quickest.
      I’m actually doing a video this weekend on El Pollo Loco Spinning (Rotisserie) Chicken with Lime Juice Injection this weekend and should have it on the channel in a few days.

    I own the Onlyfire pizza attachment. Not the one here, but the square one. It doesn't require use on the grill grate, and retains heat better, because it's insulated and the top is low enough to the pizza to allow radiant heat to cook the top of it. The stone is also flush with the bottom on the opening. It also has handles to pick it up to easily add fuel.

      Oh very interesting! I did find the clips that came with it that makes the grill flush with bottom opening. Going to try it out with the Griddle at the top in the lid to hopefully provide better heat distribution to the pizza. Might make a video on trying it for the first time soon.       It truly is a great cart system. I was blown away by the build quality, I have a ton of manufacturing and fabrication in my background and was truly impressed for the low price. And because the sides are coated steal they are magnetic so I used magnetic hooks to hang all my tools, then I got some double sided 20” magnetic bars to hold my griddle tools and when not using it as I griddle…. I just put the hooks back and hang the BBQ tools once again. I really like the wheels also on it and I’m very picky about this area. The BIG wheels are great, and believe it or not the smaller one are as well for my use on my concrete backyard. 😎🥩👍

    Cool video. I love the versatility of the Weber Kettle. I have an offset, and I still use my kettle 90% of the time for smoking, just because it uses barely any fuel in comparison to the offset. I can load up charcoal in a snake and add chunks for flavor and then not have to mess with fuel for up to 8 hours, where as with the offset I'm messing with it every 30-60 minutes adding splits. Of these mods, I have the vortex and the weber baskets. I would definitely like to get some of those other things like the rotisserie and the griddle. My absolute favorite mod though, is 2 fire bricks. You can get a 6 pack of fire bricks for like $25, and with just 2 of them, you can set up what I like to call adjustable 2 zone cooking. Think of the bricks like hands on a clock. you can put them at 3 and 9 and use half your grill for a hot zone, or put one at 9 and one at 12 and use a quarter of your grill for the hot zone if you are only cooking something small and you don't want to use a ton of fuel. I also set up the end of each brick about a couple inches away from 12:00 and have the other end of one brick touching the grill 9 and the second touching the grill at 3, put a snake of charcoal between the bricks and the wall of the grill, and then foil up the rest of the charcoal grate. It ends up being similar to what you do with the vortex and that big carbon fiber pan. I can really dial in low steady temps that way. Last one I want to mention is getting a second charcoal grate to sit perpendicular and create checkered size holes. This stops your charcoal from falling through until they are almost completely used up. It definitely helps conserve fuel.

      Going to have to check out these Fire Bricks for sure! I saw a company that makes a thick stainless steel square coal grate just for this and am trying to hunt them down to get one. To this point I really haven’t needed one but you never know you need something until you no longer have it or until you have tried it. Thank you for the BBQing insights! 😎♨️🥩👍

      Honestly it’s truly amazing, I compare it to an Ar-15 gun….there are a ton of aftermarket products for these that allow you to build anything you want. I still have many items I’m getting! 😎🥩👍

    Great video. I do recommend the Weber Wok. Use the standard coal trays or the vortex system ( I do not have) to keep that temp up on the Wok.

    Solution for the pizza stone elevation - companies sell clips that elevate the grill grate so that it's essentially flush with the top lip of the grill bottom. Also, second the recommendation putting the griddle on the top rack of the rotisserie/pizza extension to deflect those flames so they're closer to the top of the pizza. The kettle lid is too tall and you'll likely get uneven cooking between the top/bottom without something like this

      I cut a piece of steel to put on top then added some ceramic blanket insulation from amazon on top of that. Worked really well maintaining temps 800 to 900 degrees. Make sure you put some coals under the stone or the bottom crust wo😊n't crisp very well.

    The only fire pizza/rotisserie should have come with clips to raise the cooking surface to flush with top of the base section. My next purchase is definitely going to be that steal griddle, I really want the onlyfire ceramic kit. Looks amazing

    Onlyfire should have supplied the clips for the pizza stone mod. They'll raise your grate so that it's flush with the bottom of the pizza door. Also, if you turn your grate upside down, you can more easily add wood or charcoal because the grate flaps are open in the down position. (Bank your fire in the back). No need to remove the lid and lose all your heat. And definitely use the griddle to concentrate the heat over the top of the pizza. The pizza you make will rival any restaurants wood fired pizza!

      You just have to cut the two metal handles off. This can be done super easily with a 4” Grinder with a cutoff wheel, or a dremel with a Diamond Blade for cutting metal or even a Metal handsaw. I used a 4” diamond blade on my electric porter cable hand grinder/saw.

