Hey Varun, Had always enjoyed watching your channel. As a South Indian and someone who always has 2 kinds of powder for breakfast & lunch stored in the kitchen always. Just an advice, you can dry roast the chillies instead of using oil to increase shelf life. Also, roast some coriander seeds about 2 tsp to enhance the taste and that also gives a slightly coarse texture to the powder, as that is how Gun powder for breakfast is supposed to be. (Jaggery is rarely used)
I love gun powder. One day in a restaurant in Chennai, I asked for extra podi, three times over 4 idlis. Finally they gave me a big bowl of pudi with oil :) Never found the proper recipe. Definitely going to try this. Also going to watch your idli recipe

Just decided to try this recipe at home as I had run out of readymade podi powder. I must say, it was very quick and easy thanks to your explicit directions. I added a little black salt along with regular salt to give it a slightly tangy flavor. Turned out amazing! Thanks Varun!
Separately roasting will be better even at homes, that's how my mom used to every 15 days , even sambar podi, rasa podi are made to last not more than a month. They had lot of patience and dedication to cooking . Hence it used to be out of the world , so much love goes into it. Now it's a popular item eaten regularly in hotels , the gujjus relish it so much, this used to the best way of carrying idlis on train travels those days. Mouth watering.
IMHO we need not remove chilli stalks at first itself bcoz chilli seeds will spill all over the pan while saute and becomes black before chilli is roasted fully. We can remove just before grinding powder
Traditional Tamil Nadu version does not include Sesame seeds and Jaggery. Plain mulagai podi is the most traditional version roasted with a minmum amount of gingely or coconut oil, followed by the Curry leaves and tgen the sesam3 seed version. Traditionally, sesame seeds are used mainly during Pitru days like Amavasya, or any thithi days for ancestors.
Hey,I’m new to Indian cuisine and I’m afraid I’m lost. Can you suggest how I might catch up to all these terms I’m unfamiliar with and where I might find some of these spices? Are curry leaves typically found fresh-perhaps in the produce aisle? I wish I could smell those spices roasting! 😊
First google what all ingredients or recipe you see you will get lot of information , also get one Indian cook book it will have some basic information .indian cuisine is very vast with lots of regional cuisine

Add a pinch of tamarind as well before powdering it. It goes well with idlis. You can eat it with curds and rice. Or ghee and rice with podi chutney.

Just want a clarification regarding the Daals! Do we need to wash n dry the pulses ! Most of pulses used are stored with pesticides

Try an Indian store...or Amazon! Good luck and you may be better off reducing the chillies !