    Great video. How do you find using the OnlyFire rotisserie and pizza combo ring as a smoking extender? Do you find temps harder to control or have a lot of smoke leakage? I have the same one and have debated on whether to use it with the Onlyfire Ceramic charcoal basket to get the protein further from the ceramic deflector plate.

      I have not had an issue holding temps when using snake method for coal and the heat diffuser pan I use with the rotisserie ring. That being said I’m going to get some Heat Seal tape to put on bottom and top of ring and maybe pizza door just to see if there is any difference and it’s maybe even easier but I have been good so far.       Yeah I think so. I mean I stack the Rotisserie Ring under it sometimes. I would just only do it if the kettle was on sturdy cart like mine, if it’s just on the three legs I don’t feel it would be stable. Would be kind of cool to smoke a bunch of stuff on racks below in a chamber while hanging ribs from the top chamber? 😎🥩♨️👍

    The built in thermometer is only on the master touch Kettle and more expensive models. I bought the master touch myself because it was only$55 more than the premium model which is the one that has the ash can underneath of it there's a baseline model that only has what looks like an upside-down baby moon hubcap. The premium model is the least expensive model with the ash can at $220. $55 more which is the difference in price from the premium model to the master touch I paid $275 for that on Amazon for the black color one all the other colors are $300.25 more. I figured black would show less stains from cooking longer so I got that plus it saved me $25. Anyway for that small difference in price what you get is a built-in thermometer, the grate that you show there with the removable Center and the two hinged sides, taller legs and the two charcoal baskets plus a heat resistant handle on the top vent allowing you to move the vent without getting burnt. The baskets allow you to put your charcoal on the right and left side and do indirect cooking in the centre. You get all of those features for only $55 more. In addition to grate is much thicker than the great on the other models and it's also made from stainless steel I'm speaking of the cooking grate. The grate itself is anywhere from $70 something for the Weber model and for the aftermarket models they are $56. On Amazon. So you see the master touch is a much better value because you get that grate which would cost you more to buy separately and you wouldn't have the built-in thermometer, the charcoal baskets nor the taller legs that you get with the master touch version. It doesn't make much sense to buy the premium model for $55 more you can get all these additional features making it a much better value for your money. I'm 6'1 and I really like the taller legs. I also really like the charcoal biscuits I use them most of the time it really saves on your charcoal and it allows me to do stuff like a 17-hour 20+ pound brisket cook at really low temperature 225° -250°. Get a high temperature self stick gasket on Amazon $15 and apply it to both the Kettle and the top. This allows you to control the temperature with zero fluctuation until the coals burn down. Leave the top vent wide open and control your temperature with the bottom vent. When you can no longer control the temperature with the bottom vent because it's already wide open and it's too cold for the temperature you set it that's when it's time to add some more charcoal. I'm able to set my Kettle at 350° and it holds dead level for 2 hours or more using the charcoal baskets after having applied this self-stick gasket to both sides of my Kettle the top and the bottom. It makes a big difference plus your Kettle totally silent when you open and close it and it also prevents you from accidentally chipping the porcelain by banging it together a little bit too hard when you're opening and closing it. If you chip the porcelain it will begin to rust, especially if you live near salt water. Hope this helps Y'all.

      Plus as an fyi, in the Boy Scouts cooking in cardboard box ovens each one of the king type charcoal bricks is worth about 25 degrees of heat and it still seems to work somewhat for grills if you’re offset roasting.

      It has two steel handles on it that I took a 4” electric cut off saw/grinder to to cut them off but they are not crazy thick so a metal hand saw would work also, or even a heavy tidy Dremel Saw with a Diamond Blade for cutting metal would make quick work of it!
      I want to note, Weber does make a system like this as well. Basically it’s a Weber brand Vortex with a Metal Diffuser Pan/Ring around the Vortex. I discovered it from Weber after I made mine. I have not had my hands on Webers version but I do think it’s a lot smaller in Diameter, the 20” pan works really great and so for that reason I prefer my set up. 😎🥩♨️👍

    Great video. I just picked up the Performer at a garage sale. That last attachment, the smoke barrel, can you attach the cooking grill to the top of that barrel to lay ribs flat rather than hanging?

      Ok I just confirmed that there are 3 different levels(set of pegs) to rest a grill on inside the Barrel Smoker. 1st at the very bottom just below the opening of the door, 2nd at mid level and 3rd at the top just bellows the inside rim so when you put the hood on the it will hold anything you need. You can make it even better by adding the Onlyfire Rotisserie/Pizza Ring to the top of that and it will give you 1 more rack or just a lot of height for the top rack of the barrel…your performer is a stable enough platform to support all of this but I would not do it on a kettle just using the three legs… only a cart model.

Aldo it comes with a bunch of small hooks to hang meats from, they work ok but if you plan on hanging hooks… you might want to get a set of larger ones so you can easily double hook them.       Yes, it came with little red handles, I used a 4” electric cut off saw/grinder with a diamond metal cut off blade but an abrasive cut off wheel would work as well. A dremel with a Diamond Metal Cutting blade would work as well…or even a metal cutting blade on a hand saw would work as it’s not that thick.

      Oh I see what you mean about it possibly warping. To be honest I think it may be possible if you get a lot of heat on it. I have only ever done a 2x1 Snake Stack as no more is ever needed when using the type of coal I use and the way I stack it. Now it may be possible that it would warp if you use a 2x2 stack or a snake pile that uses more charcoal but the 2x1 has not produced enough heat to warp it, just to change its color. For me…the pan has proven perfect for all my smoking needs thus far. 😎🥩👍

      I used grape seed oil to cure/season it. I would put it on a Paper Towel and use Tongs to rub it all around, then take another Clean Paper Towel and remove it quickly and let it cook in good with the hood on for a few minutes. I repeated this process probably close to ten times and it took me a little over 1 hour to do it. I just did the cooking side, I might do the same on the bottom to prevent rust. 😎♨️👍

      This is going to blow your mind, I did not plug them yet and am still able to control temps. But I would use tiny threaded bolts, washer and nut to do this. Putting the head on the inside so when you go to clean the inside bowl you don’t get caught up. I just have not needed to even worry about it ever but if I did have issues holding lower temps or maybe even tried to do a Cold Smoke with it… I would have to plug them up. But I have not experienced an issue holding 225f yet so it’s not been hot on my list to do. 😎🥩♨️👍

      Nah, it’s all very affordable stuff, that’s the reason I chose to use the Weber 22” Kettle Grill to start my channel, I figured it was something all people could relate to….especially if you are on a budget.       Nah, I picked the Weber 22 inch kettle to launch my channel for this very reason. I wanted to produce content on a system that everyone can afford so they could be inspired and follow along and create their own Flavorful food. There are tons of companies making extremely affordable accessories for this platform. Just use one of my links in the description and you will see.
      Yeah, in the near future I will be cooking on lots of other systems I have but this basically can do it all. Since so many people are into this, you would be amazed on what you can find second hand also on like facebook marketplace used. And not only that, this stuff will work on other 22” kettles from other companies… not just Weber. 😎🥩👍

    The attachments like the rotisserie and pizza oven or the Santa Maria are cool, but all the baskets and vortexes are a waste of money and space. They don’t do anything different than gravity and friction already does. You want a vortex effect, just make a pyramid of coals in the middle. Gravity will hold the shape. If you bank the coals on the sides, it does exactly like the baskets, but gravity is free.

      Oh you just gave me an idea…. To put it to the test and measure multiple points around the grill with a vortex and a pyramid. The reason I do like the vortex for wings anyway is that it allows the wings and especially the skin of the chicken to get crazy hot and crispy without burning them to char, it directs the heat to the middle…. Pushing the heat up the center and then bouncing off the hood and around down the ring of wings or ribs.😎🥩♨️👍

      That is only because I do not currently have their products. I figured most people would just be interested in the basic things that they can get that changes the Grilling Style or helps enhance the basic Grilling/Smoking that can be done on the 22” kettles. I look at the Spider products as more of advanced gear. I think an entire video series will be made of them in the future on the channel. 😎🥩👍

      Thank you. Honestly I thought it was one of my worst as I was recording it because it was over 100 degrees 🌡️out and the sun ☀️ was melting me 🥵. It was so hot I had to use my grilling/welding gloves just to handle all the stuff that was just sitting in the sun. So I was rushing and thought it was a mess. In the end I guess it worked out. Hey, I love gas also…. Actually use gas a ton as well, being a dad of two young boys and working all the time gas is nice and quick! 😎🥩♨️👍

      I bet it would work great for that as well! I will this, it makes cleaning up my cooks the next day a breeze…especially if I cover it with foil as the burnt parts stick to the foil and all that left is the rendered fats that seep through the foil underneath. Basically have a clean kettle afterwards and ready for the next cook in minutes. But hey, I use this system almost everyday so for me it makes sense. 😎🥩👍

      See… and there is the issue with not scripting your videos, I’m constantly saying the wrong thing. This video was especially hard as it was reading 105-107 during recording. I told my wife this was probably the worst video yet as I was crazy hot, overheating and rushing everything. 😎🥩👍
